the choice to use soy sauce to brown the rice resulted in salty white rice. it's a easy recipe,and it did taste like fried rice,but it's more like soy flavored boiled white rice and i was very suprised that emeril would put his name on this dish.

We loved this. I used raw onions, celery, and carrots, cooked until tender. My 7 year old helped, we all thought it was delicious.

Modified this a little for convenience... Ok, I left out the green onions (I just don't keep them around), and substituted white onion cut into big chunks like the chinese restaurants do, I used frozen asian veg mix (juliened green beans, brocolli, and mushrooms) and frozen corn. I followed the instructions, but used only 1T of soy sauce b/c of the previous comment about the recipe being to salty and I used sesame cooking out and a dark sesame chili oil (super flavorful, use sparignly...). I left out the nuts... I thought they seemed unnecessary.
