Disappointed!

I followed the directions exactly but was very disappointed in the taste and texure. Overwhelming chocolate flavor, more like fudge, and way too liquidy in the center.

The BEST most yummy brownies!

User: Sheila from Andover, MA    User Rating:
These brownies were the absolute best I have ever made. I did cook them a bit longer (5-8 minutes) than suggested but they were still soft and not cakey. The parchment paper made them very easy to remove from the pan. I served these warm with a scoop of vanilla ice cream, they were a huge hit at our family Christmas party.

undercooked

I followed the recipe to a T yet the brownies were not cooked at all in the middle. I put the pan back in the oven for an extra 10 minutes....the middle was still runny while the outside was dry and overdone. I had to throw the entire thing away. very disappointing.

More like chocolate cake

User: REBECCA from Carol Stream, IL    User Rating:
My brownies turned out more like chocolate cake, without all the "denseness" of brownies. Did anyone else have this problem? I followed the receipe, except I didn't add the extra chocolate chips to the batter. Disappointing.

wow

User: Dusty from Richmond, KY    User Rating:
This recipe was excellent, but I found that the brownies needed another 20 minutes added onto baking time. Even after this amount of time the "gooey-ness" was still there in plenty. The only other brownie that I have adored as much as this one are Fat Witch brownies from the Fat Witch bakery in NYC. Luckily, now I don't have to order those anymore after making this recipe.

A Chocoholic's Dream

What a great dessert! I used mini chips instead of regular ones, and it gave me an even more dispersed amount of chocolate throughout the brownie batter. Definately a treat for those who love chocolate. My family could only have one small square each.

WOW!

User: KIM from Knoxville, TN    User Rating:
WOW that's some chocolate! Really delicious, but I must admit, I could only handle one. I used a trick from Giada - coat the chocolate chips with a tiny bit of flour to help them stay suspended in the brownies so they don't all accumulate at the bottom. Great tip - great brownies! Thanks, Nigella!

love chocolate? these are for you.

I made these brownies for my co-workers on Valentines Day last year. They praised me for days. Rich, gooey, full of chocolate. I don't bother trying any other brownies. There's no need to. None other will compare.

These do NOT even compare to Ina's Outrageous Brownies. If you want to make the best brownies ever made...go to the Barefoot Contessa's.

Center remained uncooked

I would love to know what went wrong with this recipe. I left them in the oven at least 10 minutes longer but the center just wouldn't cook. Any ideas on what to do differently???

Rich, fudgy and delicious!

User: Julie from Charlotte, NC    User Rating:
I had to adjust the cooking time, also (but I did use a convection oven and it tends to cook a little slower), and increased it by 20+ minutes. I think it is impossible to overbake these to where they'll dry out w/ all of the butter and eggs! Definitely not low-fat, but TOTALLY worth the calories-everyone raved about them-they were the densest, fudgiest homemade brownies I've ever tried! I sub'd milk choc morsels for the semi-sweet and they were just as delicious. Will make them again!

Beautiful

I LOVED these brownies and so did my entire choco-holic family! I added walnuts to the mixture as well which enhanced the flavor of the dark chocolate and added a nutty texture. I did notice that I had to bake the brownies for about 6-8 minutes longer than the suggested 25 min.; at 25 minutes the center of the brownies were still jello-like, but overall, AMAZING BROWNIES!!!!

The Perfect Brownie
04/02/2008 at 06:53pm
User: Louann from Mount Prospect, IL    User Rating:
I have tried dozens of brownie recipes looking for the perfect brownie and i finally found it. These brownies are absolutely delicious. They are the perfect balance of "cakey" and "fudgey". I used Scharffenberger semi-sweet chocolate because I find bittersweet chocolate a little too intense. I also added a couple more tablespoons of sugar. I baked them in a 13x9 pan in a convection oven set at 350 degrees for 25 minutes and they came out perfect.

Fudgy bars!

