Perfect Balance

I Love fish, and Salmon varieties are at the top of my favs! I enjoyed the balance of flavors. I used only 2/3 lbs. of Salmon: The variety was a low fight wild Sockeye. The rosemary, lemons, and onions wrapped in foil really infused the salmon with perfect flavor. The fish really shined and did not lose itself in the seasonings. I am doing it again soon!!!

wonderful!

This is a great dish, especially since I have recently gotten dairy allergy symptoms. It took five minutes to substitute 2 thin fillets instead of a big piece, and added carrots instead. 15 minutes later, it came out perfectly.

Simple and quick

This was a fast, easy recipe for a cold, rainy night. I forgot the olive oil and it was still yummy (probably because I squeezed extra lemon juice on it). The salmon basically poaches in it's own juices. Very low cal.

Too lemony

This was just too lemon-y for my taste. I might try it again, but would use just a slice or two of lemon.

This recipe was pretty good. The salmon had a bit more of a lemon taste than I would have liked. It seemed to overpower the other ingredients. Next time I will use less lemon. But overall, a very good, and healthy recipe

Very moist and tender

We really enjoyed this recipe, especially the red onion and slices of garlic. The rosemary was a nice touch, but I also added some fresh dill on top of the salmon and it was excellent! Let me know about the dill...thanks!

This is very good and so easy! It took minutes to put it together and the salmon was perfect. I added some uncooked shrimp as well and it turned out as good as the salmon. I layered the shrimp to be sure it didn't overcook.

My husband and I love salmon, but I have never been able to find a recipe easy enough for me to make since I am ?cooking challenged?. This recipe is easy and very tasty. I made this with Emeril?s Roasted Green Beans and Ina?s Chive Biscuits. It is a wonderful combination, and all the flavors blend well together.

Salmon is a favorite of mine and I am always looking for new ways to prepare. This is a winner in my book! I was only cooking for me so I used only about 1/4 of a pound of salmon and adjusted the quantity of the other ingredients accordingly. As suggested by other reviewers, I was careful about how much lemon to use. Quick, easy, and yummy!

I really enjoyed making this for Mother's Day. I believe that the time quoted of 15 minuted to cook this is wrong. I checked it at 15 minuted and and it was still raw in the middle. Mine took 35 minutes to cook through.

soooo good

Nice, but a tad bitter

User: Amy from phoenix, AZ    User Rating:
I enjoyed this recipe - I am big on lemons, garlic, rosemary, red onions and, especially, salmon. I, however, found it slightly bitter. I would recomend it, but, honestly, next time I'll try it without the onions and see if that helps. Happy dinner all!

A little too "fishy" for us.

User: Carina from Phoenix, AZ    User Rating:
I believe that this recipe called for a sweet-flavored ingredient in order to counteract the fishy flavor of the salmon.

YUM!

I love to bake salmon because it gives me more time to make side dishes. This recipe is great and there isn't much that I would change. I have to say that I love the added flavor that the rosemary gives to the salmon. Just delicious! However, if you like your salmon to be more dry than moist like I do, I would recommend going easy on the olive oil. Other than that, this recipe was a success!

and so-o good. Thought about reducing the amount of lemon based on other remarks, but it didn't look like too much, so I left it. Good decision. The fish was moist and perfect--and the flavor delicate! My husband usually grumps when fish is on the table--but he made a total pig out of himself! This is a keeper!

Although not overly fond of Salmon, I decided to try this. It was very good. The next time I made this, I used Red Snapper instead and it was absolutely the best. The fish was perfectly cooked and extremely flavorful. I make this a couple of time a month and have used oregano instead of the rosemary and also added some sliced fennel which pairs up nicely with the onion. This recipe is a keeper.

This recipe turned out fantastic! I used 2 fillets so I therefore cut the ingredients in half but I did add fennel with the onion as a previous review stated. This was perfect! I teamed it up with Paula Deen's "Lemon Linguine" and broccoli and my husband said to make this again anytime.

Wow!

This is so delicious. It comes out extremely moist and flavorful - my family loved it. I never thought to pair up rosemary with salmon but it's a delightful combination. I didn't have a side of salmon so I just lined up 4 fillets, totaling about two pounds. It took about 25 minutes total in the oven. Served with green beans, salad, and bread. YUM!

Yum!

If you can wrap foil, you can handle this one. The salmon is sooo juicy, too. We had enough for leftovers & it was still moist when reheated (we saved the juice)

i left a review for Emeril's other salmon dish on accident, this one is correct

it was simple and delicious. Similiar to how most people would jprepare fiol wrapped salmon except Emeril added onions and rosemary. the Onions were a great add, the rosemary i didnt taste so much. the only ad thing was that when i poured the juices back over the salmon it was entirely too salty for my tastes. when i didnt pout juices back over the salmon it was just perfect. thanks Em!.

I JUST MADE IT TONIGHT, AS I HAD THE SALMON AND HAPPENED TO HAVE EVERYTHING ELSE. I MUST SAY IT WAS AS SIMPLE AS COULD BE AND WAS VERY GOOD. ALL I DID WAS SERVE IT OVER A WHITE RICE I MADE WITH ONIONS. IT DID NEED MAYBE AN EXTRA FIVE MINUTES IN THE OVEN, AS IT WAS STILL VERY RARE AFTER FIFTEEN MINUTES
