Great when adapted to a veggie side dish!

This was delicious! I was looking for a recipe for cauliflower and came across this and am so happy. With a few changes it makes a great vegetable side dish. First, I kept the rosemary on the stem and removed at the end. Also, I kept the garlic in the pan and added crushed red pepper for more flavor. I did not mash the cauliflower. I drained most of the liquid before I added the romano cheese. My husband usually does not like this vegetable, but had three helpings of this dish. I will try it as pasta sauce next time. Thanks Rachael!

This was incredibly bland. We've tried it several times and there just isn't anything there. Tried it the last time with some capers and that helped to brighten it up a bit. Perhaps some kalamata olives and sun-dried tomatoes would help. I'm a vegetarian, but this is very low on my list of dishes.

I really like cauliflower but this was very tasteless. I added butter to make it better, but then it wasn't healthy. It wasn't gross; it was just so bland. It might be a good way to get children to eat cauliflower since they tend to not mind bland food.

This is a very flavorful, scrummy dish. I changed a few things, however. At the end, I added 2 percent milk to thin the sauce, and I added it gradually so it was exactly the right consistency. I used cheddar cheese instead of parmesan, and I left the 3 cloves of garlic in, which added a sweetness. I don't like Whole-wheat pasta much, and used Barilla's 'penne plus' instead, which was pretty tasty. Yummy! The rosemary (I just used 3 sprigs) seemed to be the right amount, and wasn't overpowering. I found it was so flavorful it didn't really need seasoning, plus there was salt in the chicken stock. I just added some pepper. Please try this! You'll be surprised!

This is a delicious alternative to a traditional tomato-sauce pasta dish. The rosemary complements the cauliflower very well and both flavors pair nicely with the whole wheat pasta. Romano cheese is the perfect finishing touch. This was a very easy meal to make that I will definitely be making again.

I'm not a lover of cauliflower but I love this dish. I first add a tsp. of hot red pepper flakes when I'm sauteeing the onions and garlic (and use more of that as well). Also, I add a green vegetable in the mix (near the end) such as roasted asparagus or fresh spinach. I'm thinking about making it with a little bit of sausage too. Of course that will take away some of the healthiness of the dish but you only live once, right?!

This was really a great recipe and fairly healthy for you too. It was the first time I used whole-wheat pasta in a long time (tried it when it first hit the major markets and did not like it). I am happy to say I will be using it again! I used extra garlic and cooked the sauce longer so as to sweeten the garlic and onion more. I also used vegetable stock so as to keep it vegetarian. Thanks for a wonderful new addition to my recipe collection Rachael!!

This is a great recipe but there are a few small things I changed to give it more flavor. First, I cooked the pasta in some of the chicken stock instead of just water. Also, the whole wheat penne tasted like cardboard and really took this excellent recipe down a step. I just used normal penne...it makes a big difference.

I was scared to try this b/c of some of the reviews saying it was bland. I read every review carefully and made some changes to the recipe when I first made it. I used the spiral whole wheat pasta instead of penne b/c my kids love them so much. Then I added chicken-cooking 2 breasts chopped in olive oil and seasonings first...adding them to the sauce to re-warm right before tossing the sauce with the noodles. I used a big dash of red pepper as another review mentioned and added some italian seasoning too. I also cooked up 1 bunch sliced asparagus and added it to everything at the end. It came out yummy! My husband had 2 helpings and he is not a pasta fan, but loved this one. I think next time I would add mushrooms to it.

I love Rachel Ray. She makes some excellent dishes. I saw her make this recipe on her show and thought it looked incredible. I made it tonight for my husband and me. It was DISGUSTING!!! Sooooo incredibly bland. We each took maybe 3 bites and threw the rest away (well, I actually thought about my 19 month old son as I was pouring the nastiness in the sink, and salvaged a serving for him. We'll see what he thinks of it). Thankfully, we had some ice cream on hand so we didn't have to starve. :-)

After reading other reviews I'd have to agree, this is good yet needs some help! I noticed that the recipe never says to add the garlic back into the recipe, strange. I did that, and added a big clove of garlic with the onion. I also think if you don't add enough salt to the final product, it won't be tasty, don't be afraid to add 1/2-1 tsp. of salt. Also at least 1/4-1/2 tsp. of pepper. We also put the parmesan shaker on the table for extra saltiness and flavor, but I didn't add that, only my husband, he liked it, but said he didn't want to eat it too often, just a nice change. I will keep it in my recipe box.

