Yankee tries Collards

My displaced South Carolina friends, now living in Pittsburgh, grew collards and gave them to me. I needed to confer with my Alabama friend about how much a "bunch" is. I followed this recipe and have decided that this Yankee prefers to call collards "compost". I guess it's an acquired taste.

Very easy and tasty, even without the hamhocks. You can put a cover on and shorten the amount of simmering time to 30 minutes. Yum!

The chicken stock adds so much flavor. Follow the recipe exactly and DO NOT put a lid on your pot!!
