This soup was elegant enough to serve at a holiday meal, and easy enough to prepare the morning of. The only thing I could not find at my local market was canned chestnuts, so I had to roast & shell my own. That was time consuming, and if I made this again, I would skip the chestnuts all together. However, the mushroom flavor comes through with the slightly spicy fennel - an excellent recipe. Highly recommend the immersion blender...
