It was pretty simple. I already had almost everything in my pantry and fridge. I grilled the chicken on my indoor grill top. I couldn't find the blackening seasoning that the recipe called for so I just used cajun seasoning that I had on hand. The result was very flavorful! I expected the pasta to be more spicy however the sun-dried tomatoes added more sweetness that I had anticipated. I like things spicy so I added some hot sauce to taste. I will try to find a blackening seasoning to use for the next time I make it. By the way, the leftovers are even better the next day! I wouldn't suggest eating the chicken by itself because it is way to spicy but it was great in the pasta. However, for those who are reading these reviews before you make it, let me offer a tip. DO NOT USE TONY CHACHERE'S CREOLE SEASONING INSTEAD OF BLACKENING SEASONING!! It turned out waaaayyyy too salty and way to spicy..even for me. I couldn't find blackening seasoning at the store so I thought I'd replace it..never again !! But with that said, the dish was great. If it weren't for it being too salty, this would have been a great success. The sauce did take a while to thicken. I will definately make again....with the proper seasoning!! Also, cooked the pasta early, tossed with olive oil and kept it in a zip-lock bag. You can clean up the kitchen before company comes by cooking everything early, and leaving the sauce last. I just drained the tomatoes some and let the juices evaporate in the pan longer. I did try a different Cajun spice last night too and Paul P.'s is the best. I don't like fennel much, so Paul's is a good choice. This recipe is rated as "medium," but I would call it more of an "easy." It really is not complicated at all, but the work/prep time is very accurate. As with any recipe the first time you make it, I was very thorough and read each step as I went along. I'm sure that the next time I won't even think twice about it. We really enjoyed it, as did our children. The cream and spice are very well balanced, and the richness is just right - not leaving us with that heavy, bloated feeling. A wonderful meal for an evening with friends - it comes off much more difficult than it really is! Since we are a family on the go, I didn't have enough time to make the "Blackened Cajun Chicken" I subbed in the precooked Chicken strips from Tyson or Foster Farms. I let them soak up the white wine, flavors of the sun dried tomatoes (Cara Mia has them already juliened in olive oil -jar)The meal was still yummy!I will definately make it again. The sauce came out a nice rose color - from the Sun Driet Tomatoes. Also I used mini penne pasta, it worked just as well as fet. noodles. I also thru in fresh basil, italian parsley, and rosemary from the garden - GREAT JOB GUY! Too, I am not big on garlic, just a personal problem on my part. I used shallots instead - gave it a great sweet onion flavor. It does make a ton, but I bet the leftovers fly out of our fridge. I did not do the bread this time around. Maybe next time I'll do 1/2 the pasta recipe and then do the bread too. A can't miss favorite for my family. Keep um coming!
