Wowza these are the best! I spent a couple hours on Sunday afternoon to mix up these and it is so worth it. I now have about a 1000 of these tortellini in the freezer and we pop them in for a quick dinner pretty often. I even fully impressed the in-laws with little pockets of heaven. Soooooooo good!

I made this for Thanksgiving and got rave reviews. It was delicious, creamy and elegant. They turn out best if you make them early and freeze them before cooking. Even frozen, they only take about 3 minutes to cook and the sauce comes together equally quickly. A crowd pleaser!

not only were these beautiful, but they were absolutely delicious! We made three times the recipe (for 20 people as a Thanksgiving first course) and ended up with 200+, so the recipe certainly makes more than stated. Although there's a lot of work upfront, it's fun to do with a helper or two....and once frozen, it is SO easy on the day you are serving. A FABULOUS LOOKING, GREAT TASTING crowd pleaser! I have never served something so beautiful.

this is a time consuming recipe but is well worth the effort. the tortellini melt in you mouth and the flavor is perfect. the brown butter sauce is sinful.. but what the heck, it sure is scrumptious!

This recipe is great. It even leaves room for the imagination. My lame grocery store didn't have some of the ingredients so I ad-libbed. You can also adjust for more or less, if the need arises. The most tedious part is forming all the tortellini. They freeze great!

I didn't understand some of the negative reviews, especially about it being "bland". It could be that butternut squash can vary in it's flavor, some sweeter and creamier than others, depending on the season and how fresh it is. We made it with Delicata squash, , I added about 1-1/2 T half-n-half to the mixture, and a tiny bit of agave syrup. For the sage we used dried rubbed sage -about 1 T -instead of fresh, and we toasted the walnuts in a little bit of walnut oil. It was one of the most mouthwatering dishes we've ever made, and we do cook quite a bit. We HIGHLY recommend this dish - even if we changed it a little just to accomodate our tastes, I'm sure it would be delicious as Giada wrote it as long as your ingredients are high quality.

I have made these 3 times and now make larger raviolis by placing one wonton wrapper over another and securing all sides, it was less tedious for me. I brought these as an appetizer to a party over the weekend and everyone raved and raved. I have never used the amaretti cookies but do add 2 T pure maple syrup for sweetness to the squash/ricotta cheese mixture. I have also found that freezing these first works so much better for me (they are less likely to split apart at the seams when you boil them). Fabulous recipe!

Really good! The only thing I would say is the tortellinis were overstuffed. I would put in maybe 2/3T instead of a whole one. Also, a bit too much butter for my taste but otherwise, it was quite good.

My husband and I were excited to try this recipe and possibly have it as a side dish for Thanksgiving dinner. I'm glad we tried it first. It was quite bland. We were very disappointed in this recipe.

This is something different. I added and took away from it based on my tastes and my sister's taste. And I made it more ravioli style rather than tortellini. Also, I mde some boiled and the others I fried. My sister and I decided the fried version was much better and used the butter cause moreso as a dipping sauce. I may not make this own again, but may use the techniques for other ravioli meals.

This was absolutly fantastic! So many flavors, and they work wonderfully together! I made this with the butternut squash, but it is a winter squash and I couldn't find it last time I went out shopping; so I thought to try this with an acorn squash instead. This variation was still wonderful, however, the butternut squash's flavor doesn't compair to the acorn squash...

This dish was time consuming but well worth it!!! Fresh tortellini is amazing! The simple butter sauce really compliments the taste of the butter-nut squash! Might as well triple the portions while your at it so you can freeze some for a meal "down the road". For my first time ever making tortellini it was rewarding and delicious!

This was fabulous. Well worth the time involved in preparing the dish. Like other reviewers, I served this as a second course for a large dinner party (rather than for a main-dish) and it was a huge hit. I love the fact you can freeze the extra. The recipe comes together in a flash when you have prepared them in advance. I had no probelem at all with them coming apart, although I did use less than the 1 T filling called for per tortellini. In short... excellent for company. THANK YOU GIADA!

