I can't imagine putting all that marshmallow into an 8 x 8 pan, though. It filled a 13 x 9 x 2 pan to the top. I liked the hot chocolate, but putting 1/2 cup of mixture to 1 cup of water makes it much too sweet. After reading the other reviews, I think I will try it with milk next time instead of water, and I'll definitely use less. I made 6 double batches in a huge bowl and left out the powdered milk and enclosed instructions for 1-2 heaping Tbsp. per 1 C. of milk. I also used half semisweet and half milk chocolate. The marshmallows came out great and people were impressed. I used 4 packs gelatin and about a 1 1/4 C. of water and spread the mixture in a baking sheet which yielded 54 marshmallows. I also let them set almost 24 hrs. The texture was perfect. The marshmallows were delicious with the hot cocoa, really nice texture and creamy when melting. The marshmallows were a hit with everyone 12/29/2006 at 02:53pm User: Anonymous User Rating: I did not use the recipe now posted - I used the orginal which was 1/4 cup gelatin (4packets) to 1 cup water. Other than that I pretty much followed the directions and my marshmallows came out great and everyone who tried them loved them - especially how they melted in the hot chocolate, making it even creamier and smoother. The only things I did at all differently 1. My standing time for gelatin/water may have been more than 10 minutes, and I did whip it with a whisk as I added the sugar to it. 2. My cooking time for the sugar/gelatin mixture was a little longer. I cooked until mine was pretty liquid, when stirred could see clear under the white melted top. 3. I have a Kitchen Aid stand mixer, and slowly moved my speed to the highest, and beat it for about 8-10 minutes. 4. I thought using the 8x8 pan made the marshmallows too high, so on later batches, I used a longer pan, making them shorter. 5. Between the 3 hours or overnight, I let them sit on the counter overnight, not cutting them until morning. Both my boys were able to help, they are 17 & 13, in the cooking part. Now the youngest is very picky and had already shared his concern before sampling. So we let the marshmallows set for 3hrs then 12hrs in the fridge (for best set up and flavor). Then pulled it out and woow! This was an instant hit with my whole family, and my co-workers. If you are looking for a neat recipe to try out with your kids try this one! Kids of all ages will enjoy this eloquent,sticky melt in your mouth treat. Here are my tips... 1. I needed to simmer the sugar and gelatin water longer than the recipe called for (I might have had the heat on too low). What you want is for all the granules of sugar to be dissolved so you don't end up with grainy marshmallows. 2. Take your time waiting for the final marshmallow mixture to get thick. If you have a KitchenAid mixer, this is so easy! This took quite a while, but it was worth the wait! My marshmallows were a perfect, smooth consistency the next day. Enjoy! The marshmallows were firm and had a wonderful consistency. The second recipe with less gelatin and more water produced soft and slimy marshmallows. Do not let the gelatin mixture cool to room temp. If it hardens too much to pour, reheat it slightly until it is liquid again. As a variation, I added a 1/2 tsp of peppermint extract and a few drops of red food coloring to make a very tasty peppermint marshmallow. I followed the recipe to the letter and it will not whip up into stiff peaks, this is going on 15 minutes of whipping at #4, i can't go any higher, as the mix is so watery it will splash everywhere. I just got around to making the marshamallows. First, the ingredients list had 2 cups of cold water then only one cup water listed to mix with the gelatin. I tried it with one cup and it was not pourable. I had remembered Tyler poured the gelatin into the mixer, so I added another cup of water. Well, my marshmallows came out absolutely disgusting. When I removed them from the bowl they fell onto the pan in one huge glob. I came back to write this review and saw that the recipe had been modified but its a little late for me! I also agree that the hot chocolate is very rich the way the recipe is written. One last thing, Food Network needs to get better proofreaders for their recipes because the one I printed out had TONS of mistakes. It says on the site that it has been retested and i fear that it was printed wrong.. I made the recipe last sunday and it came out beautifully. I am Home Economics teacher so I thought it would be a fun lab for my Foods class. We made it and served Hot Cocoa and Homemade Marshmallows to all the school secretaries. So I split the difference. I heated the sugar in the bloomed gelatin and then let it cool. I creamed the egg whites with the powdered sugar. And it worked pretty well. I used my kitchen aid stand mixer to beat the hell out of the marshmallow until it held soft peaks that were on their way to becoming stiff. I heavily dusted an 8 x 8 silcon baking pan with powdered sugar and poured the mixture in there and let it set over night. With very minimal loosening (with an offset spatula covered in sugar) the whole block popped right out. I was able to easily slice them with a chef's knife that I liberally buttered. I'm finding them still a bit tacky so I am letting them dry on racks and develop a crust. I keep sifting powdered sugar onto them too. I think I will use the hot method Tyler used on the show and see what results I get. Although NYC has 45% humidity right now and they may be the culprit for the excessive tackiness. They look beautiful. I'm not bothering with the chocolate recipe because I think powdered milk is gross. I prefer to melt ground chocolate into hot milk, or to use something like Ghiardelli's mix. I just used common sense on cooking the gelatin, when the sugar was dissolved and the liquid as "clear" as it could be, it was done. I do have a stand mixer and upped the speed slowly until it reached the max. I made 5 batches of the marshmallows last Christmas(adding a peppermint flavoring to some, along with a swirl of red food coloring and vanilla to the "plain" ones),along with the cocoa and everything came out perfect. This year for the cocoa, I used a dark chocolate cocoa which definitely called for an increase in the amount of sugar and I added a tsp of cayenne pepper (the cayenne is not hot at all, it just gives a really amazing depth to the cocoa) and about a 1/2 cup or so of non-dairy creamer. It is chemistry, when people do not follow directions, mash mellows taste funny. Between the show, the printed recipe and all the suggested modifications from other posters, I don't know which "recipe" to follow. The cocoa is merely okay. Very chocolately, not very creamy at all. Frankly, I think the recipe on the back of Hershey's Unsweetened Cocoa powder made with skim milk and vanilla extract is much better than this recipe, and it's a fraction of the cost. I've made dozens of recipes that I've seen on Pairings with Andrea on the Fine Living Channel, and I've never had one problem. The printed recipe matches exactly what was seen on the show. The Food Network needs to take more care when listing its recipes on the internet. I was afraid after reading the reviews so I altered the recipe a bit. I noticed right away that salt and vanilla were missing. Easy enough - just add 1/4 tsp. of salt and 1 Tab. of vanilla. Just to be sure, I added and extra packet of gelatin,(2 cups water to 4 packets of gelatin)although, now that I made them, I am not sure it was necessary. I heated the mixture to about 180 degrees and poured it hot into the egg/powdered sugar mixture.(make sure you temper it or you will have scrambled egg whites!) For those who had trouble, are you sure you beat it long enough? It takes about 15 minutes or longer. Mine turned out excellent. If you are not sure if it has been beaten enough, you can put a little spoonful into a bowl of cold water. It should form a very soft ball. Also, after pouring the mixture into the pan, leave a small amount in the bowl and let it sit for about 5 minutes. Then gather it up with a spoon and the texture you get is about what your marshmallows will be. If all else fails, you can always make a big batch of rice krispy treats. It is sure to work in that!! Otherwise, you should at least have marshmallow cream. Hope this is helpful.
