The only problem I had was with the glaze. I don't know why but I couldn't get it to work. I didn't know whether to melt the butter or not, so I tried both and neither worked. The recipe should be more specific - it calls for "warm" water but it's very important that the water is between 105 and 115 degrees F. The way to tell is run water on the inside of your wrist - it should be very warm, but not scalding - like baby's bath water. I also added 1/4 tsp. of sugar to the water and yeast mixture, which helped get the yeast bubbling. I found that I used 3 1/2 cups of flour and just a little more on the counter as I was kneading the dough. I used unsalted butter, not shortening. Also used a strong Extra Fancy Vietnamese Cassia Cinnamon from Penzeys Spices. We have Penzeys here in our city, but they are online too. The cinnamon has a 6% natural oil in it so it is strong and sweet, like the Cinnabon taste. I sprinkled just a tad of sugar on the bottom of the pan and did find that it carmelized a little. I might try it without nest time. I also cut the glaze in half because I don't like them floating in suger on top and it was perfect if you like just a little drizzle and not covered. They were chewy and moist. The cinnamon was not overpowering at all, so add more if you really like it. I just put nuts on the bottom, since I didnt have many, but I will put it inside next time too. Soak your rasins in hot water or overnight to make them really plump in the finished product. I used mostly brown sugar in the filling only 1/3 white. I rolled out the dough really thinly which made for layers and layers of chewy goodness. My boyfriend called them crack rolls. And finally, I refrigerated them over night and baked at noon the next day (after letting them rise out of the fridge for 1.5 hours). They were great. I've been making the dough in my bread machine, the timing is perfect on the dough cycle, and then completing the recipe myself. There are never any left!
