This casserole is a fantastic solution for a fast, healthy and easy meal during the week! I lightened this recipe up by using Canola Mayo (half the calories & fat), 98% FF Cream of Celery Soup and 2% sharp cheddar (freshly grated from the block). I also used shredded turkey, instead of chicken, which tasted great. This is a crowd pleaser for both kids and adults...I will make this again and again!

We LOVE this casserole, but really, you can't make it too often because it is very fattening. I put in LOTS of chicken - and really big pieces like she showed on TV. I have served it to company too. Highly recommended.

I made this recipe tonight and My family LOVED it!!! It didn't put in the pimentos and instead of 2 cans of green beans , I put a can of corn!! I also add a little more cheddar cheese on top with Fried french onions on top!! BIG HIT!! Definately will make this over and over again!!

I make this often, substituting different vegetables; red pepper instead of the pimento, mushrooms and fresh green beans. It is a great recipe to sneak vegetables into my 2 year old son. He loves it!

it was good.. but rich! i'd definitely cut back at least a 1/2 cup of mayo. a few changes i made: substituted pimentos for red bell pepper (sauteed it with the onions), SEASON the chicken (garlic powder and tony chacheres makes everything better), sprinkled cheese on top before baking, and sprinkle a little more Tony's on top for an extra kick. FEEDS AN ARMY!

My family loved this recipe. I wasn't sure about putting green beans in it but it was great. I used french cut green beans and everyone loved it. I also used slivered almonds instead of water chestnuts. This ones a keeper!

I have been making this exact casserole for years. It is in a very old cookbook by the employees of AT&T from the l950s. It tastes better the next day. Reheats very well. I don't know about the rest of you, but I really hate people who don't even make a recipe yet feel obligated to give it low marks just because they think the ingredients don't SOUND good. These rating boards are to review/rate the recipe, not editorialize!

I make this recipe for my husaband and I when we are short on time and looking for something healthly. I have had sucess simply substituting the mayo, soup, and sour cream for a low fat version and it is still delicious! believe me if my husband doesn't notice it is good!

I made this dish for myself and my picky-eater boyfriend. I omitted the onions, but included everything else and it just tasted like chicken and rice soaked in mayo. I usually will eat anything and could only have a few bites. It needed more cheese and maybe breadcrumbs on top??? I love Paula Deen to death, but this was not my favorite.

This is a winner! Not only does it have loads of flavor but it's easy to make as well. I use pre-cooked rotisserie chicken to add flavor and speed up preparation. My two year old will even eat this which makes it a double winner.

Thanks to previous reviews I cut the mayo in half and I think it was the perfect texture. The dish is mild but the flavors go together nicely. Mushrooms could be added if desired.

I made this after reading many of the reviews and decided to adjust the recipe a bit. I used cooked whole chicken from my grocery store and decided to used only about 1/3 cup of miracle whip mixed with the cream of celery soup. I also added a few sliced almonds in with the water chestnuts and deleted the pimentos. I did top the final dish at the end with crushed ritz crackers which I think was a great addition. I wonder if using aspargus with swiss cheese would also be a good idea. I have to credit many of the reviews I read ahead of time for helping make this dish a really easy and tasty dinner. Using the whole chicken from the store made this a quick dinner and still was economical.

Great recipe but I changed a few things to fit my families taste buds. I only used one can of green beans and I added an extra cup of cheese. I also substituted mushrooms and black olives for the water chestnuts and the pimentos and used cream of chicken instead of cream of celery soup. I will definitely be making this again, everyone loved it.

any "recipe" that uses canned (!!) vegetables and relies on boatloads of mayo and salty canned soups for flavor should not qualify as a recipe. what is going on with food network? the quality of the programming has plummeted noticably. where is the diversity? are greek/indian/chinese/anything but italian and french cooking not worth learning about? why do we need the umpteenth fake food competition show? why are the hosts no longer talented chefs with real training and teaching ability?

