This dish has quickly become my favorite asparagus dish! It's so simple and easy to make. The vinaigrette sauce is delicious. If you can't find Vin Santo, just use regular white wine it tastes just as good!

I used this recipe for Easter. I could not find vin santo, so I used the Madeira. Perhaps that made a difference. The vinaigrette was bland and had way too much oil. I don't think it was worth the time and money. There are other simple sauces for asparagus that are better. My family did like the presentation with eggs, almonds and lettuce, though.

A great balance of flavors. Thanks for the tip about Madeira. Note to anonymous: there IS NO bacon in this recipe. I really don't think it's fair to rate the recipe one way or the other if you take significant liberties with it.

I liked the combination of flavors very much; it is a nice change of pace to our usual oil&vinegar salad dressing. Robert, Marie is right; vin santo can be found all over not only Italy, but Greece also. If you really are as well-travelled as you say, you would've heard of it before. And, like with many wines and spirits, there are different grades and therefore a wide range of prices. You don't need to get the most expensive bottle of it around. If your local liquor/wine store only has the expensive stuff, use madeira instead and look for good, inexpensive vin santo online.

Very light. Great for summer lunch. The combination of sweet wine and tangy mustard is out of this world. The crunch of the almonds and bacon paired with the lettuce and eggs is unexpectedly divine.

Very nice recipe...simple and good. To Robert: I am surprised you have never heard of Vin Santo. Vin Santo is the wine that is traditionally served with Biscotti and is not difficult to find in the States.

Easy, fun and beautiful to look at. Since I did not have Vin Santo, I did a google search and learned that Madeira may be substituted. The dressing has wonderful flavor. Thanks for introducing me to a new wine, which I will look for as soon as my Madeira is used up.

I'm 75 years old, have travelled and eaten extensively, and had never heard of vino santo. I was appalled at the prices for this "precious" wine, and find it hard to believe that you would use it instead of suggesting a substitute, for this dish. I ordinarily find your recipes to be interesting, and frequently good. Keep up the good work. RHT
