I made this soup for a dinner party, and everyone loved it. I added some extra broth, and added the parmigiano cheese into the soup before adding the basil. My husband even liked it, and he's usually not a fan of vegetarian soups.

SO good, and with no meat! All the veggies make for a very healthy & satisying soup. Be careful not to use too much hot pepper~ a little goes a long way! I doubles the recipe & it lasted for a week of lunches.

I thought this might be a 'delish' recipe, but I was fooled! This was thick, over-powered flavor, and wasn't 'delish'. I do not recommend this recipe to anybody because it is not tasty or a 'favorite'.

It's such an easy recipe. I actually was under the weather when I watched the program. I basically got up from the couch and went to search for all the veggies I could find in the fridge. Besides the veggies recom'd by RR, I added asparagus and roasted bell pepper strips. My husband came home and said it smelled wonderful and tasted delish. The best part I have to say is the basil at the end. It gives it depth for this simple soup.

Personally, I loved making the soup, but it just wasnt my thing. The tomatoes and the cheese made me feel sick. i couldnt eat it hot, but it was very good cold! My family LOOOOOOOOVED it, they keep begging me to make it again :)everyone ate atleast two bowls. yayy!! next time i wont put so much tomatoes though...anyways, awesome soup!

Sooo easy and sooo delicious! Don't skimp out on the fresh basil on top-- it is right on! A bit of Pinot Grigio just for fun only adds to it. My husband and I have a new favorite-- this soup is GENIUS!!!

I have made this soup a number of times is always good. I combined another of her soup receipes with this one by adding pasta and leftover chicken. The fresh basil is great.

This soup was delicious. There was so much flavor and the veggies stayed crisp instead of overcooked. If you don't like spicy food, leave out the pepper flakes. I served mine with nonfat plain yogurt instead of the parmesan to go with the spicy flavor. This soup is great a few days later and is SOOO easy and fast.

This soup took less than an hour to make (I don't chop as quickly as Rachel) and was superb! Served freshly baked rosemary/olive oil bread with it and ate two bowls. Worth a try.

This was so good. I pureed to soup in a blender after it was done cooking so it would have a more canned tomato soup texture, and the flavors would blend more. You definitely should top it with the basil and the cheese.

i tried this recipe a day that i was kind of sad,when i tasted it it brougth in mind like when i was little and not feeling very well, my mom would comfort me with a warm hug.it is delicius and a good way to have youre veggies..

Just made this soup and it is very good! While it certainly could be made in 15 minutes, I gave the onions, garlic, carrots, and celery extra time to deepen the flavor. I also added extra vegetable broth because I prefer a thinner broth. Very easy, healthy & flavorful! Will definatley make again.

I am having a sick day and I just made the soup. First of all, it is super easy to make. It tastes really good, too, when you are done and is starting to go to town on my nasal passages in a good way! I think it is good but maybe needs something, though I can't put my finger on it. The cheese on the top is a MUST and really adds to the flavor of the soup! Yumm-o! Thanks for making me feel better, Rachael. I enjoyed the tea, too!

I made this last week, when our family was a little under the weather. I sauteed a boneless chicken breast in olive oil and oregano, then diced up and added to this. It was really good.

I have to say this was one of the easiest home-made soups that i have ever made. I didn't have the basil for the recipe so I added dried Italian Seasoning. I also added a potato sliced, some grn pepper, and some hamburger...It totally turned out awesome...Will make it again without a doubt...Only complaint that I've got is its a little spicy from the pepperflakes, so i'll cut that a little bit next time i make it

The hardest part of this recipe was chopping the vegetables! I used a little more crushed red pepper, because I like the spice, and I let the vegetables cook and the soup simmer a little longer than the recipe said, just to ensure the veggies were cooked and to incorporate the flavors more. I even added some thyme sprigs while it was simmering for a little more flavor (just fished them out before serving). I would definitely make a double batch if cooking for more than two people - you're going to want those leftovers!!

I saw Rachel's recipe for Tomato and Bean 15 Minute Stoup when it was rainy and cold outside. I had been craving homemade soup and this was a new recipe I wanted to try. It was wonderful. I had never put red pepper flake in a soup before and I found it was a nice addition. I can see that when I am sick, that it would open my head up. I did not put the basil in the soup because I did not have any. I also thought about adding hamburger meat to the stoup for a change. This is a good meal to warm you up on a cold day.

Made this for dinner last night and am eating the leftovers for lunch as I write this today! Couldn't have been quicker or easier?and so flavorful. I did use a few sprigs of thyme rather than the basil called for, since the thyme is what I had on hand. Also, I find Rachael likes things a bit spicier than we do, so I cut the amount of red pepper flakes by about half, and it still had a pleasing heat to it. Cheese on top to garnish is definitely the way to go. A wonderful meal for a chilly fall day!

I made it for dinner today and it was very good. I didn't have celery but I had some Crimini mushrooms that I added. Also threw in a couple of diced red potatoes. Poured it over some rice for a very hearty meal! An excellent fare even if you're feeling great!

