Not so good 12/28/2006 at 07:14pm User: Anonymous User Rating: I wasn't too impressed with this dish. I'm more of a alfredo sauce type, but I thought I'd mix it up a little and try this recipe. I found that the butter and lemon were just over-powering. It may have been just operator error on my part, maybe didn't use an optimal wine or I prepared the dish incorrectly, but I didn't like it and I won't try it again. I have tried other chicken scaloppine recipes and they are almost always to lemony. This was an excellent blend of wine and lemmon, and of course BUTTER. MAN! My husband and I both thought it was better than Johnny Carino's.Even though it seemed the ingrediants were married perfectly, my husband got a stomach ache after eating it two days in a row. This time I made with only 2 sticks of butter and a can of chicken stock. I personally thought the flavor quotient dropped considerably. It was more like something you'd get in a nice restaurant than in your own kitchen. My boyfriend and I both loved it. We did modify the recipe as another Paula fan had mentioned. We only used two sticks of butter and added 1 1/2 cups of chicken broth with three heaping tablespoons of flour to thicken the sauce. It was still very buttery. Next time we plan to use only one stick of butter and a full cup of cream. Please try this dish. You'll be very happy you did. I then add white wine, lemon juice, and salt and pepper to make a sauce instead of using the lemon butter sauce (simply to cut out fat).
