So wonderful!

User: Eryn from Tigard, OR    User Rating:
I initially made this cake per the recipe and it was a HUGE hit. Everyone at the dinner asked for the recipe and loved the blueberry topping. I thought i would attempt to adjust the cake recipe to cut out the cholesterol from the eggs and all the saturated fat in the yogurt. So i used 5 egg whites instead of the 3 whole eggs, and used non-fat vanilla yogurt instead of whole-milk yogurt. This turned out wonderful as well! I re-fed this newly revised recipe to the same people, and of the 10, only 3 could tell a "slight" difference. Also, i recommend, unless you want an abundance of blueberry sauce to just cut the whole recipe in half as it still is too much sauce --but it is delicious! Another suggestion that worked for me was after i cooled the cake about 5 minutes, i took a fork and make slits in the cake so the sugar/lemon mix would soak into the cake better. I waited another 10 minutes for it to all absorb while still in the pan, then took it out to finish cooling.

the recipe plain is good, but I find it much more delicous when I add 2 T. of lemon juice into the batter, and at the end combine 2T. sugar with 1/2 pint fresh blue berries that have taken a nice spin through the microwave and place it on top for a balance of sweet and sour.

This cake is great, but I find that it is even better with my personal tweaks. When I completely eliminated the oil, added a half-a-cup more yogurt and added a few tablespoons of baking soda, the cake becoame lighter and spongier. The suagr-lemon juice mixture is essential, but the glaze is unneccesary. It is best served with cooked fruit.

Absolutely delicious!

This loaf is outstanding! Refreshing citrus flavor, very moist cake, easy to make--you can't ask for more. Suggest using a thin skewer or toothpick to poke holes in the cake for the glaze. don't skip the icing either! It's not too sweet and really enhances the lemon flavor.

I made this because I love lemon. I was disapointed! It was not difficult to make I am a pretty experienced baker. The taste was horrible, way too heavy. It suppose to be somewhat heavy but it was toooo heavy. Not moist at all. I did do the lemon simple syrup over top (did not help). I had one piece could not even serve it to my husband!

A Couple of Tips

User: Gail from grafton, MS    User Rating:
After reading the comments, I think I know why a few had unsatisfactory results. This recipe calls for "plain whole-milk yogurt" which means yogurt with a fat content of 3.25%. Don't substitute. Secondly the "vegetable oil" required, this means any tasteless veg. oil (I used corn). DO NOT substitute with olive oil.

Great!

We found the cake to be moist and delicious - even more moist the second day! The lemony flavor was just right. I only drizzled the glaze rather than covering the cake, using less than half the glaze recipe. With that being said, the cake doesn't really need the glaze as it's great without it, too. Love Ina!!

I added poppy seeds to make a lemon poppy seed cake. I liked the lemon flavor and thought it was a great coffee/tea cake because it isn't a hugely moist cake. The lemon syrup added a nice moistness and extra lemon flavor to the cake. I did the glaze also. I cut the sugar in half in the cake, syrup and glaze. I thought it was sweet enough, my family doesn't like very sweet things.

I made this cake for a dinner party and it was a huge hit! It is one of the simplest pound cake recipes I have come across--perfect for first time bakers! After reading some of the negative reviews, I think that a lot of the cakes were unsuccessful because of cooking time and equipment. In terms of cooking time, I left my cake in the oven for an extra 10 minutes. Toothpick "testing" works most of the time, but for something like this, I use a thin chopstick in order to test the center. In terms of cookware, I prefer making poundcakes in an earthenware loaf pan. I HIGHLY recommend Le Creuset's...it retails for about $30. My cake turned out perfectly cooked and somewhat browned in my loaf pan.

While I loved this recipe when I finally mastered it, I threw out 2 whole loaves first. I ended up omitting the lemon sauce on cake, it made it too soft and the whole cake fell apart. The third time was the charm, and I put the glaze on, (although I would recommend doing that later rather than sooner)And my whole family loved it, we love lemon!

So disappointing.

Ina's recipes are always so fantastic. This one, however, failed to please me. The cake did not cook evenly, even in my fairly new, even temperature oven. It got too brown before the inside was done cooking. It also cracked on the top hugely. Once it was cooled however, I took a taste and the inside was rather eggy/oily, even though I did wait until the cake tester was clean to remove it. Even with the lemon glaze, I did not get much lemon, but rather oil and eggs. I will never stop using Ina's recipe, but this one will surely go into the "Revise Me" part of my recipes.