Soup mess
03/31/2008 at 08:15pm
User: Anonymous    User Rating:
I was so excited to try this brownie recipe. With 3 sticks of butter & 6 eggs, I was expecting a rich, delicious experience. I followed the directions exactly, cooked it for 25 minutes & the top looked just as it should, pale brown & speckled. It was hardened when I tapped the top, so I took the pan out to cool. An hour later, when I went to cut it, the inside was a raw, runny mess. It was actually thinner than when I put it in the oven. I reheated the oven and tried to finish cooking it, but the top just got drier & harder while the middle never really did cook. The soupy mess with the crunchy top might have been OK to spoon over ice cream, but I was really disappointed in the waste of all those expensive ingrediants. (I bought extra expensive chocolate, as Nigella advised.) What a bummer!

Wonderful but possible Alternative

I made these for a party, and they were gone within a few hours. Amazing brownies, I loved them and it has now replaced my family recipe. I noticed some people complain about the texture of the brownies, but I prefer a fudgier less cake-like brownie. Delicious.

too gooey

User: David from New York, NY    User Rating:
I thought that the chocolate flavor was great, although there must be too much butter in the recipe because it took forever for the brownies to set, plus they were too greasy. I don't think I will make these again.

Love them!

What an easy to make recipe! Didn't have enough bittersweet chocolate so I substituted some semisweet chips. Looking forward to making them again, and again!

These are perfect. They came out of the oven fudge and delicious. I baked for 25 minutes exactly. These are what a brownie should be. Not dry and crumbly.

These brownies are truly spectacular. The dark chocolate and butter mixture creates a soft center where you can taste the butter--mmmm. I personally modified the recipe to create White Chocolate Rasberry brownies with a dark chocolate sauce. Enjoy!

Cross between Brownies and Fudge
03/06/2007 at 08:08pm
User: David from Seymour, IN    User Rating:
I've made this recipe twice. It hasn't turned out as cakey, brownie-like as Ms. Lawson's; it's thicker in places, very chocolaty, almost fudge. The first time, I tried substituting cappuccino chips for the chocolate chips, and I don't think it worked. The second time I substituted cherry chips for the white chocolate chips, and the cherry and chocolate combination was good. I also tried a secret ingredient: a teaspoon of pasilla negro chili powder. You can't taste it, and the brownies aren't spicy, but I think it enriches the flavor. Everyone loves the brownies.

I am not a brownie lover but these were completely outrageous. I could not stop eating them. Best not eaten warm or just cooled. They last in a tupperware for 2 weeks and taste fresh.

Pleases the sweet tooth!!!

User: AMBER from jacksonville, FL    User Rating:
These brownies were so good! The only problem I had was it took about 1 & 1/2 hrs to cook. It might have been my oven. The middle was still soupy after the recommended time to cook. They eventually cooked & the brownies didn't last very long in the house after I pulled them out of the oven.

I made this recipe twice in a week and at my office I am now known as the brownie queen!! I loved the texture and taste. Only thing i did different was when i watched the recipe on TV they had lined the pan with aluminium foil and not parchment paper. It works great and it is also easy to clean up. The brownies freeze great as well. Thank you for this awesome recipe!

Great Brownies, but cooking time is wrong.

I was wondering because it seems lots of others are having the same problems as I have had with her recipes as far as the cooking times, if perhaps Nigella has a convection oven and not just a regular oven. My oven is checked frequently for accuracy and it is accurate in the temperatures. I baked my brownies 15 minutes longer than stated and I believe it needed 5 to 10 more minutes. Maybe just the 5. But that is 20 minutes longer than she suggested. The flavor was wonderful and because I have to have walnuts in my brownies, I added them. So, is Nigella's oven a convection oven, which cooks faster, or are we having a C/F temperature translation problem? The chocolate Loaf cake had cooking timing problems also.

I used my preference of chocolate

I used semisweet chocolate for the brownies, instead of the bittersweet. Other than that, I used the ingredients the recipie calls for. Although, I did have to bake the brownies an extra 10 minutes longer. Did not make any difference, because, the brownies were still moist and good!

ADDICTIVE!!

These brownies are truly addictive! I let them cook about 5 mins longer and they were still moist and delicious. They disappeared so fast! I made 4 or 5 batches in December and I could never make enough. Great!

There are not enough stars to rate these brownies. I'll never make boxed brownies again. These brownies are what chocolate is all about. I've gotten rave reviews and given out Nigella's recipe several times. I will say that they cook best in a tin pan as Nigella recommends and I had to adjust the time cooked per my particular oven-an extra 5 minutes. Teresa, Carmel, Indiana
