This recipe was quick, easy, colorful, delicious, and a "hit" with my dinner guests. I made this meal three times over the course of 8 day to three separate groups of friends--a favorite with each guest. Everyone commented on how colorful the meal looked...I plated this dish with fresh cooked green beans and wild rice. To top off the meal I served individual chocolate pudding cakes with vanilla gelato. This is my new favorite.

This was an excellent dish. It was sooo easy-just bake and serve. It comes together in a snap. I made mine with chicken instead of salmon, since my husband doesn't like fish and it was just as delicious. I added a dallop of fresh pesto on top of the chicken and some parmesan cheese to top it off! Really delicious. Thanks Giada.

User: Laura from Elmont, NY    User Rating:
I loved the idea of a fast and easy way to make salmon with a twist. The pastry puff, already being buttery, complimented the salmon well and the pesto sauce added that little umph to bring it all together. My only complaint, and it may be the pesto that was store bought, is that it was a little too oily for my liking. That said I still loved the dish!

Shocked but Amazed

User: MELINDA from Cambridge, MA    User Rating:
I am shocked at how well this turned out! I hate salmon and raw tomatoes but it all went together so well. Next time I would season the salmon prior to adding the almonds with salt and pepper - I added a lot more almonds and pesto than called for, but this dish is spectacular and I think I am a salmon convert! I put the puffed pastry on one tray and the salmon on another - the puffed pastry went in first and the salmon went in 5 minutes later. I needed about 15 minutes for the salmon and 20 minutes for the pastry. The salmon came out so soft! I loved it and so did the company I made it for.

This is an extraordinary recipe, because despite the ease of preparation, it is worthy of 'company.' The only suggestions I would add is a reminder to thaw the puff pastry in time (it needs about 40 minutes)and for those who prefer their salmon fairly well done, put it in the oven for about 5 minutes and then add the puff pastry squares for the required 10 minutes.

Perfect dinner for two!

I found this recipe to be very easy to make and really good. The only thing is that it may take the pastry a little longer to cook otherwise it is doughy.

not that puffy
07/27/2007 at 09:27pm
User: Anonymous    User Rating:
I wonder if Giada really made this all at once. The concept is good, but unless the puff pastry can cool, it totally falls and is a thin sheet of pastry. Still tasty, but not nearly as impressive. It would work better to bake the puff pastry ahead of time and let cool to room temperature, then it would retain it light puffiness!

Prepared this for party of 8 with wild salmon and it got rave reviews from everyone - even the non seafood fan. Only suggestion was to either use a thicker piece of fish or less pastry. I served it with Giada's parmesean crusted broccoli and cauliflower too which paired perfectly. Also, I had to cut 2" strips of the dough to fit the salmon so as not to waste, I used them as tops and bottoms of ice cream sandwiches and sprinkled the remaining almond slices ontop to tie in as well.

This meal was extremely easy to prepare and light and delicious! I didn't bother taking the skin off the one side of my salmon because after taking it out of the oven, it stuck to the foil and allowed me to just take the salmon right off and transfer to the puff pastry. The tomatoes tasted great with this. Will add to my repertoire for sure.

User: BILL from Washington, DC    User Rating:
Too rich and oily for my taste: Salmon is an oily fish, pesto is oily, and puff pastry is buttery. Result: Too my fat and richness! Only the tomato cut the richness a bit. Everybody on here seems to think it's a 5-star recipe, but they obviously have different tastes than I have. I like all the ingredients separately, but none of them really complemented each other.

I thought this looked creative and fun. Unfortunately, once I started eating it I hated the tomato and pulled it off. The pastry got too soft and it kind of meade me feel yuck in my stomach. I mean it was okay....Next time (if there is one) I'll lose that tomato, and I'm not sold on the pastry under it, it was actually too much going on all at once I guess.

They are more McDonalds people than fine dining. I however think all the ingredients play together beautifully and I will be eating this dish until the day I die!

Did you get this to-go at a restuarant? He asked. If it pleased a 15 year old it will please anyone. Half way through the meal he did sprinkle a little herbed goat cheese on top...he doesn't go a meal without goat cheese. It was a nice touch, I would serve it that way again but put the goat cheese on the side. Perfection!

This recipe is so easy, but dinner party quality. Only 5 ingredients and one of the best salmon recipes I've tried. My husband says that this will make a salmon lover out of him. Try it, you won't be disappointed.

OMG!!! Sooooo Yummy!!!

I think this was the easiest, most delicious meal I've ever tasted. It sounded easy so I tried it (I'm not much of a cook). It was even easier than it sounded. If you want to impress someone, cook this meal. I cooked the fish a bit longer than suggested. The skin stuck to the foil which turned out to be a good thing - the fish came up so easily sans skin (don't like fish skin - yuck). This is in my recipe box no doubt!

Quick, easy and great for guests.

This is our new favorite way to prepare salmon. Extremely fast to throw together. No additional seasoning of any kind is needed with the basil pesto and pastry. The flavor combinations are perfect.

The salmon didn't have enough flavor when it's just baked plain. I also wasn't a fan of the pesto with the Salmon.

This was delicious, saw it on TV today and made it for dinner, I cooked the salmon a little longer (I'm not that good of a cook and meat and fish make me a little nervous) but still didn't take much more that 20 min. I could not find "puff pastry" at the Supermarket, but used Pillsbury Crescent Rolls (I used 2 flat rectangles (formed by 4 triangles))... it was easy and delicious!

I've tried MANY of Giada's recipes, always to great success, but this by far tops them all. I am not a big fan of salmon, or fish in general, but my bf likes Salmon, so I made this for him for Valentine's Day, he loved it and I even devoured it. The combination of temperatures and textures and flavors was magnificent. It was amazing and super simple.

A winner!

I fixed this for my sweetie last night for Valentine's Day. What a huge hit it was. It looked beautiful and tasted marvelous as well. Can't beat that! Oh, I roasted some asparagus at the same time as cooking the puff pastry & the salmon. It made the entire dinner all so easy.

This was a super simple recipe that looked and tasted great. Just the right amount of pesto along with the other ingredients. I simply served it with a spring mix salad. I did have to bake about 6 minutes more because my fillets were thicker, but that's all. My husband thought it was restaurant quality.

Beautiful, tastes great & so quick & easy!

Loved this! It tastes great and looks beautiful (like something from a fancy restaurant) but was so quick and easy to make. I highly recommend this one. I did cook for 15-20 min instead of 10 but other than that followed the recipe as written. Will definitely make again for company!

This is a very easy recipe that is sure to please your guests. I have a couple tips which will make it perfect. 1) Bake puff pastry and salmon on different baking sheets 2) Place puff pastry on paper towel to cool (to absorb some of the butter 3) Slice tomato ticker rather than thinner 4) Squirt fresh lemon juice over salmon before serving.