I tried this when I had a few friends over. Could NOT find amaretti cookies so I just used almond biscotti. It wasnt as easy as it looked to make. The result was just OK. My husband liked it more than I did but it is definitley NOT a main course. I would make this as an appetizer if I ever make it again.

The flavors in this recipe are wonderful and the presentation with the butter sauce is very nice--but I wanted to tear my hair out by the time I finally finished making the tortellini. Thank goodness I had planned to make them the night before and freeze all the extras because I wouldn't have had the patience to finish everything the same night. Wonton wraps (at least the ones I found) are not perfect squares and do not make perfect triangles and I felt like I never quite got the ratio of stuffing right. Of course that meant that when I boiled the tortellini some of them didn't hold together. The ones that did were delicious, as was the butter sauce, but I'm thankful that there were so many extras so I don't feel compelled to start from scratch again for a while! I only followed the recipe online and didn't get a chance to see Giada make this on TV, so maybe my difficulties are due to that.

My husband was blown away when I told him I made these tasty little morsels from scratch. They are incredibly delicious and easy to make. I froze half the batch, and when I boiled them for a second meal, they were just as good. Can't wait to try some other fillings!

I've made these probably 5-6 times. Turned out GREAT everytime! Everyone loves them and they seem impressive, but are fairly simple. Great to make beforehand and freeze, actually easier to deal with frozen - they don't fall apart and do cook very quickly.

This recipe was fantastic!! I was so excited to try it after seeing it on the show. The flavors were amazing, the presentation was beautiful and it was a unique dish in my family. It made quite a bit more for me than just 36 so I froze the rest. The preparation time took quite a while so make sure to prepare ahead of time. It is also quite filling so a little will fill you up fast. What a great meal!!

I made the tortellini this afternoon so I could freeze it for a party. I used frozen, cubed butternut squash and sauteed it in a pan with the olive oil, herbs de Provence, salt and pepper. I then followed the recipe. They came out fabulously! This recipe made 48, with a little filling left over. I highly recommend it!

I saw the show and just had to try this. I like the idea of making the tortelli and freezing them seeing I wanted a meatless meal for Friday...however, I couldn't wait and after a few were frozen firm enough, I just had to try a few...absolutely heavenly! BUT the real test is when I bring them to work tomorrow. No matter what the reaction from my co-workers, I give it *5 STARS*

This recipe took a bit more work than the recipes I usually choose, but the results were delicious! I don't know if Giada had larger wonton wrappers, but I needed one and a half packages and ended up with about 80 tortellini, not the 36 she mentions in the recipe. I used the amounts of filling ingredients that she stated (although I went by the weight of the squash, I didn't notice how many cups it was.) I cooked enough for 2 people the evening I made these, and froze the rest. The ones I cooked without freezing tasted great, but fell apart a bit while cooking; when I cooked some of the frozen ones last night, they came out perfect.

This definitely has a very elegant presentation with the cranberries giving it a pop of color. I went with a healthier version and used only 2TB of butter and just added some extra virgin olive oil instead. Having just a little butter/oil helped to prevent the wrappers from sticking to each other. Also, in place of sage I used chopped parsley since I always have that on hand. The only reason I didn't rate it 5 stars is because I'm not a huge fan of butternut squash, but I would definitely make it again which says a lot about this recipe.

The combination of flavors is just perfect! Very mild filling with very flavorful butter-sauce. I almost skipped the sage but I'm so glad I didn't. That fresh sage was perfect with this dish! It tasted like heaven and looked very elegant. It doesn't really take that long either. I prepared them in the morning and put them in the freezer. In the evening just made the sauce (really simple) and voila! The only thing I'll change next time is the amount of butter. 1 and 1/2 stick of butter is way too much. Half of that will do. I gave it 5 stars for oryginality, taste, presentation (and it's not expensive to make either) Thanks Giada, you're the best!

