This recipe is easy, quick and tasty. I added a little twist by including chopped black olives and everyone who tastes it loves it. Recently I couldnt get parsley so I added cilantro instead and it is even better if that is possible

I made this salad for 4th of July BBQ and everyone loved! I substituted red wine vinegar for the lime juice also since I had that. Wonderful texture and the flavors blended very well.

Oh my gosh! this is the most delicous food i have ever tasted in my life, im 16.5 years old and i am a health freak. I hope to be a nutritionist when im older and i try to get my family to eat healthy. They dont like a lot of healthy food, but i made this and they LOVED!! it. They didnt even know how healthy it was.. The only thing is, i suggest pouring (Farmer Boys greek dressing) on top of it and it gives it a whole nother taste. It is amazing!!! LOVE ITTT, try it with greek dressing, it tastes soo much better!

We found this salad to be excellent. I used regular couscous and it was still good. I only did a half cucumber and that was better than a whole. Although we enjoyed it immensely just as it was, I also think the addition of mint would be really good.

This is a wonderful recipe. You can really taste the freshness of each ingredient and my family loved it! We added cooked shrimp and made it a meal in itself.

I loved this salad, it just feels like summer. I did use hominy instead of chickpeas and I also used Israeli pearl couscous to give it more texture. And it is great to take to potluck.

What a great salad and so easy to make (except for all that chopping!). I used lemon juice instead of lime and it was excellent. I will try the lime next time just to see the difference in flavor. This salad is delicious, while feeling "healthy" to eat at the same time.

I have served this salad several times and always find it is very popular with the crowd. So easy to make, too. I just use Italian dressing in place of the olive oil and lime juice.

I like to make this salad on Sunday's, separate it into 6 containers and bring it for lunch during the week. It's great served over a bed of baby spinach and it's healthy too, 6 WW points per serving!

I was worried but had most ingredients so I did it..yeah...it was a very pleasant dish. Subbed broccoli for cukes. Added fresh oregano (no basil at home) and subbed lemon for lime juice. Didn't need to add red wine vinegar or chick peas. I used a romano fresh cheese. Glad I made it...As an almost vegetarian, quick & tasty, I will make again!

I have made this wonderful salad three times in the past week. It is incredibly flavorful! The fresh lime juice adds the most refreshing bite to the dish. The colors are beautiful, it keeps well and as the flavors marry overnight, the salad becomes even better. We all loved it!

I watched the show and couldn't wait to make this!It couldn't have come at a better time when the usual summer salads were getting a little tired. We loved this salad. I used the red wine vinegar too, since it was already on hand. Will make over and over. We are having the broccoli salad tonight.

This salad was very tasty. I used olive oil and garlic flavored couscous (I didn't think the parmesean flavor would compliment the flavors of the salad)I also used lemon juice instead of lime and substituted scallions for the vidalia onion. A good and healthy dish for lunch or dinner. Would definitely make this again.

Really delicious. I love the fresh lime juice. The key to making it work is using a little more olive oil than juice. The only change I made was using garlic and herb feta instead of plain feta. Perfect!

This is a staple of mine for quick go to lunches. I absolutely love the flavor combinations of this salad. It is not too heavy and not too light so fills me up till supper time;) The lime juice adds that lovely tanginess that I just can't get enough of. Thank you for another great recipe!

I made this my first time without reading all of the reviews. I agree with substituting the lime juice with red wine vinegar. And I should have allowed the couscous to cool down. I did like the color and flavors of this salad.

I substituted broccoli for the cucumber (because I had broccoli on hand), and it was delicious. Also, mine was great with the juice of just one lime; I think 3 would have been too much.

This is a wonderful salad that is tasty and so easy to make. I did substitute red wine vinegar (it just sounded as though it would go better witht the other ingredients) and I happened to have red onion instead of the Vidalia--and that worked out just great.

This was a good dish in concept, but for some reason, even with just a little bit of lime, it was all you tasted, and it was competing with some strong flavors. I served this at a party and there was plenty of it left, but people seemed to either like it or hate it. I think I just personally prefer a sweet couscous to a savory one. It is still worth trying if you like sour things.

I made this for concert picnic. Tho' it was a change of pace, I thought I needed some more 'oomph'...maybe some additional seasonings and/or spices (maybe basil or italian-style?) or maybe a different type of cheese, one with more flavor. Personally, I would also only put in only 1/2 the can or chickpeas. It did keep well for left-overs the next day.

I've made this several times, with some of the changes mentioned in other reviews. They are ALL good changes, so tweek this one to your personal taste. Also, try some cold leftover salad with cut up chicken on london broil mixed in. Makes a great lunch salad!

Made this for a friend's BarBQ last night, and everyone enjoyed this refreshing summer salad. I did follow others'suggestions and substituted red wine vinegar for the lime juice, but I also squeezed in some fresh lemon juice. Also added some chopped kalamata olives, which was yummy!

This is sooo good. I actually took the advice of the other reveiws and used red wine vin. in place of the lime. It really makes a lot I fed 5 adults and had some left.Then my daughters 17 year old boyfriend asked to take some home he liked it so much.Will make over and over again.

Always use lemon with feta and chick peas, etc. Lime is just Tracie's personal preference. With lemon, this is really tastey. I squeezed some lemon juice in the bottom of a large mixing bowl and whisked in some good olive oil with s&p and mixed the cous cous, et al, with this quick vinaigrette. I also make a dish just like this with bulgar wheat (tabouli) and add in tiny diced raw carrot in addition to the other ingredients + scallions. It's excellent.

This was extremely bland salad, even with trying to spice it up a little. Didn't like the lime juice taste. The leftovers got soggy and ended up throwing it out. Probably won't make this salad again.

I should've used a substitute for the lime. It just didn't taste right with the parmesan couscous. I think I would've preferred a garlic couscous. I will try it again and give it my own twist.

I loved it. I used fresh tomato from my garden and cucumber. I also added a little more feta. I did not add onion however, because I feel onion sometimes takes over. I used parmesan couscous (excellent flavor) Although you could probably add fresh parm to regular couscous. I also used red wine vinegar in lieu of lime juice. And sub of roasted red pepper as that is all I had. Very tasty if you like feta - add more!

This recipe is so easy and so pretty. I cooked my couscous in chicken broth which gave it some more tast.Also like someone else suggested red wine vingar instead of lime juice. The lime juice didnot give it a good taste. Will make it again.