I really liked this recipe! I changed a few things. I added a big helping of garlic to the onions and I did a half sourcream/mayo to the mixture. I chopped up the greenbeans to hide them from the children. I also put a whole bunch of cheddar cheese on top. In addition, I used lowfat mayo, sourcream, and soup. It turned out great! I even ate seconds, which I don't do very often. It took me longer to put together than what is suggested because I cooked boneless, skinless, chicken breasts. Oh, I also omitted the pimentos to make it more kid friendly. Give it a try.

I am home sick today and looking for something to make for dinner. I found this recipe, looked in my freezer and had leftover turkey and I had all the rest of the ingredients except pimentos. So I put green chilies in instead of the pimentoes (yum). I will be making this often. How could anyone think this is plain tasting? We have potlucks at work all the time and this will be my next dish to pass.

This casserole was delicious! I don't care for the taste or smell of mayo, but keep it on hand for my family, I was very worried about the amount, but I must say that this casserole was the perfect amount of everything! I can't believe that I actually liked it so much, since I just can't stand mayo! The only slight change that I made was to sub broccoli for the green beans, other than that I followed it word for word and am very glad that I did!

I used chopped carrots and celery instead of the water chestnuts, and fresh green beans for the canned. Any creamy condensed soup tastes great with it, so use whatever you have on hand.

I really liked this recipe. I baked my chicken (salt, pepper, a little olive oil). I *did not* used canned green beans - gross! I used fresh steamed broccoli. I also subbed roasted red pepper for the pimento, as another user recommended. I also used long grain white rice (wild rice tastes gamey to me). It was delicious. Kids to the older set (who don't like spices) loved it. Yum!!!

I've mede this twice-the first time I followed the directions exactly and threw it away because the canned green beans and full jar of pimentos ruined it. The next time I made it, I cut down on the mayo (probably about a 1/2c.), used about a tablespoon of pimentos, added sauteed mushrooms, and blanched FRESH green beans (and about half the amount). IT was much more palatable this time and I look forward to making it again, and tweaking it some more(perhaps something spicy).

I'm no chef. Even so, this recipe is simple and delicious. I tried it with a few different vegetables and used some different meats and it comes out great every time. I find myself using more cheese than suggested, but that's because I love cheese. I ate this on and off for about 6 months straight and enjoyed it every time!

This is a very simple recipe and is wonderful. My family enjoyed it. It makes enough to eat twice. It also freezes very well. Let it thaw and then heat in the oven as opposed to thawing in the microwave when reheating the leftovers. The texture is much better this way.

I make this recipe all the time. We all love it!! I do omit the chestnuts and pimentos. I add some white wine, curry power (which makes a great addition), and I put some cheddar cheese in the casserole and then on the top as well. For those of you who thought this was bland try the wine and curry....yum!!

I mixed this one up a little. First off, I omitted the Mayo cuz didn't need it and added a little chicken stock. I omitted the chesnuts and pimentos and added mushrooms and corn. I did one small can of mushrooms and a full can of corn with one can of green beans (french style cut) I got chicken tenders and diced then up and sauted them after sauteing the onions. The key to this recipe is to season everything and spice it up for extra flavor. French fried onions on top is an excellent addition also! Really you don't need the mayo so don't worry about it. This is a great meal in one and will be a good snack/leftover for days to come. Be creative and make to your liking! Thanks Paula!

I had all my family for lunch Sunday and this was a hit. Everyone went back for seconds and wanted the recipe. They loved it even my 2 1/2 year old grandson. This will certainly be my recipe to take to work, church, or other functions. I went exactly by the recipe but used cream of chicken soup instead of the cream of celery soup and I left out the mayonnaise but instead I used 1/3 cup of low fat milk instead. It was soooooooo moist and delicious. I only had to cook three skinless chicken breast. This recipe is certainly a keeper. Thanks Paula!!

