I used an extra 1/4 cup of flour to bulk up the dough...might have been the humidity and altitude. I dipped them in chocolate and gave them away. Tons of compliments in my direction. We are still eating them, and they almost get better with time. Excellent recipe. The second time I tried the recipe I let the log cool for 1/2 hour and it was much easier to cut. I didn't have dark chocolate, tho, so I used chocolate chips and coarsely chopped the peanuts and they couldn't be much better. I can't wait to try the other recipes! Peanut butter & Chocolate...how could it be bad? 11/10/2006 at 10:41pm User: Brian from Pompton Plains, NJ User Rating: This was our first time making biscotti, so there were a few little tricks we'd like to share that we got snagged on when baking, but we'd definitely make this again, and it was a big hit with friends and family. First, it helps to have a large oven (at least 3 baking racks) or two ovens. It's doable with 2 racks, which we had, but it takes a bit of time. Start to finish ~ 2.5 hours. BROWNING THE BUTTER. This was our biggest mistake, as we'd never browned butter before. The recipe says to brown on a med. flame, but a low flame will definitely do. And you only want to brown until the butter just starts to get a brown hue. Then take it off the heat. I didn't have enough peanuts but it came out well anyway. Letting the log cool for 20-30 minutes makes the cutting easier. Great recipe! I had no problem cutting or turning them (you do have to be careful), I used a lg. frosting spatula. My family loves them. The only change I made to the recipe was that I used a large Cadbury milk chocolate bar and cut it into chunks. YUMMMMM. It is a wonderful recipe! I shared it with many of my friends.Fabulous with coffee and tea!
