When ever people make sweet potatoes in my past they would make a recipe that added so much to the potatoe and this one makes it more simple and easier to eat more of to get even more vitamins, I didnt get full fast with this recipe and will make it again. They were great, although I either used too much lemon juice or I don't care for the lemon juice in the marinade. Truthfully, I think I over did it on the lemon juice. They are very easy to make and really tasty. If you use a disposable roasting pan to cook the potatoes on then clean up is a snap. I usually prefer savory preparations, as I like the natural sweetness of the sweet potatoes to come through. The honey added a little sweetness but it was tempered by the olive oil, lemon, and salt. Delicious! I cooked mine at 400 degrees for 45 minutes and set the oven to Low Broil for an additional 5 minutes. I like mine to be golden brown outside and soft on the inside. Great /family pleaser 01/20/2007 at 09:09am User: cinda from soddy daisy, TN User Rating: This is a great recipe and my family of nine enjoyed it very much and request it often, I fixed it the first time as recipe stated, and because I work and our family is so busy I am always looking for recipes I can make ahead and freeze. we have a house rule that all sit at the table and enjoy dinner togther every night and this recipe fits into that schedule well. The next time i fixed them I made 3 extra "batches" and included a few changes to suit all of us..maybe you will also enjoy..so I will share them. We all like "kicked up and sweet" so I omitted all but a very small amt of the olive oil..just enough to mix and also omitted the salt. I mixed tegether brown sugar/cinnamon and cayeene pepper to suit our taste and sprinkled over the potatoes and baked approx 30-35 min. After they cooled I then froze them with my seal a meal and for the next meal I melted a few tablespoons of butter in my skillet, added the frozen potatoes and put the lid on and let them cook approx 10 min, stirring often until almost fork tender than took the lid off and let them cook until fork tender and they browned just a little more. Ham steaks under the broiler and a salad make this a really quick and easy meal we all really enjoy. Hope your family likes it as much as mine does!
