This is a fabulous recipe! It took me a little longer to prep than the suggested time but it was well worth it! My picky eaters cleaned their plates and we hardly have any leftovers!

The only change I made to the recipe was to use a red bell pepper instead of green, and it was fabulous. More effort than I usually put into meat loaf, but worth it.

I have tried a lot of meatloaf recipes over the years. I served this last night to my husband and brother both of whom remarked "This is a keeper recipe." There was very little left for sandwiches today. I followed the comments in the reviews and eliminated the veal and used fat free half&half.

Like several other reviewers, I used 1 1/2 lb. ground beef and 1 lb. ground pork (just say "no!" to veal!!). Also used "1/2 and 1/2" instead of heavy cream. Meatloaf came out moist and delicious. It's an awesome combination of the "classic" meatloaf taste combined with just alittle bit more "zing" and flavor! Try this one, you'll love it!!

Easy and fun dish to make. Only made a few minor changes - used 1lb of pork instead of veal and used evaporated milk instead of heavy cream. Recipe makes alot for leftovers for the next few days. Would recommend to anyone.

I remember when my mom's meatloaf used to be dry and tasteless. This recipe is anything but that. The onions, green pepper and celery keep it moist and the glaze on top makes it complete!

My husband thought it was bland. He said the glaze is what made it taste good. But, our youngest son (17) and I really liked it. I thought it had a great taste and texture. The glaze just added to it.

I used this recipe to cook dinner for my boyfriend and I last night and it was my first cooking experience. Very easy to follow, came out great!! Nice kick added of course, and my boyfriend loved it! My parents were even getting into it so there's plenty leftover for everyone.

I had never had meatloaf before I made this amazing recipe. The meatloaf was super juicy and super tasty. The only problem I came across was that the 1 hour and 15 minute cooking time wasn't enough. My meatloaf was raw in the middle when I cut it. It needed a good 1 hour and 45 minutes to 2 hours to fully cook.

My Brother and like to get together once or twice a year and try out a new recipe. We are both Emeril fans and love meatloaf. After reading the reviews we were sure we had a winner. We followed his recipe to a "T." We even drove to the next town to a specialty butcher shop to get our meats. I have a vegetable garden at home so the fresh thyme was n problem. We ended up severely disappointed. We both have recipes for "everyday" meatloak that are CHEAPER, QUICKER, EASIER, and MUCH TASTIER. I really wish I could have written a favorable review b/c we are fans of his show. I'm also doubting the other reviewers. The best I can say is they must be either very new cooks or Food Network Employees for this recipe to have gotten the reviews it did.

I actually altered the recipe a little. i used 2 lbs beef and 1 lbs pork instead of the 1/2 lbs pork 1/2 lbs veal. I also added 4 small chopped tomatoes. This was so great and moist with a very delicious topping that just makes this stand out from others. Thanks Emeril.

I'm embarrassed to admit that I've never made a truly good meatloaf. (Think dehydrated onion soup mix.) Mighty Meaty Meatloaf was my first "from scratch" meatloaf, and it was so worth the extra few steps. I served it to dinner guests, who RAVED that it was so moist and flavorful that it didn't need any gravy. Used the leftovers to make incredible stuffed bell peppers. Thanks, Emeril! (BTW, dined at Emeril's Restaurant on a recent trip to New Orleans -- BEST dining experience my husband and I have ever had, in every way!)

This recipe is very easy and extremly flavorful! I have had meatloaf before and I never liked it, they are always too dry. This one is sooo juicy! Make sure you place a piece of foil under the loaf pan, it can get messy in the oven.

Although my mother was a good cook, I never cared for her meatloaf when i was growing up. It was dry and her catsup glaze was often dryed out. This Mighty Meaty Meatloaf howerever is so moist and flavorfull. The catsup glaze was great and as Emeral says ,"knocked up a notch".

For those of you that don't like or "won't eat" meatloaf, try this.You will like it! It's simple to make,uses basic ingredients, can be prepared hours ahead of time and cooked when you need it. I make it and divide it into smaller foil loaf pans, then freeze them for use later. this way they are in 1 or 2 people portions. best of all, kids like it.

My fiance is a true southern man who loves his grandma's meatloaf, so I was concerned about preparing meatloaf. He loved this. I used my own glaze: (1/3 C. ketchup, 2 TBSP. brown sugar and 1 TBSP. mustard), which I spread on top of the loaf to bake and leave the extra on the side for dipping. It's sweet and glazes the entire loaf. It was moist, meaty and left you wanting more. This meatloaf has excellent flavor and is forever in my recipe box. Try it... your family will love it!

Excellent flavor...I used 1 lb of pork vs. 1/2 lb pork and 1/2 lb veal with the ground beef and substituted milk for the cream. Also, instead of Baby Bam I used Essence for a little extra kick. My wife, who doesn't like meatloaf, cleaned her plate!

Another great recipe from Emeril. I omitted the cream to cut back on calories and used lean ground beef. Turned out great anyway!!