I was feeling sick when I made this for myself, and my favorite thing about it was how easy it was to make. I think next time I would use less tomato sauce and more broth and simmer it for a while longer to fully cook the veggies. Adding some diced potatos or keilbasa would also be really tasty.

I just so happened to be sick when this episode aired, so I decided to make the Stoup, Not only was this very cost effective recipe it was delicious! Being sick I can?t taste anything but I could taste this it had so many great flavors this is definitely a comfort food, it excites the palate and satisfies your hunger. I love a good soup this one is keeper.

I was disappointed with this soup. The vegetables really don't have time to soften, so they're crunchy. The flavors are also extremely strong - I think the basil was overpowering. I may have used too much - I added 1 cp. packed leaves.

I figure since the Rachel Ray said it would be good for a cold, I made it for my sister who drove from New Jersey to Flordia with a bad cold. She ate the soup and she said it made her feel ten times better. We had the soup again the following day, and it was even better.

I can see where this would be a GREAT soup to have if you were sick. It is very colorful and has a kick from the red pepper which would feel really good if you had a sore throat or cold. I had some rosemary which I added as well as the soup cooked. I expect this to be even better tomorrow, after the flavors have blended more.

super simple! definitely has a spicy kick, but it's wonderful. i actually made it on a sick day, and it was perfect. made a whole pot early in the day and finished it before bed it was sooo good. i found some of the veggies did need a little while longer than suggested to cook though.

Six people have had this now & all raved about it. My 7 year old grandson had seconds!!. The first time I ever saw him have seconds of anything! So now , my tomato & bean stoup has joined my speghetti sauce as a never ending thing. It`s always in the fridge, & just keeps getting added to as it`s used. Of course I always simmer 20 minutes or more each time it`s served.

I have been making this soup every week since the show aired. My family loves it and I can add any vegetables that I have in the fridge. I also have used kidney beans instead of white beans. I also add a little pasta. I keep adding stock when it gets thick and it lasts the whole week. I brought soup to the office and everyone was very impressed. They have no idea how easy it is to make !!

I really enjoyed this soup! I didn;t have some of the ingredients on hand, so I used quartered red potatoes and some corn and a can of blackeyed peas...I think there's lots of room for personalization. Thanks for the easy yummy dish, rachael!

It was very tasty. Very easy and not time consuming. I didn't put beans in the soup, because we don't care for that. But, my husband really liked it and I was surprised because it had no meat in it. He usually wants meat at every meal. Anyway, I'm never surprised when I try one of Rachel's recipes.

Very good choice for those of us who don't like the clean-up after cooking, regardless of how fast cooking time is. Great way to get vegetables, to have good leftovers. My family liked it. Will keep it handy in my recipie box. My problem is not with the cooking but with the clean-up. Love the one pot recipies.

Well, I'm not sick and it's 75 degrees outside, but I wanted something healthy for lunch today so I made this stoup. It is so delicious. I will be making it again and again. The saute time wasn't wuite long enough to get the carrots tender, but that's a minor quibble. And, if your stock and canned ingredients aren't low-sodioum, you won't need to add any additional salt at all. I cannot believe how fast, easy and good this is.

this stoup is wondeful it taste just like Olive gardens Minastroni soup.i did though add a few more things to mine, i used 3 cups chicken broth instead of 2 i also put in 3 tablespoons rinsed ..pearled barley, and i used 5 cloves of galic instead of 3. i used a 15.oz can rinsed black beans along with the unrinsed can of white cannelii beans,i cooked it for about a half hour longer so that the barley would become soft. i followed the rest of the recipe, i do advice if you dont like spicy food then i would cut back on the red pepper flakes a half a tsp makes this dish spicy i will cut it back to 1/4 tsp it was great for me but a tad on the spicy side for my husband and daughter. along side i made garlic fench bread ... but over all 2 thumbs up thank you for this great recipe..ITS A KEEPER... .

My 11 year old is home sick from school and saw this on today's show. She begged me to make it for dinner so I ran to the store to get the stuff. Even with my slow chopping skills this took about an hour to have on the table. I put the onion in a minute or two after the garlic/peppers and let that brown a bit before I added the rest of the veggies. I let them cook about 30 minutes before I added the broth, etc. but it was still really fast. I love that the veggies are not soggy and still have a nice color to them. I rarely make soups from scratch, but this one will definitely become a family staple!

My sister passed this recipe on to my Mom and she made it last night. She knew it would make a lot, so she used vegetable broth instead of chicken (I'm a vegetarian). My family very much so enjoyed this recipe! My Mom doesn't like to cook, but she said she liked this recipe so much that she'd make it again. Her only suggestion was to cook the celery and carrots a little longer. I'm adding this to my recipe book!

This is one of my very favorite soup recipes... it's so simple and can be thrown together so quickly, not to mention the versatility. Think of this recipe as a base to become whatever you want it to be. I add carrots and extra zucchini but the sky is the limit! Add spinach, chicken, corn, skip the beans and add pasta, whatever you want. This will always be my go to soup for when I'm sick. Oh and don't forget the bread.... dunking thick slices of bread, slathered with butter, is the best part of this meal!