This is the first cake I chose to do as my first attempt of making cake from scratch, and it turned out absolutely wonderful. I didn't have any lemons, so I used lime zest instead, and I also squeezed in a bit of lime juice to heighten up the flavour. Instead of yogurt, I used sour cream, and for the simple syrup, I doubled the ingredients, and squeezed the remaining lime juice. After the cake cooled, I poured the entire syrup over, making it super moist and tasty.

I think this recipe is unnecessarily complex. I added the oil with the other liquids and the texture of the resulting bread is good. I baked it for 55 minutes and it was perfectly done. Before glazing cooled bread, I poked holes in the top of cooled bread with a wood skewer (for even absorption). But, after all this, I think the flavor was just okay. Interestingly, I think this recipes was copied with minor modifications from a Feb 2005 Bon Appetit Yogurt Cake with Marmalade Glaze recipe. Check it out on Epicurious website.

User: Lee from Frankfort, KY    User Rating:
The 'cake', I mean loaf, seemed to turn out pretty well. I made only minor adjustments to the recipe such as a slight cut back on the sugar. I checked the loaf right after 50 minutes baking and the center was gooey, set the clock for 10 more minutes and it dried it out somewhat, so best guess is that it bakes in 55 minutes. I also used confectioners sugar that had been on my shelf for a while and it was not fresh and I could tell, so I would be sure to use fresh sugar next time. I also had to poke holes on the top for the glaze to seep into the loaf. I will try it again to get it right.

This cake turned out very well, although I had to bake it for 70 minutes. After 50 minutes it was very mooshy on the inside. After 70 minutes however, it was perfectly baked all the way through. I put the lemon + sugar mixture on the cake, but not the additional glaze. It tasted delicious - not too strong a lemon flavor, and the cake was very light. The trick is to get the eggs to room temp before cooking. I highly recommend!

I even made a mistake and added the 1/3 cup lemon juice into the mix, did not seem to mess up the recipe, so I will continue to do so. I can't understand how anyone can mess this one up, if you follow the recipe, and even make a little error as I did, it is still a perfect cake. I will make this many many times. First of all,the recipe is written in a confusing manner. I am an expert baker and added the lemon juice to the batter as did several other reviewers. The first time I made it,it was a sodden, heavy mess. I tried it again, this time putting the lemon juice where it belonged and it still didn't turn out. The middle doesn't get done, the outside is overdone. I adore Ina but this recipe is not up to snuff.

Wonderful lemon tart flavor. I didn't use the confectioner's glaze because it really didn't need the extra sugar glaze unless you wanted it. I loved it plain. I would make it again in a bigger loaf pan. A lot of work for a very tasty bread. Sold very well at our Church Bake Sale by the slice. Drawbacks to recipe: overflowed loaf pan used and was gooey in the middle (raw) when baking time was up. I would still try this recipe again with larger loaf pan and longer baking time.

This cake is soooo moist & tangy. I love that it is made with yogurt! The yogurt also makes it really easy & quick to make. The only two things I would suggest are: 1. Cover the edges of the loaf pan with tin foil b/c my edges always get brown (I have made this several times). 2. I didn't think it was necessary to use all of the lemon flavoed simple syrup...made the cake too wet. I highly recommend trying this cake!

I tried to make this cake and followed the directions exactly. I tested the cake with a toothpick to check if it was done. Their were no crumbs on the toothpick, and it was nicely browned on the top. When I took it out of the pan, it broke in the middle, and the center of the cake was still liquid. It actually drained out on the cookie sheet. The taste was good (what we could eat from around the edges.) I'm not sure what went wrong, but I don't think I will try this recipe again. I usually love Ina's recipies, and perhaps I did something wrong.

Maybe it's because I'm no used to the texture of yogurt cakes, but this one was a strange underdone, almost pudding like texture. Even with adequate, almost to the point of over-cooking, the cake seemed underdone, in a not-good way. The addition of the lemon simple syrup increased the flavor, but without that, the lemon flavor is a bit weak. Also a little rubbery. I might try to modify and use less oil.

I've made this cake several times and it is easy, fast, and foolproof. I've made a few substitutes when I didn't have the exact ingredients and it was still great -- once I used oranges instead of lemons, and lowfat yogurt instead of whole milk yogurt didn't seem to matter at all. One suggestion: before you pour the lemon syrup over the cake, take a toothpick and make little holes all over the top crust so the syrup has somewhere to go and will seep in better.

I love Ina's recipes, cook them all the time. But, this one flopped in terms of texture. I made by the book, it turned out picture perfect but the texture was tough, spongey and tasted a little too much like the oil. I put holes in it all over with a toothpick so the cake would absorb the syrup. I think I'll try another reviewer's idea and refrigerate it and see if that doesn't remove the oily flavor.

