I used cool whip and angel food cake. I also used frozen blueberries. I used 3 cups blueberries and three cups strawberries. This recipe is the best! The juices from the berries soak into the cake and it molds together so beautifully when serving. The lemon is so fresh and tasty too! :):) Try it, you'll love it. He has two receipts, one you make the curd, an other - you buy an 11oz jar. One person didn;'t like the pound cake. Then use some other cake. Be creative! I buy the frozen organic tri-berry mix from Costco, and then through in fresh berries for the top. Have fun with this one - it is very refreshing! The berries created a wonderful sauce and the lemon flavored cream was the perfect compliment. I added a little confectioners sugar to the whipped cream. The lemon curd and berries were purchased at Trader Joe and the pound cake was good old fashioned Entenmanns. But that calls for only 1 cup of heavy cream, not a quart. So I'm guessing the quart would be way too much cream. Our trifle was perfect with just 1 cup. The combination of the lemon curd/cream with the berry sauce was perfect and summery. Now, for making a trifle that is supposed to be 3-4 layers, 1 cup of cake (?) doesn't seem right. Does anyone know if it's correct because I want to make it. I think it's a typo and should call for "one store bought pound cake". Why do you toss the berries in one bowl with 1/2 the lemon juice and then put them in a saucepan with the other half? Makes no sense.