What a nice meal in one. This was a great addition to our Christmas buffet. I also intend to have it on other occasions with a salad. What a nice way to just sit back and relax and let dinner cook in the oven and all I do is add a salad with it. The water chestnuts and pimentos were a wonderful touch. To make it more calorie friendly I used light mayo and squeeze butter.

The only things I changed in this recipe is that we use either minute rice or brown rice, depending on how much time I have that day, as well as using roasted red peppers instead of pimentos. Everyone from Grandpop to my 2 year old nephew (including my VERY picky 6 year old daughter) love love love this recipe!!!

We all love this recipe - it's so easy and reheats very well. My family doesn't care for wild rice, so I cook a bag of Success rice and use that instead and I always use frozen green beans instead of canned, cream of chicken soup and lots of extra cheese. Easy and good.

This recipe brought back alot of childhood memories of family get togethers & pot luck dinners. I only changed it up a bit. I used 1/2 mayo & 1/2 sour cream, and subbed cream of chicken for the cream of celery soup. This was wonderful!!!! Will definitely make it again.

Be Forewarned - I made changes: I eliminated the green beans (I felt they were superfluous) and I subbed cream of chicken for cream of celery and I only used 1/2 cup of mayo. I also added another cup of cheese to the top of the casserole because it really didn't look that good without some sort of topping. It was REALLY good. When I saw Paula make this, I thought ... yum I have to make that ... it took me a while to get to it, but I'm glad I did. I would definitley make this again.

A good one to have in your recipe box. I made some changes - I substituted celery, onion and garlic for the whole onion. I didn't have any pimientos and somehow I inadvertently put in sour cream instead of mayo. I read the recipe but just got carried away throwing everything together and reached for the sour cream! It still turned out very, very good (for a newlywed trying to learn). I must say it took a long time to make the rice, brown the chicken and steam fresh beans. I sent leftovers with my husband for lunch and he just emailed me "best lunch ever" ;)

I really liked the sound of this recipe but didn't have all the ingredients on hand. I used a frozen wild rice that already had onions, seasoning, mushrooms, and green onions in it. Cooked as directed. I used cream of chicken instead of cream of celery. I didn't have pimentos. Still added the chicken, mayo, and beans. I found that it was still very tasty. (I also put Ritz crackers on top) Try it!!!

I'll admit I did do some tweaking on this recipe but I think it would have been pretty good on it's own. I cooked some fresh green beans for about 5 min and added them instead of canned. I added some Old Bay right into the casserole, not to the shrimp while they were cooking. Don't like water chestnuts so added mushrooms, and combined melted butter and panko bread crumbs and put it on top after baking and broiled until brown. This casserole is great as leftovers. I am eating it right now. Ummmmm good.

I followed the recipe as is, adding only a little extra cheese since we love it. I thought it tasted great and looked great. My son requested that I omit water chestnuts next time, although he cleaned his plate (twice). Maybe I'll substitute mushrooms. Took leftovers to work the next day and everyone loved it. It is a bit more time consuming than stated since you have to cook and chop chicken and also prepare rice, but definitely worth it.

I saw this on the website one day and had company coming over. Great way to feed a group of people. I purchased the rotissere chicken breast from the supermarket and used 2 cans of cream of celery and the mayo because it was a lot of chicken. Everthing else I kept the same. It was awesome, very tasty. I made the chicken boudine casserole before, that was good, but this was better. It was gone by the next day. Keep the one pot dishes coming. You can make this with a ton of variations. Thanks Paula

I followed the recipe to a tee, and it came out perfect. The mayo did not overpower the other ingrediants. My husband and I almost ate the whole dish in one night. Everthing went well together and I would definately serve it again. It was not too bland, just a tru comfort dish!!

My family didn't care for this recipe at all. It just had an off flavor about it. It looked like a winner and turned out great, just not our taste I guess. I would make some adjustments like using cream of chicken versus the mayo and cream of celery and no onions before trying this recipe again.

