I like it a little hotter, so I use the seeds of the jalapeno. Also, I keep the soup and the rice seperate. The rice soaks up alot of the juice. My favorite way to eat Mexican Chicken Stew. Place cooked white rice in the bottom of the bowl. Add soup on top of the rice. Add a dollop of sour cream, chopped green onion, and cilantro on top of the soup. Break tortilla chips up in the soup or use the tortilla chip as a spoon. Delicious! I guess the flavors all came together overnight in the 'fridge. I'd make it again on a weekend to take for lunches during the week. I added a little cheese and crumbled some leftover cornbread muffins on top and it was fantastic. Next time I make this I will attempt to create the casserole from the start. I was a bit hesitant with the jalapenos at first, especially since they tend to burn your hands while you slice them up. But once cooked in the stew, they were excellent, and not overpowering at all. The stew didn't have quite the bold flavor I was hoping for, but was still a yummy and comforting dish. Remember to remove the lime halves if you plan on storing left overs in the fridge.
