Also used "1/2 and 1/2" instead of heavy cream. Meatloaf came out moist and delicious. The meatloaf was super juicy and super tasty. The only problem I came across was that the 1 hour and 15 minute cooking time wasn't enough. My meatloaf was raw in the middle when I cut it. We are both Emeril fans and love meatloaf. After reading the reviews we were sure we had a winner. We followed his recipe to a "T." We even drove to the next town to a specialty butcher shop to get our meats. I have a vegetable garden at home so the fresh thyme was n problem. We ended up severely disappointed. We both have recipes for "everyday" meatloak that are CHEAPER, QUICKER, EASIER, and MUCH TASTIER. I really wish I could have written a favorable review b/c we are fans of his show. I'm also doubting the other reviewers. The best I can say is they must be either very new cooks or Food Network Employees for this recipe to have gotten the reviews it did. It's simple to make,uses basic ingredients, can be prepared hours ahead of time and cooked when you need it. I make it and divide it into smaller foil loaf pans, then freeze them for use later. this way they are in 1 or 2 people portions. best of all, kids like it. He loved this. I used my own glaze: (1/3 C. ketchup, 2 TBSP. brown sugar and 1 TBSP. mustard), which I spread on top of the loaf to bake and leave the extra on the side for dipping. It's sweet and glazes the entire loaf. It was moist, meaty and left you wanting more. This meatloaf has excellent flavor and is forever in my recipe box. Try it... your family will love it!
