I have done some of Tyler's other recipes, like the pulled pork sandwich, and that was awesome! My pork hating husband even loved it!... I did find it a little too much mork for the end result. And yes it hurt me to pay 8$ for cheese that honestly I couldn't taste. Just FYI: I used real Vermont white cheddar, skim milk, vidalia onions and hickory smoked bacon, I ended up using alot more cheese than it called for. I def recommend using full fat dairy in this. And read the directions carefully as this was my first time making a bechamel sauce and burned my butter the first time around. I do think it is a great concept that everyone should be able to tweak to their own personal preference. I guess I like my mac n cheese a little richer and creamier. This had a strong flavor but it was more sharp and salty. Not that it was bad just not what I wanted. To each his own.... Anyone who I make this for raves and requests it over and over. My husband has begged me to make this ever since he saw Tyler making it. The bacon and onion definelty saved this mac and cheese by adding a little kick to the dish. I like the whole idea of the bacon and onion so i will use that in the future but tyler, try again. I would recommend NOT rinsing the noodles. I know this is a general rule anyways, but I tried it once to cut down on prep time the net day, and it just didn't have the same texture. Any kind of cheese works well, the onions really add a nice flavor. This recipe is a keeper!!! Please try it you'll love the results! I make mac and cheese a lot and have tried many different variations, and this was one of my least favorites. I was very surprised that after all the fancy ingredients and techniques (infusing the milk with thyme, etc.) the end result was very bland. Also, this was my first time using all white cheddar, and I found that I did not like the taste as much as when I use yellow cheddar or a blend of different cheeses. I use Paula Deen's "The Lady's Cheesy Mac" with 2 modifications: 1) I use 50% sharp cheddar and 50% is a mix of whatever cheeses I have on hand: Parmagano Reggiano, Pepper Jack, Provolone, Havarti, Swiss, Etc. 2) I use heavy cream in place of the milk. You have to use whole milk for mac and cheese. If you try to save calories by using skim or low fat, you completely change the consistency of the dish. It won't be nearly as creamy as it should be. It was very easy to make and I will use this recipe as a base recipe for expanding it's potential. After reviewing Emeril's, I wanted to vary this recipe, but not make it as fattening. I used a variety of cheese (Sharp cheddar, Fontina, Guyere, and Parmasean) and the flavers were great together. I did not use the bacon, but did sautee some onion for the top. I used Vit D milk. In the future I will add shallots inside the mix instead of on top and I think either truffle oil or porcini mushrooms would be a great addition. Would highly recommend. I also added some cayenne, garlic powder and dry mustard to the milk misture. then i added a bunch of different cheeses instead of just one. my mix was chedder, sharp white cheddar, blue cheese and some guyere because that was what i had in the fridge. after stirring it all together i added some chopped tomatoes. i was too hungry to wait until it came out of the oven, so i ate it off the stove top. it probably would have been better to wait and let the tomatoes cook a bit. once again, a good basic recipe that you can change to your tastes. way to go tyler! Once it was out of the oven, I was unable to eat it right away. It was about 20 minutes after, that I served it and it wasn't as creamy or flavorful as I thought it would be. The bacon/onion toppings definitely helped. This is the first homeade Mac'N Cheese that I've made and I don't know if I'd make another one with white cheddar. You really need to whisk the butter and flour very well as well as the cheese. I think that is why some people thought it was grainy. I am not a mac and cheese person, but this was by far the best I have ever had or made. I used turkey bacon, skim milk, and 50% less fat cheese. Just wanted to cut some of the fat. I also didn't have the parsley. The garlic, thyme, and onions really gave this flavor. It lacked the rich cheesy flavor that you would expect from a good mac n'cheese. The bacon/onion/garlic was a fun addition, and I might use it in the next mac n'cheese recipe that I try. This was fabulous - very filling - I could have halved the recipe! I made this along with the other featured dishes (arugula salad and roasted tomato soup) - it was the perfect ending to a nice, active, outdoor winter day. Very creamy. I almost skipped the bacon and I'm glad I didn't - the boys raved over it (we like our bacon crispy, so it took about 15 minutes to get it to our liking vs. the 5 minutes recommended in the recipe). Enjoy - this would be a great meal for a family/friend get together after a day of skiiing/sledding! |