I am a huge fan of Ina Garten, and her recipes are always a hit with my family and friends, but this one didn't deliver. The first time I made the cake, it came out a gooey, sticky, and burnt mess. The second time through, I put on my best "Ina" impression. I sifted, beat, and followed every direction to the tee--I even watched the episode simultaneously, so that Ina and I could bake this delicious cake together. Result? Still gooey, still sticky, and still a burnt mess.

Very good. I added extra lemon to the mix, and fresh lime juice. It was very, very lemony. So, you really have to like Lemon. I also poked holes in the top before adding the sugar and lemon. It was quite good. It makes the inside a little soggy where the holes were, but lemony and good. I did not use all the confectioners sugar glaze as it was too much, however, I did add a bit of vanilla to the glaze mixture, which was good flavor too. In addition, I used Fat Free yogurt, and it turned out just fine. I think that with this recipe you could very easily substitute SPLENDA for sugar. Next time I make it I am going to try that and decrease the oil.

I made this today after seeing it on the Food Network over the weekend. It was easy to prep, took a while to bake (50 minutes), but definitely worth the time. Reminds me of the Starbucks Lemon cake. Cake is so moist and the lemon juice & powdered sugar glaze is so yummy. I stuck it in the freezer, I prefer this type of dense cake to be served chilled (the glazing also hardens if you do it this way too). Make sure you have milk on hand to drink with this dessert!!

I loved this cake. It was so easy and even I could not mess this up. As I read the reviews, I wanted to see if this cake really needed the last part with the confectioner's sugar. It really didn't. I added a little bit of it because I had it ready in a bowl but I ended up putting most of it back in the box and skipped the lemon juice completely. I would recommend putting maybe a 1/2 cup or even 1/3 cup into a sieve and sprinkle it over the cake if you want to. But this was a great cake and definitely a keeper! Thanks Ina!!!

I made this for a group playdate and it was devoured by both mothers and kids alike. The cake was very moist with a nice lemon flavor and the syrup gave it a sweet tangy kick. I liked how some bites with the syrup were intense while the ones without balanced the flavor. I did not have yogurt so I substituted with reduced fat sour cream, plus I did not have confectioner's sugar either, so I skipped the glaze. After tasting, I don't think it was missed, the syrup brought enough sweet lemon flavor to the cake. This is a treat to make again and again.

The cake is quite dense and sour on the outer part. I didn't like the fact the syrup didn't soak through the cake. I am a fan of healthy eating so I would reduce the sugar in the cake next time and try to make it more fluffy somehow....maybe beat the egg white first then incorporate in the yolks and low fat yougurt after. The glaze requires more liquid or else you with have a big clunk of sugar and it will not spread on the cake.

I thought this was a very good recipe. The only thing I will do differently next time I make it is omit the syrup step. It really doesn't need it and the syrup only seeps into the top half of the cake, which makes for some really tangy bites and some not so tangy bites. The glaze is just the right touch, but you'll need to thin it out more than 2 tbsp of lemon juice does so I added a little water until I got the right consistency. I also used non-fat yogurt to make it a little healthier and it was delicious!

I love the taste of this cake, even with the fallen midsection. I tried trouble shooting, checked oven temperature, checked size of pan, had ingredients at room temperature, bought new baking powder. I figured that the fourth cake would be perfection. About half way through the baking the middle began to sag and when completed and cooled looked as bad as the first three. but tasted good, inside completely cooked. anybody have a clue? I would fault the recipe but no other review described this problem. I even tried Dorie Greenspan's original recipe and had the same problem.

This recipe resisted my best efforts to botch it. First, I was pouring the batter into the pan when I tasted some that had fallen on the counter, thought This is sure sour, and realized I hadn't added the sugar. So I poured it back into the bowl and beat in the sugar. Then I put it in the oven, looked at the recipe to see about the syrup, and realized that the 1/3 cup of lemon juice was to go in that, not in the batter. So I just let it bake a little longer. It came out moist and delicious. One caveat: the instructions for the 'glaze' make more of a sugar-lemon goop. You need a lot more lemon juice (I just used the stuff from the yellow plastic lemon) than what's called for, though I may have misread that too.

I love how easy this recipe is, and that all the ingredients are things that are always on hand in our kitchen. I did have to add about ten minutes to the time in the oven but it's well worth the few extra minutes of waiting. My only real complaint is that the simple syrup doesn't soak throughout the entire cake, it only soaked into the top half inch or so of the cake, leaving that part of the cake with quite an extra lemony kick to it the rest of the cake doesn't have. I think next time I will skip that step and go straight to the glaze. Other than that this is a great recipe; definitely a keeper as the whole family really enjoyed it!
