I had a party and asked each couple to bring one pound of the meat / seafood. None of us had ever had this dish and didn't know what to expect...FANTASTIC is an understatement!!! We had a great time putting this meal together in my small kitchen,one was deviening the shrimp,another was debearding the mussels....it was like I had four sous chiefs by my side ....laughing and talking about... you guessed it..... food !!! Thanks for a great evening!!!

Delicious and supper easy to make. You can't go wrong if you use all fresh ingredients. Be careful not to overcook rice.




Paella

This Paella is very good for the advanced Chef. I did this recipe with certain liberties and found I needed a Two Gallon Soup pan for all the items called for in the recipe. One should expect the times to be very rough, I found that the Seafood should be precooked and the cooking times referred to are for reheating. I would suggest that for the uninitiated diner the clams and mussels be removed from their shells.

My family is from Spain and I made this for my son's birthday - at his request as he loves paella. I substituted extra shrimp and extra sausage for the lobster - too pricey for me. Otherwise, followed Emeril's directions exactly. What a hit! It was so good that even my brother proclaimed that it was the best he'd ever eaten including paella back in Spain. I had never eaten andouille sausage before. What a great flavor it added. This is very, very good. 5 STARS ++++!