The biggest plus for this recipe is flavor - pastalicious! Of course it probably didn't taste exactly like Rachael's because I adlibbed - I used what I had in the house; leftover steamed cauliflower, regular small macaroni, plain white onion, and pre-packaged grated cheese. I also cut down on the rosemary. It's so pungent I was afraid it would overpower the whole dish. I used almost 2 stalks vs the 4. It was so easy and got rid of the plain, steamed cauliflower hanging out in my fridge. I'm a vegetarian so this would be a meal in itself for me. Tonight it will serve as a side for the meateaters in my family. ***** - A+

I had an Italian roommate once who made a traditional version of this pasta, but with one unique difference: anchovies. I know, I know, but if you add some chopped anchovies to the sauce about two minutes before adding the pasta it gives an earthy, salty flavor that takes this dish from bland to wonderful. I would add the rosemary toward the end, as it burned while the sauce cooked. Also added some crushed red pepper flakes and garlic....manga!

This was so great even my husband & grandkids (that don't like cauliflower) loved it!! The first time I cooked it there were little chunks of cauliflower in the pasta. But the 2nd time, before adding the liquid from the pasta I put the cooked cauliflower in a bowl and used my mixer to get the lumps out. This made it much more creamy! I would highly recommended this dish to anyone that likes a cream sauce on their pasta!

I made thi because I had cauliflower in the fridge and needed to use it. I thought I was great and so did my husband - we both had two helpings. I read through the reviews after I made it and I didn't have many of the problems others did. I don't really "measure" ingredents just go by what I think looks right, which is perhaps why my sauce wasn't runny or too cheesy or too oniony. I also added some sliced turkey sausage. We made the kale to go with and that was a hit also.

I love Rachael's recipes and have made many of them.... all of them great but this one, again, only my opinion, was awful. I always cook with whole wheat pasta so I know it wasn't the pasta. I also like cauliflower so that wasn't the problem either. I think it was just the combination... it was dry, even though there was enough chicken broth, and pasty tasting. Maybe it was the combo of the cheese and cauliflower. Anyway, I won't be making this again.

First, I used regular penne as it was what I had on hand. Second, my husband raved about it. I, on the other hand, found the onions to be too overpowering in the pasta itself and I wasn't over the moon about the consistency, the two ladlefulls of pasta water made the sauce rather mushy and watery and the cheese didn't blend very well. The sauce was rather clumpy, HOWEVER I am a novice, it could have been my error.

Good Flavors, but Needs Adapting for High Altitudes
01/25/2007 at 02:06pm
User: Anonymous    User Rating:
This is a decent recipe--fairly easy to make and not your usual pasta dish, and it's really good for vegetarians. One problem I had, though, is living in a high altitude city like Denver, I need more liquid and (often) a longer cooking time for a recipe to come out. The result being that my cauliflower was conversely not soft enough, because it needed to be cooked longer, and burned because there wasn't enough liquid in the recipe. It would be nice if Food Netwood included high altitude adaptations in their recipes, but I suppose that's too much to hope for.

The sauce was good and we'll try a variation for cauliflower as a side dish. Paired with the pasta was less than we expected.

This dish was a lot tastier than I could have anticpated. My family, with the exception of my seven year-old, was impressed with the flavor, and the fact that it was healthy. The rosemary really enhanced the whole-wheat pasta.

Good flavor, but the sauce is a little too chunky. Next time I will try using an immersion blender before adding the pasta and cheese. Also, 2 sprigs of rosemary is plenty. 4 is overpowering.

I liked this one. I would probably put the cauliflower mixture in the blender next time so that the consistency will let the sauce stick to the pasta better. I also added a dash or two of paprika. Yummy comfort food.

