I used cooked whole chicken from my grocery store and decided to used only about 1/3 cup of miracle whip mixed with the cream of celery soup. I also added a few sliced almonds in with the water chestnuts and deleted the pimentos. I did top the final dish at the end with crushed ritz crackers which I think was a great addition. I wonder if using aspargus with swiss cheese would also be a good idea. I have to credit many of the reviews I read ahead of time for helping make this dish a really easy and tasty dinner. Using the whole chicken from the store made this a quick dinner and still was economical. The next time I made it, I cut down on the mayo (probably about a 1/2c.), used about a tablespoon of pimentos, added sauteed mushrooms, and blanched FRESH green beans (and about half the amount). IT was much more palatable this time and I look forward to making it again, and tweaking it some more(perhaps something spicy). First off, I omitted the Mayo cuz didn't need it and added a little chicken stock. I omitted the chesnuts and pimentos and added mushrooms and corn. I did one small can of mushrooms and a full can of corn with one can of green beans (french style cut) I got chicken tenders and diced then up and sauted them after sauteing the onions. The key to this recipe is to season everything and spice it up for extra flavor. French fried onions on top is an excellent addition also! Really you don't need the mayo so don't worry about it. This is a great meal in one and will be a good snack/leftover for days to come. Be creative and make to your liking! I cooked some fresh green beans for about 5 min and added them instead of canned. I added some Old Bay right into the casserole, not to the shrimp while they were cooking. Don't like water chestnuts so added mushrooms, and combined melted butter and panko bread crumbs and put it on top after baking and broiled until brown. This casserole is great as leftovers. Took leftovers to work the next day and everyone loved it. It is a bit more time consuming than stated since you have to cook and chop chicken and also prepare rice, but definitely worth it. I purchased the rotissere chicken breast from the supermarket and used 2 cans of cream of celery and the mayo because it was a lot of chicken. Everthing else I kept the same. It was awesome, very tasty. I made the chicken boudine casserole before, that was good, but this was better. It was gone by the next day. Keep the one pot dishes coming. I wasn't even interested enough in this to finish the serving on my plate and dreaded the idea of how much was left for me to still have to eat. I can't even figure out why I didn't like it, as I liked everything in it. My mother, on the other hand, liked it a lot and took it off my hands. She liked the addition of the almonds, I'd added and this casserole is in the freezer waiting for her to have time to serve it to her friends for a luncheon. I did make substitutions--I used sour cream instead of mayo, and instead of green beans and pimientos (my husband isn't a fan of either), I used a frozen broccoli/red pepper mix. Instead of boxed wild rice, I used wild rice from the bulk bin at the farmer's market and cooked it in chicken broth and poultry seasoning. Even my 9 month old liked this--she's learning to eat table food, and I plopped a little pile on her high chair tray for her to dig into. I'll lighten it up next time by using non-fat plain yogurt instead of the sour cream or mayo and I'll omit the Cheddar (didn't think it added much). I made some minor adjustments...and it turned out spectacular!! 1. Not fond of pimentos so I substituted roughly chopped, roasted red bell peppers...So good. 2. I cheated and bought a whole, roasted chicken at my local deli and used that meat to add into the casserole...Huge time saver;) 3. Just for a little texture, I mixed melted butter and breadcrumbs then sprinkled the top of the casserole with that and set it under the broiler for a minute or two...That little bit added a whole lot. This recipe is DEFINATELY worth a try. I tried this recipe two ways: first with 1 cup of low fat sour cream and second with half a cup of low fat sour cream and half a cup with reduced fat mayo. I'm not a huge mayo eater, so I thought I'd prefer the all-sour cream method but I was wrong! The mayo really adds a nice creaminess and really was the best way to go. Substituting low fat versions really seemed not to take away from the flavor because even my husband loved it! I also crushed some low fat potato chips on top and added a bit of parm on top. Actually I thought it was pretty good too but I wouldn't say it was great. Next time I will use white or brown rice as opposed to the wild rice, mainly because I don't like all the sodium & additives in the packaged rice mixes. I think you would have to season it up quite a bit if you used one of the natural rices. I did use half mayo/half sour cream and I used mushrooms instead of water chestnuts after reading other reviews. I also added cheese on top the last 10 minutes of baking. I think kids would probably like this one, it's fairly bland, nothing spicy about it at all. All in all, pretty good comfort food for your family. | ||||||||||||
