Everyone loved the prime rib roast at Christmas. The roast cooked perfectly, pink and flavorful on the inside. I did add a couple of tablespoons of thyme for even more flavor.

This was the easiest "roast" I've ever made. My family loves prime rib. This was my first time making it and I never knew how easy it is. I didn't have access to fresh thyme, but the seasoning was delicious without it. I only used a couple table spoons of salt and didn't roast the vegies w. the meat. Next time I will apply the rub and let the meat marinate for a couple hours. I will also start the meat at 500 and drop the temp to 350 after 15 mins. I think the higher temp. will make better crust and caramelization. I will make this again. It goes really well w. crab legs!

Awesome!

I prepared this for Christmas dinner & I couldn't believe all the compliments from my family. It was so easy & quick to prepare, took a relatively short time in the oven, and the results were spectacular. After removing the fat, I added a little red wine & some water for a fantastic au jus. A seven pound roast easily fed six people, including three big hungry boys

User: JAN from Pawleys island, SC    User Rating:
This roast was absolutely fantastic, tender, juicy and flavorful. However, the recipe neglects to tell you that you are to discard the salt crust before carving. Each end piece thinly sliced will taste salty. However, the rest of the roast should not. Also, I don't know why he would recommend using the pan veggies because they indeed will be salty. In his video of this recipe, he throws veggies and drippings away. Even then tho, he doesn't say to remove the salt crust, I figure he thinks we're all smart enough to do it. Some of us are, some of us ?????

Super salty!

I agree with these reviews and wish that my husband and I had read them before we made this roast for the first time on Christmas Eve. It was way too salty! There must be some mistake in the quantity. We were very disappointed in the saltiness because it almost ruined our very nice, very expensive cut of meat.

This was my first attempt at prime rib. Having just spent $70.00 on a roast I was hopeful it would be good. Had the family over. They all loved it. Although I will agree it was to salty on the crust!! I also cut slits and inserted garlic cloves. This added a bunch of flavor. I will adjust the salt content and increase the cooking time. Loved the horseradish!!

User: Sandy from Grand Island, NY    User Rating:
The rub is a fabulous idea, but the 1/2 cup of salt must be a misprint. It ruined my very expensive roast and we had to throw it out; it was too salty to eat. The rest of the rub is fabulous; I would probably try it again, but use MAYBE 2 tsp. of salt for the whole thing. Oh my gosh, it was just horrid with all that salt.

Huge Hit and Blown Away at Christmas Dinner
12/25/2007 at 10:15pm
User: K from San Antonio, TX    User Rating:
Wow, this was super easy!! I am a novice cook, but I was hosting my first family Christmas dinner party so I needed to show boat with something deceptively easy! This definitely took the prize! Due to a limited budget, I took the lowest grade at $5.99 a pound, already french cut, and everything. I followed the recipe but without the veggies and only some of the salt- 1/8 cup (only because I accidentally bought the sea salt with a fixed a grater on top and my hand was getting tired). I also used the pre-minced jarred garlic which did make it easier to blend and spread with the paste. Yes, even with the amount of salt I used, the crust was still very much salty. However, due to the reviews... I did my own research online. I looked up tylerflorence.com to get the same exact recipe, but it does indeed tell you to remove the crust before carving. Ok...so that solves that controversy once and for all. I easily scraped off the crust and I used the drippings to sautee mushrooms. Yes, the drippings were also salty, but I offset it with a few tablespoons of red wine vinegar which neutralized the saltiness- something a seasoned cook had taught some time ago. Needless to say, my family was impressed and raving! The mushrooms were excellent (and not salty)! I served with another easy dish- green bean almandine! Tyler Florence thank you for clearing up the controversy on your recipe on your website and for allowing me to be passed off to my family as an excellent cook! I am beaming still at the idea that I pulled it off and it was sooooooo easy!! This was an excellent Christmas Gift for me!!- Dec. 25, 2007

This is a great way to prepare a rib roast and it is NOT too salty if done properly, although Food Network should probably have corrected Tyler's mistake on the video when he says two cups of salt. And will someone explain to the poor, deluded souls who complain that the vegetables were too salty....YOU'RE NOT SUPPOSED TO EAT THEM; THEY FLAVOR THE MEAT AND THE BROTH.

I made this dish for a pre-Christmas family gathering. It was one of the best tasting prime ribs I've had; and the family loved it too. About the recipe, many of the reviews here say the amount of salt is too much. Not really. It does not really matter whether you use ? cup or 2 cups of salt, as long as you have enough salt and horseradish to make a thin crust, which needs to be removed before carving. Also, the vegetables are there for the aroma, not to be eaten. As far as the cooking time, 20 minute per pound is a good approximate, but do use a leave-in thermometer to dial-in your exact doneness preference. Thank you for a simple yet superb recipe, Tyler.

