I didn't have amaretto (and I wasn't going to buy it for 1/8 tsp), but I am curious about how it would add to the recipe. Even without it, the mint dressing perfectly compliments the fruit. My watermelon wasn't as sweet as I would have liked, but with the dressing, it's perfect. Very light and refreshing, and easy to make a big batch for a summer party. For the vinaigrette, I added a little mint at a time so I wouldn't over power the fruit. Recipe calls for a bunch, I added only a few sprigs. By doing so, this dish blew me away. I wanted a light refreshing dessert to follow a dinner salad and this definitely did the trick. Loved it, loved it loved it! Next time I plan on trying it with my fave melon, honeydew. Suggestion: if you want to save time and if you have this available, buy pre-cut fruit. STill looks beautiful and definitely taste the same! Both the kids and the adults loved this recipe. In the show, I think she cut up the melons and mixed in the sauce and let it sit in the fridge and served it the next day - I would not recommend that. I did that and it caused the fruit to get "furry" a little soft on the outside, I personally like my fruit firm - maybe that is just my personal preference? I had made the dish before and ate it just after cutting up the melons and mixing in the sauce and it was perfect that way. Maybe just letting the melons sit in the sauce for 30 min before serving would be perfect. In any case, I recommend serving the dish shortly after creating it. I doubled the sauce ingredients and used 1 pound of pasta and it came out great. I add just a tad bit more amaretto and mint for extra flavor. Also, after mixing, I marinade the fruit in the refridgerator for atleast an hour. I don't think others cared for it as much because there was a lot leftover in comparison to the other dishes. Since the mint is a bit overpowering, I think I'll cut the dressing in half next time and see how it goes over with the crowd. I ended up draining the sauce, rinsing the fruit and eliminating the mint altogether. I made this again adjusting the recipe to exclude the mint, and increased the amaretto to 1 tsp. But this Salmon receipe caught my eye--along with the other recipes that show. Today, I prepared all three---very much to my family's DELIGHT!!!!!. Everyone loved the salmon and my 31 yr old daughter who is staying with us until she joins her husband in Manila and who swore she would never eat anchovies--well as I said,they said,it was the best meal they have had in a long time. We have eaten at BoneFish on Sunday, Longhorns on Tuesday and a 'hole-in-the-wall pizzeria (named Phil's etc, in the Bellview Fl area- who had the very best pizza((without anchovies))!we've all ever had.) All that other really GOOD food and they still thought this one of the best meals they've ever had! Thanks Ginna!!!!!!!!!!!!!!!!!
