Everyone loved it and I was a little worried because of the mixed reviews. I did decide to carmalize the onions first since I had the time, and I let it cook for about 10 hours on low. I also used beef broth that was extra low sodium. I buy Great Value brand from wal-mart and it's only 180 mg sodium per cup compared to 440 mg in the swanson's low sodium. I also used parmesan and provolone cheese instead of gruier-upon Alton Brown's advice. Loved It!!!!! Second, onion soup should not be crunchy. Even though we followed the recipe exactly, we had to extend the cooking time to eliminate the cruchiness. Whatever we gained in speed using the slo-cooker, we lost in flavor. This was a crucial mistake. If you use regular beef broth, your soup will turn out to be a salty, disgusting mess. So please, don't make this mistake. I also let my soup slow cook for just about 10 hours, which is quite a bit longer than what she recommended. I think my method helped to really distribute the flavor of the onions and made for a richer soup, which is one complaint that several other raters had. Overall, if you make a couple of tweaks, you'll have a pretty good pot of soup on your hands. This is a recipe for the Americanized version, which uses a very thin broth. My family has traveled to France and we prefer the traditional thick, creamy soup. So I substituted 4 cans of Campbells "Golden Onion" soup for the 4 cans of beef broth. It's important that you don't add water or you won't get the thick, rich consistency you want. The soup turned out great. I even used Compte -- the French equivalent to Gruyere -- to top the soup. If you prefer cream soups, you might like this version better. As my family does not eat dairy products for health reasons, I topped the soup with a tangle of french fried onion rings leftover from my T-giving casserole. The soup was a huge hit and is now in our regular rotation at the front of our keeper file (if people would quit begging for the recipe LOL). Tnx for helping us "keep it easy and slow."