Question about this recipe
12/22/2006 at 10:24am
User: Hiba from Escondio, CA    User Rating:
I don't know if this site has a forum or bulleting board so apologies if this is out of place... My question is about the inconsistency of the salt quantity on the online video demo vs. the recipe. The online video shows Tyler adding a HUGE amount (2 cups I believe he said) to the horseradish paste whereas the recipe says half cup. Most of the reviews below say the salt is too much. Does he shave the crust off in the TV episode? Because he does not in the online demo--grrr, inconsistencies again! My limited knowledge about salt crusts is you take them off. I'm stoked they're replaying this episode today and I am recording it, but nothing beats the experience of the amazing cooks on this site. Any help is appreciated so I don't ruin Christmas dinner!

I'm so glad that I read that the crust is to be removed...and also, that I need tl use a meat thermometer. Thanks to all of you for saving my $53 cut of meat. I'm glad that I practiced before the BIG DAY!!! Happy Holidays!!!

In response to the reviews that said it was too salty, I would suggest running the rub through the food processor and layering the rub on thickly. It will easily pull off the prime rib when completed. Tne finished product is delicious. Mine did take closed to 3 hrs to get to 125 than 1 1/2 - 2 hr.

If any of the previous reviewers had seen the show they would know to cut the salt crust off! ALWAYS when preparing a roast with a salt rub/crust it is policy to cut it off before carving. The salt crust is only to flavor the meat while roasting. If you've used the horseradish, then it is also served on the side ... NOT the salt/hr crust, but a bit of prepared horseradish. This is a terrific recipe when used correctly!

This was good, as I made two roasts for a dinner party recently and it was a hit. My butcher wasn't a sourpuss (he was a cheapskate and mentioned that the roasts were on sale when I kindly requested the frenching step, so I frenched the ribs myself, which simply means to remove the fat as well as possible prior to cooking). I would suggest to shave off & discard the salt crust when it's on the carving board. The drippings were also way too greasy for a gravy (with a full cup of olive oil plus the roast drippings). The next time that I try this I will skip the veggies and make them separately, and cook the roasts on a roasting rack. Finally, go for a full 2 1/2 hours for a medium to medium well roast. The "rare" carnivores will like the inside cuts.

I had a horrible experience with this recipe, made worse by the fact that I think Tyler Florence is a god. The recipe calls for ONE-HALF CUP of sea salt in the rub. I was very wary of that, but I went ahead and followed the recipe exactly. The vegetables I put in with the roast absorbed so much salt from bits of falling crust that they were inedible. Likewise, the roast ended up so heavily salted that the little we were able to eat made my husband and I sick for an evening. AND I ruined a twenty-seven dollar roast!! That "one-half cup" direction MUST be wrong!

My mother has been using a very good Prime Rib recipe for many years but I as soon as I watched Tyler make this on his show, my mouth began to water and I wanted to try it. My mother was very reluctant to try a new recipe so the best I could do was get her to buy a large prime rib and cut it in half. She would cook one with her recipe and I would cook the other with Tyler?s. Needless to say, when my mother tasted Tyler?s Prime Rib she was blown away. She wouldn?t admit it openly but Tyler?s Prime Rib was 10 times better and none was left at the end of the night. Everyone should try this at least once. It?s very easy to make and is some of the best Prime Rib I?ve ever tasted.

I was leery, but my family loves horseradish. This was by far the best prime rib I have ever cooked, and no additional seasoning was needed. I have shared this recipe with friends, and everyone raves out it!

This was delicious, tender, and full of amazing flavor. The only change I would consider is using pre-minced, jarred garlic instead of smashing the garlic pieces, that way the garlic would be spread more evenly.

I think there is a mistake in this reciepe. I followed the reciepe to the letter, it called for 1/2 cup of sea salt. We had to wipe off the crust because it was tooooo salty. My husband and kids thought I was try to kill them.

I was afraid of the salt amount at first by reading other reviews. I stayed with the recipe and it turned out wonderful. Thanks Food Network, and Thanks for sharing Tylor. Okay....we ALWAYS make a recipe from another site for my standing rib roast. This year, we decided to try something a little different. This was WONDERFUL!! I was totally blown away by it. And I was worried that the horseradish would drip down and affect the pan drippings. Not so! Or if it did, it only made them taste excellent! The sauteed mushrooms were great, too. Tyler, this one's a winner! Thanks!!