When I saw Rachel prepare the Italian califlower & pasta dish on 1/15/07, I just had to give it a try. Bought all the ingredients and made it the next night. It was great and really only took 30 minutes to prepare! Loved the flavors of the fresh rosemary, which was still growing thanks to my busband's efforts. Oh, he told me he still isn't crazy about whole wheat pasta (as he dished out a second dish). I thought it was the best whole wheat pasta dish I've ever had.

Pleasantly Surprised!

I will never make this again. I think the rosemary did not go well with it although it did need something to spice it up. I added a bunch of red pepper which helped a little. THe pasta water addition made it more tasteless and soggy. I would rather have had pasta with garlic and oil and a side of steamed califlower with salt & pepper.

Great Use of Cauliflower

User: Anonymous    User Rating:
Cauliflower is such a healthy vegetable so I look for ways to enjoy it. This is the best use of cauliflower my palate has ever experienced. I tried to prep it by memory from the show and ended up deglazing the pan with a touch of white wine before adding the stock. It looks like the previous reviews reflect America's opinion of cauliflower and whole-wheat pasta in general. My opinion...Yummo!

Prepared this recipe exactly as written. It tasted alright, but "needed" something. I combined the pasta and sauce (something I usually never do) the favor the next day was much better. I added some sliced baked chicken breasts and parmesan cheese- made it delicious!

This is a "Have Again"
01/15/2007 at 11:44am
User: Marie from wilton, CT    User Rating:
When my husband really enjoys a disk, he calls it a "Have Again" - this dish received the "Have again" distinction! My 17 yr old son (who doesn't like most veges) equally enjoyed it. I did add cooked chicken at the end, and I used a little less oil and cheese to cut some of the fat. Also, I used Barilla Plus penne - if you've never tried it, you need to - I don't like the taste of whole wheat pasta (I think it tastes like cardboard!) but the Barilla Plus is a great alternative, providing extra fiber, vitamins and great taste! Great receipe!

Loved Recipe with Variations

User: Joan from Orange, CA    User Rating:
My family, including my 11 year old daughter, a notoriously picky eater who hates vegetables, all loved this recipe. However, I omitted the rosemary during cooking and added the pasta water with the chicken stock and cauliflower so the cauliflower would be softer. I also substituted mozarella cheese for the Romano, to lower the fat content. My husband and I added chopped fresh rosemary on the side. Will definitely cook this again, with my own variations.

I thought this receipe would taste "healthy" but bland. Actually it was incredibly flavorful. My boyfriend who is incredibly suspicious of healthy foods said he really enjoyed it. We were really full after having a normal sized portion. I would definitely make this again. Btw I didn't feel that the extra two scoops of pasta water were necessary. I wound up draining some of the excess chicken stock from the sauce.

The recipe sounded good - but it came out looking and tasting so bland. I ended spicing the left-overs up with chili flakes and gorgonzola cheese. I know the cheese diminishes the health benefits, but it made it much more interesting. I will say the recipe was very easy and it might be a good base for trying it sometime with various additional ingredients.

As much as I love Rachel Ray's dishes, this one was not a hit for me. I actually could not eat it. Cauliflower chunks not sauce

User: Heather from Bristol, CT    User Rating:
First let me say I'm an avid cook and I make many meals I watch on food network. This recipe was just ok. I needed to add more broth and pasta water then the orginal recipe first suggested. Once the "sauce" is added to the pasta and cheese it clumps up. My family would have enjoyed more of a sauce to cover the pasta. I was orginaly interested in using cauliflower as a sause especially getting an extra serving of veggies into my families diet. This is one recipe I won't be making again.

Cook the onions, then set aside and keep warm, then add at the end. There's a reaction with the cauliflower that turns them green (or perhaps it's the fresh rosemary that does this). Makes the dish look less appetizing. Decent flavor, but not something everyone raved about.

It sure didn't taste like a healthy dish so I'll be sure to make it often. I knew my husband would need some meat with his meal so I made the turkey meatballs from Ellie Krieger's show and it was a great match. Thanks, Rachel, for all the great recipes you give us!!
