My husband, had never had stuffing before he married me, now adores any kind of stuffing and finds it to be a real treat when I make it. He was very intrigued by this one and thought it was fabulous. He kept commenting on the dish, as cornbread is just unheard of here in Holland, so it was different for him. The recipe is easy and straight forward. The stuffing was very flavorful with the perfect mix of flavors. I did make a couple of changes. I made my own cornbread for this recipe,with cornmeal I hauled back to Holland my last trip home. I also added some chopped celery for a little more texture. Since I did not roast a whole turkey, I placed the stuffing in a baking dish and baked at 325F for about 30 minutes, covered. Both time there were no leftovers, which is partially because it does not make a much dressing as you are used to. If you like leftovers you may want to double the recipe but I promise everyone will love it. Despite that, this was very flavorful and still got eaten up. If I made it again, I would cut down on my cornbread ratio and double the recipe (1 batch did not make very much). Everyone RAVED about it (and my father never likes anything he hasn't had 20 times before). Everyone agreed that not only was this a keeper but it should be made again for Christmas. I did do a few things differently; I added celery (2 stalks), doubled the butter for sauting the onions & celery, and tripled the chicken stock because I was not stuffing it into a bird. Extra liquid is definitely needed otherwise it is a little on the dry side. Thanks Tyler for a GREAT recipe! I added 2 diced pears this year as well as a cup of fine herb bread crumbs as it seemed a bit loose on its own. I've also made it with Vidali onions, which sweetens it up a bit. Bake in a shallow pan and it's perfect for adding to post-feast sandwiches, which, let's face it, is the best part of Tday. I have a true disdain for traditional stuffing recipes, so I was hesitant to make this dish. I forged ahead and stuck mostly to the recipe. I did, however, add a tiny bit more cream, as my mixture seemed a smidge dry. The final product was fabulous. I found myself going back for a second helping and heating up leftovers the next day. Everyone wanted the recipe. Made 2 batches and doubled the chicken stock because it was too dry. On a rainy day might not be necessary. Also, I had just cooked bacon and I used 1 TB of the drippings to cook the onions, and it enhanced the flavor. Wouldn't have done that exvept at Thanksgiving and Christmas, but it's only once a year! It was really simple to make(perfect since I was cooking my first Thanksgiving dinner). It came out crispy but moist. I did double it though. How much do 6 large cornbread muffins weigh? I looked at several markets, but none of them carried muffins or even cornbread so I made cornbread from a package but don't know if I had the correct amount. I baked it in a dish but wasn't sure if it was enough to stuff a 10 to 12 lb turkey. All in all, a good dressing so I will try it again. The changes I made were 1.) used Jiffy cornbread mix, baked in a 8-inch pan, cubed when still warm. 2.) used an extra onion.
