I make it at least once a month and it's excellent every time!! Guests freak out over this one! My note: I always double the recipe and STILL have extra dressing. It's really more of a dipping sauce - so I always scale back the sauce a tad. Enjoy! We do! I will never boil shrimp again, it would be an insult to the shrimp and Ina. I chilled them after they roasted. So, you could do these hours ahead for an appetizer. I cut one corner and used Marie's bottled Thousand Island Dressing which is so good. These were super good and gone in no time......... and super easy! Great roasted flavors instead of the boiled taste. I will do them again, but think I may add some garlic or Cajun spice - something to get them going. I did not use the dressing, but made some Seafood Sauce instead. I had to triple the recipe, so rather than sprinkle them, I dissolved the salt in the lemon juice, added the pepper and olive oil, and coated the shrimp in a large bowl. This is a very simple dish and really could be scrumptious. Thank you, Ina. They are so easy to prepare and plenty flavorful. The accompanying dressing is also yummy and I was glad there was plenty left over to use for salads, and possibly another delicious meal of shrimp. I served the shrimp along side of Ina's Baked Potato Wedges and a glazed broccoli amandine. Delicious! I've made this twice and definitely noticed the difference with fresh vs. frozen shrimp. If using frozen, ensure you thaw and pat dry--this prevents the water problem. I did alter the dressing very slightly, by adding a couple tablespoons of the juice from my homemade sweet pickles, just to thin it out, and add a tiny bit of sweetness. That is just my personal taste, but this dressing is excellent on salad, as well. The shrimp is as good as if grilled!! Yesterday I decided to make the shrimp and had already made the dressing. Then the same show was on. The only problem I had was that the recipe for the dressing said 1 tsp. of gerhkins and 1 tbsp. of sweet pickles. It really was sweet pickle relish on the show. Too late, but it was still okay. I think you really need more than 1 tbsp. and 1 tsp. I didn't really measure. Roasting the shrimp was great. I made sure it was really dry before adding the olive oil etc. I made about a pound of shrimp for dinner entree for two people.
