Needs some tweaking.. 06/11/2008 at 09:25pm User: Anonymous User Rating: The first time I made this, I followed the recipe to a T, yet the combination of the amount of butter, rather high cooking temp (400*) and probably the combination of BOTH baking soda and baking powder caused these cupcakes to explode all over the oven making the house smell for days! The second time I cut down the amount of butter to 6 tbsp and threw in about 1/2 cup of melted white chocolate chips. I increased the amount of flour to 1 1/4 cup and used 1 1/4 teaspoons baking powder instead. These came out perfect. No explosive mess to clean in the oven. I also used my own frosting recipe instead of the one provided which consists of 1/4 cup melted white or dark chocolate chips, 1/2 cup powdered sugar and enough liquid of your choice (I used butter shots liquer) to make a good icing consistency. Then the muffin papers were drenched in butter. They didn't even taste good. I tried to work with them before throwing them away. Only saving the tops and filling them with raisins, everything. I hadn't tried one of her recipes, but being a cupcake lover (admit to using the box mixes!), I thought this seemed like a nice way to try a made-from-scratch recipe. The cupcakes were really light and had a nice soft taste and texture - kind of spongy and fluffy. I was scared away by some of the icing reviews, so tried the Alton Brown recipe - which was good. Next time, I am going to stick to frosting - icing is pretty, but it just isn't FUN! The cooking time for my "best batch" - I made 4, was 13 minutes. That is in a gas oven in the midwest. Make the frosting as prescribe BUT when she adds the juice change it out for a teaspoon of vanilla and 2 tbl sp of water THEN whip the frosting so it is stiffer. It will not go hard and be more marshmallow'ey'. Keep the cakes covered. YUMMY and really if you dont like a show, just dont watch it. Good for busy mom 03/10/2008 at 10:46pm User: Liz from Austin, TX User Rating: Leave it to Nigella to give a cupcake recipe that can be done in a pinch while home alone with a baby and a 2 yr. old using regular pantry ingredients. My only minor complaint is that the cupcakes have a slightly soda-y taste, but considering how easy they were this is certainly acceptable. If you are doing this with a hand mixer, as I was (food processor isn't large enough), here's what I did and it worked fine. First, I fork sifted the dry ingredients together in a very large bowl (you need the size to act as a splash guard later). Then I cut the soft butter into the dry ingredients with a dull knife until it was starting to look a little like pebbles. Then I used my hand mixer on the highest setting (start off slow or you get covered with flour) to get the butter a little more dispersed. Finally I beat in the room temp eggs and vanilla, then loosened the batter with the milk, adding slowly while blending until it seemed like a regular cake batter. The batter wasn't perfectly smooth, since there were still little bits of butter, but it baked just fine and was perfectly delicious. I think it has a high ratio of butter, about one stick of butter for just 3/4 cup flour and 1/2 cup sugar, which makes for a very rich, delicious cupcake -- moist on the inside and a nice brown crust on the outside. I added chocolate chips to the batter and used a chocolate buttercream frosting instead (Barefoot Contessa's "Beatty's Chocolate Cake" recipe: (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_36337,00.html). The frosting was excellent and together they are a real treat. I got 9 cupcakes out of the recipe which was perfect, these are too good to have any more than that sitting around! I did use a different icing because I wanted a chocolate buttercream. It's easy, quick and a breeze to clean up. Oh, and I thought they were done when I checked at 13 minutes - next time will set the timer for 12 minutes instead of 15. I actually think that cupcakes made from a cake mix are better! The Royal Icing made to go on top of the cupcakes was too sweet and lemony. The icing upset my stomach a bit. I took a couple bites of a cupcake and didn't eat any more from the batch. I personally would not recommend these. I won't be making these again. I didn't make the icing, because I wanted a thicker icing to decorate the cupcakes with flower designs, etc. I made these for my mother and sister, and they both asked for the recipe. I didnt use the royal icing because my daughter wanted to sprinkle on some colored sanding sugar. They had a great taste and great texture. There is very little clean up, and they make 12 cupcakes, a perfect amount. Then you don't have tons and tons of cupcakes left over. The consistency is great, very light and fluffy, perfect with any frosting. I didn't use the Royal Icing, because I prefer buttercream. They were moist on the inside with a bit of crunchy goodness on the outside. Unlike the other reviewers, I thought that the icing complimented the cupcakes extremely well. It's not too sweet but just sweet enough. Nigella has never let me down, but these far exceeded even my highest expectations. Oh, and it wasn't a problem getting 12 cupcakes out of the batter. Very light; tasted light angel food cake with a much finer texture. There is, however, no way you could eek 12 cupcakes out of one recipe...unless you make them very tiny. Also, next time I will use different frosting recipe. This one was horrible...hard and tasteless. Cake was very good, though. |