This recipe is sooo yummy! It was semi-hard to make because it took a little while to get the nack of folding the tortellini's and the squash took quite a bit longer to cook than the recipe says, but the end result was very much worth it!

I may have hurt having my husband take me out to dinner by serving him these-but the way he went on about the different tastes and how delicious it was may have been worth it. I really enjoyed making these. I had to use eggroll wrappers,cut them into quarters and it worked fine. It made about double what it said so I froze them and can't wait to eat them again. The flavors were so gourmet, I was really proud of myself. My dad is saying he wants me to make them for him. I bought the butternut squash already cut up-made that part particullarly easy. The butter sage makes this recipe. My husband had just told me about a lunch he ate with cranberries and walnuts and I had them and was thrilled to use them in this. What awesome flavors. BIG HIT!!!

I love the flavor of the tortellini but find the butter sauce too rich (and I like rich food). Does anyone have a suggestion on how to lessen the richness other than just using light butter?

I rarely make a recipe without altering substantially-but this one was incredible just as is! The only tiny thing I did different was to add more cookies after processing to add crunch. My squash was only a little larger than called for, but I found the recipe made many more tortellinis than it said - which is a good thing cause they freeze and I can't wait to have them again. My stepsons who love my food both agreed this is a keeper!

I took the time and made this ercipe and it's so good. Not only did we have enough for 2 of us but for more nights ahead. I made a total of 50 tortellinis! I have to say though I did no like the butter sauce but that's ok I tweaked it a little. it's so good, a big hit!!!

I made the Butternut Squash Tortellini filling, but but it into homemade ravioli. The filling was fabulous, will make it again. However, the butter sauce made the whole dish very rich, could eat just a little. It tasted very good, though.

I was watching Giana's show with one eye and on the internet with the other. With the eye that was on the show I committed the sauce recipe to memory, not brain surgery. When I found out my I was having a quicky mid-week dinner gathering of my kids, I went to my local market, bought the few necessary ingredients I didn't have on handand whipped it up in a flash. All guests for this quicky last minute dinner gathering, including me (my biggest critic) say this is the best sauce ever! Five Stars: Gourmet flavors, quick, inexpensive, show stopper.

We attempted this recipe after seeing it on the show and it was fantastic. We had a hard time cutting the butternut squash so we had to alter the instructions a little...by baking the squash in halves, then cubing it later once it had softened. The recipe wasn't hard to follow, though it did take awhile to prep the recipe. I would suggest doubling the recipe and freezing the leftover tortellini for later use. Anyway, it turned out amazing and was a hit at the house. I might cut back on the butter next time, just to reduce the fat content, but other than that it was great!

Karen, peel squash, cut the neck off and cut into pieces. Half the bottom,scoop seeds out and cut up into pieces. We all had to start cooking from scratch. Hope this helps. Disregard my review since I have not made yet. Probably will though. It sounds delicious.

I was not able to see the show where she cooks it - do you take out seeds and meat from rind or do you cut up rind also. I just bought squash puree and it was good but I'd like to try it the right way and am a new cook.

I served this tortellini (i prepared them as ravioli instead) for a picky group of friends and they were a huge hit. In fact, I had to go back to the freezer and pull out additional ravioli... The filling is so smooth and exemplifies comfort food, I was very pleased.

This dish is divine! The sauce is rich but the combination of walnuts, cranberries and browned butter is unbelievable. Works perfectly with the butternut squash filling. I made my pasta but will try the wontons next time to cut the prep time a bit. However, overall this dish is very easy but worthy of a gourmet rating.

I used 8 almonds instead of amaretti. It was still fabulous. I'm not fond of fruit in entrees, so was leary of the cranberries, but it was amazing! I also used half light butter instead of regular to save calories. This was worth every second it took to prepare, and it's much easier than I thought it would be.