I didn't expect to like this dish as much as I did, but it was absolutely fantastic and quite easy. Not only did it make a great dinner, we both ate the leftovers the next day for lunch! It reheats well. Great flavor and love the crunch from the water chestnuts. I don't think there was too much mayonaise, as reviews before mentioned, but perhaps it's because I used light mayo? Definitely a keeper.

This took quite a long time to put together, even with buying a roasted chicken (which drove my dogs crazy). I wasn't even interested enough in this to finish the serving on my plate and dreaded the idea of how much was left for me to still have to eat. I can't even figure out why I didn't like it, as I liked everything in it. My mother, on the other hand, liked it a lot and took it off my hands. She liked the addition of the almonds, I'd added and this casserole is in the freezer waiting for her to have time to serve it to her friends for a luncheon.

This was very tasty. I changed alot of things though. I added 1/2 diced grn pepper and 2 cloves minced garlic to the onions and sauted. I used broccoli instead of green beans, and I used slivered almonds instead of water chesnuts. For the sauce I used cream of chicken,1/4 mayo and 1/2 sour cream. I topped it with crushed plain potato chips. It was absolutley delicious!!! Thanks!

This is an easy one-pot dish using a lot of things you probably have in the pantry/freezer. I did make substitutions--I used sour cream instead of mayo, and instead of green beans and pimientos (my husband isn't a fan of either), I used a frozen broccoli/red pepper mix. Instead of boxed wild rice, I used wild rice from the bulk bin at the farmer's market and cooked it in chicken broth and poultry seasoning. Even my 9 month old liked this--she's learning to eat table food, and I plopped a little pile on her high chair tray for her to dig into. I'll lighten it up next time by using non-fat plain yogurt instead of the sour cream or mayo and I'll omit the Cheddar (didn't think it added much). Thanks for another dish to add to the weekly rotation!

My home runs on opposite schedules...It's so nice to have something new in the recipe box that reheats/freezes so well. I made some minor adjustments...and it turned out spectacular!! 1. Not fond of pimentos so I substituted roughly chopped, roasted red bell peppers...So good. 2. I cheated and bought a whole, roasted chicken at my local deli and used that meat to add into the casserole...Huge time saver;) 3. Just for a little texture, I mixed melted butter and breadcrumbs then sprinkled the top of the casserole with that and set it under the broiler for a minute or two...That little bit added a whole lot. This recipe is DEFINATELY worth a try. It's more fun when you can tweak it a little to make it into what your family loves anyway:) Happy Cooking...

This was wonderful! Thank goodness for all the insightful reviews from other viewers, because I followed many of your advice. I tried this recipe two ways: first with 1 cup of low fat sour cream and second with half a cup of low fat sour cream and half a cup with reduced fat mayo. I'm not a huge mayo eater, so I thought I'd prefer the all-sour cream method but I was wrong! The mayo really adds a nice creaminess and really was the best way to go. Substituting low fat versions really seemed not to take away from the flavor because even my husband loved it! I also crushed some low fat potato chips on top and added a bit of parm on top. This really made it for me. It was creamy, crunchy, and comforting. Delish!

This recipe is sooo good. Like everyone else I did some subbing 32oz frozen broccoli for green beans and water chestnuts. I also used 1/2c mayo and 1/2c sour cream instead of 1c mayo. Then 1 1/2 c of mild cheddar cheese. It tuned out beautiful and my husband cleaned his plate. I will definitely make I again.

This dish didn't wow me, but my husband thought it was pretty good. Actually I thought it was pretty good too but I wouldn't say it was great. Next time I will use white or brown rice as opposed to the wild rice, mainly because I don't like all the sodium & additives in the packaged rice mixes. I think you would have to season it up quite a bit if you used one of the natural rices. I did use half mayo/half sour cream and I used mushrooms instead of water chestnuts after reading other reviews. I also added cheese on top the last 10 minutes of baking. I think kids would probably like this one, it's fairly bland, nothing spicy about it at all. All in all, pretty good comfort food for your family.
