This is a very easy recipe!!! the salmon turned out perfect. I had a thick cut so I had to leave it in a little longer than eight minutes to be done. The sauce absolutely is the finishing touch. My husband balked at the idea of a yogurt sauce but one bite convinced him otherwise. I couldn't find any plain yogurt so I used light lemon yogurt instead, the result was HEAVENLY. The sauce alone would have been perfection alone but paired with the cool delicate flavor of the salmon... well... I can not describe the result without being obscene. I have never had a dinner where I smiled while eatting due to the food until I tried this. It made up for the long wait time and long preparation. It was alright but missing alot of punch. I prepared the Tzatziki as stated, even let it sit in the colinder for three hours. Firmed up great but all in all it wasn't what I expected. I put a few more things into the poaching liquid (peppercorns, dry chilies), and I definitely made more than a cup of yogurt sauce. I served the fish with some steamed carrots and a bit of rice. They didn't work, but I stayed with it and the salmon was wonderful. Use a good wine. The salmon was so moist and delicate, unlike the dried out fishy poached salmon I've purchased at Whole Foods. It was quite yummy and guilt free too. For anyone who doesn't do dairy, I made the tzasiki with soy yogurt and it was still delicious.
