Our 16-year-old daughter, a novice cook, prepared this as a surprise dinner for us. It was delicious and took her very little time to prepare. Canned artichokes worked fine after the "curing" liquid they were in was rinsed off, not overpowering the tomatoes and the rest of the dish at all. Elegant enough for company, yet easy enough for a weekday dinner.

User: Kelly from Land O Lakes, FL    User Rating:
I try, but I'm not a huge fan of fish entrees. It's just that it's so hit or miss as to whether or not the fish will be too fishy. I used flounder because I didn't have halibut, and it was okay. I also threw in some sauteed shrimp. I should've just gone with the shrimp because it was far less fishy! I generously squeezed some fresh lemon juice over the whole thing (also added angel hair pasta), and that helped the fishiness. The sauce was phenomenal though, and sooo easy! That's the reason this one gets 5 stars. Next time I'll make the sauce to go with chicken or just shrimp, but this recipe is definitely a keeper! Thanks, Giada!

I did not modify the sauce much--used canned chopped tomatoes with basil, oregano, and garlic for extra flavor and used 2 8-oz cans of artichoke hearts in water instead of frozen. I let the sauce simmer longer than in the recipe to let the flavors combine, and added just a bit of dried oregano and basil near the end. I was cooking for two, so was able to have this delicious sauce two nights. NIGHT 1: I grilled 8 med-sized prawns in addition to the 2 6-oz halibut filets (fresh from whole foods--yum!). I served the fish on top of half the sauce, a sprinkle of grated parm-reg on top and crusty sourdough bread on the side for dipping--incredible. NIGHT 2: Sauteed 1/2 lb fresh spicy italian turkey sausage then added leftover sauce and let it simmer together. Meanwhile I boiled about 1/4 lb whole wheat fusili. Tossed the cooked pasta with the sauce and sprinkled grated parm-reg on top. Heavenly! This sauce is a keeper--you can make it with ANYTHING!!!

I don't always care for fish, but I do like Halibut as one of my favs. I wasn't sure if I'd care much for this, but did it anyway as I always have faith in what Giada puts out. This was no different. She does it again! I love grilled fish as it really gets the "fishy" taste/smell out of it, so that was wonderful and squeezed fresh lemon on it when it came off the grill. I also (as suggested by another reviewer or two) served this on angel hair pasta. It was so good. The pasta as well as the halibut, when cut up, soaked up all of the broth and was so tasty. It was beautiful on the plate too as many of Giada's dishes are. Served up with some warm ciabatta and voila! Will definitely do again!

I decided to try this recipe for dinner tonight after seeing Giada make it this afternoon. It was so delicious & pure tasting. No butter, no creamy sauces... just pure, simple ingredients. It was absolutely delicious and healthy; my husband asked if we could have it again tomorrow night! I used 2 cans of artichoke hearts, drained, because Whole Foods didn't have frozen (that I could find, anyway). I would suggest quartering the artichoke hearts, even though the recipe doesn't call for that. I halved them & they were still a little too big. I also didn't have diced tomatoes, so I used Whole Tomatoes & roughley cut them up with a kitchen scissors because I wanted some larger chunks of tomatoes to match the artichoke hearts. In her show, Giada said if you don't want to mince the Thyme, you can just throw in a sprig or two and then remove it before serving, so that's what I did (much easier). I didn't have a grill pan so I used my George Foreman grill and just didn't close the top- worked like a charm~ The important thing to remember when grilling the halibut is to NOT MOVE the fish once you've placed it on the grill so that it gets nice grill marks. It looked so pretty on top the tomato & artichoke broth when I served it! I served this recipe with a side of roasted asparagus I saw on Semi-Home Cooking with Sandra Lee: Put Asparagus on a baking pan & scatter about a half-cup of pitted kalamata olives down the middle of the row of asparagus. Sprinkle the whole pan of asparagus/olives evenly with Lemon-Pepper seasoning and then drizzle with EVOO. Baked in a 425 degree oven for 10 minutes and the flavors of the asparagus & olives will perfectly match the Halibut. Yum! I'm calling my sister right now to tell her to try this recipe pronto!

My kids loved it too!
