I was a little nervous about the whole "use a brick, a pan on top of a pan" thing, but it really worked! The chicken was surprisingly tender, and we loved the marcona almond filling. Would definitely make this again, maybe for a dinner party.

I made with chicken thighs and it turned out very good. Took a little longer to cook in the oven, but great flavor and very moist.

I made this and my family loved it. The chicken was very moist and flavorful. I had enough left over for another dinner. I scraped the parsley mix off the skin and took off all chicken from bones and put it all in with angel hair pasta for a new meal!

The filling had too much parsley in it for our taste - we could not taste the almonds enough because the parsley overwhelmed everything else. The chicken took almost twice as much time to cook than described too. Maybe our breasts were larger than those on her show.

My family did not believe thechicken would cook in such a small amount of time. My son(9 yrs) loved preparing the bricks with foil and everyone loved it!

This recipe was more fun to make than anything. Go easy on the parsley if you think the flavor might be too strong! Very good though.

I've roasted chicken breasts weighted with a brick before, with just plain salt, pepper, lemon, that was tastier than this. It just CANNOT be done in 30 minutes. I followed the recipe with the exception of substituting cilantro for parsley because that's what I had. I also added salt and pepper to both sides, and a little oil on the bone side just so it wouldn't stick to the small pan. Really browned on top of the stove until I could see juices escaping on sides and top of chicken. I then cooked it in the oven for 15 minutes and checked. Nowhere near done. 30 minutes - Nope. Somewhere between 45-1 hour it was done. It just didn't seem to have much flavor. And I normally would have salt and peppered more but I thought the gremalata would do more. Probably won't make this again.

No way can a bone-in chicken breast cook through in 15 minutes! After the chicken was in the oven for 30 minutes it was still raw in the center so I acctually used a thermometer to check the accuracy of my oven (which was correct). Very annoying to end up a piece of chicken that wasn't very tasty (except for the overly strong lemon flavor) and the family unhappy because dinner was late!

The crispy skin achieved from the weight was fantastic. Sadly, the flavor was lacking, and I wont usually dock stars for time issues, but since the show is 30 minute meals I feel I have to. You could make it in 30 minutes if you had skin on chicken with no bones, but mine took an additional 30 minutes in the oven after browning on both sides under the weight for 6-7 minutes per side. Unfortunately I found the taste to be quite bland, and I was heavy handed with the seasoning. Maybe if you toasted the nuts first, or made the paste with butter. I will tweak this for the delicious crispy skin in the future, with hopefully better flavor results. Thanks.

and I have tried MANY of them! I followed the instructions down to the letter, but I agree with the reviewer that said the chicken tasted "bland". I did not use any additional salt or pepper (thought maybe the rub would have enough of that in it's ingredients), and all I could taste was garlic and lemon. I have it a "3", mainly because out of the five of us in our family my pickiest daughter went crazy over it! Which was really strange because my daughter who eats nothing but chicken ate one bite and threw the rest out. I will probably try this again, maybe experimenting with the seasonings, stuffing, and rub. Everyone in our family (with the exception of my hubby who is pretty much red meat and potatoes) loves chicken and I still feel that the basic concept of this recipe is good...quick and easy!! One other note...didn't have a brick lying around (ha ha) so, I did as Rachel suggested on one of her "sammie" episodes....used to large cans of tomato sauce which were very heavy in weight and simply sat them on top of the smaller skillet...that worked just fine!

Loved the parsley, lemon zest and garlic under the skin. Chicken was a hit with the whole family. BUT after 15 minutes in the oven , it was not done. I turned the pieces over, put the pan and brick back on top, and gave it another 15 minutes in the oven. That also allowed both sides of the chicken to get the yummy brown color. Delicious, just not in 30 minutes....
