This is a very good recipe packed with a lot of vegetables. My kids even enjoyed it.

A little soupy, but good

I ended up sucking out half of the stock with a turkey baster once it was finished, but the flavor was still good. I didn't have enough mashed potatoes to cover the top, so I mixed it with leftover cranberry wild rice pilaf and it worked out great.

way too sloppy

can't understand why this recipe calls for 2 cups of stock. It doesn't thicken at all in 5 min. cooking, nor do the carrots, celery, or onions get cooked. We thought I made a mistake in directions but I followed it exactly. Won;t make this again. Now I have left overs of the leftovers..............

I would make this again

I omitted the bay leaves, and followed Rachel Rays's recipe by adding 1/2 cup of cream, 1 egg yolk and 2 tbl sour cream to the mashed potatoes and then sprinkled the whole thing with paprika. I also served the leftover gravy from Thanksgiving dinner alongside, but it would have been just as good without it.This was a great way to use up the leftovers and I would make it again.

Because of the other reviews I read I changed a few things. I reduced the cooking liqued to 1 1/2c and I also added about 1 heaping TBS of cornstarch right before I put it in the oven. I also cooked the veggies longer. It was so great my whole family loved it and the texture was fantastic:)
