I did not like the pudding, it had too much apple in it, I did not really like the appearance of it nor the overall taste. It did not taste like the bread pudding I am use to. Next time I will go the longer route and make it homemade all the way. Not much difference in time. I agree with other reviewers that the sauce has a chemical like taste. I don't know if it is the dreamwhip or the ginger ale the gives the weird flavor. It doesn't taste too made if you only put a nickle size amount on the pudding. If you put too much on it would be horrible. The only changes I made were to add 1/4 cup sugar (we like bread pudding on the sweeter side) and added 1 tsp cinnamon because we love the spice. I didn't make the topping. I just added some cinnamon to whipped cream. However, my husband didn't even use any because he liked the pudding so much by itself! For those who had it come out mushy you probably didn't cook it long enough; that didn't have anything to do with the recipe. I think that adding the apple pie filling is a great addition from typical bread pudding. The cinnamon roll oatmeal also adds a great flavor. In my Sandra Lee cookbook this recipe is in the "Slow Cooker" chapter, so I initially cooked it in the crock pot, but had to transfer it to a baking dish and finish it off in the oven because it was sticking to the sides in the crock pot. It turned out great though, and I will definitely make it again. The taste and consistency were so bad, I found myself throwing it out and in tears because I had nothing to take to Thanksgiving. I followed the directions to the letter (only subbing real whipped cream for the dreamwhip), and I'm usually great with desserts, but this was a disaster. Save yourself the time and heartbreak. The first time the rum just overpowered the bread pudding the second time came out perfectly. Here are the measurements I used instead of ones in recipe. 1/2 tsp rum (real rum) not extract. 1/4 Cup lite raisons 1/8 cup dark brown sugar 2 cups 1/2 and 1/2 Lastly for the sauce you need two packages of topping mix or it does come out too watery. If you only have one package then use 1/4 cup ginger ale. As a side note this recipe also comes out well if you put in some rum soaked dried apricots. (only soak in rum if you like lots of rum flavor). Otherwise hydrate in water, ginger ale or milk. before cutting up and putting into recipe. My family all asked for seconds, and I got some for myself. I didn't use the rum extract (vanilla instead) and after hearing the problems with the icing, I bought whipped cream instead. The only addition I made was 1/2 tsp. of pumpkin pie spice. You could of course use apple pie spice, but the pumpkin was already in my cabinet :) I made a different sauce also. Mine was 2 cups cream, 1/2 cup white chocolate chips, and 1/2 cup caramel sundae topping. Thicken with a little cornstarch if needed. Delicious!! It cooked up perfectly and tasted great. I don't know why others complained of the texture. The texture of mine was just like bread pudding should be. Make sure you use the right size pan, maybe. We did add about a TBL more of cinnamon because it's one of our favorite spices. We loved it warm, but also adored it chilled the next day. We didn't make the sauce, only because we forgot to get a couple ingredients. Just sprinkled cinnamon and sugar over our cool whip topping. Again, nice comfort food. I have never used rum extract so I bought some and 1 1/2 tsp. is WAY too much I think...it overpowers the taste and it's even hard to tastel the cinnamon. I think 1/4 - 1/2 tsp. rum extract witht the balance vanilla extract would be plenty. I would even be tempted to use only vanilla extract. I did not make the sauce, I prefer whipped cream on my bread pudding, so I can't comment on it.
