Instead of the chicken broth I used chicken bouillon cubes, specifically Maggi. Did not have chopped tomatoes so I used tomato paste to thicken the consistency. It came out pretty good. But I made this soup because a friend recommended it, and it's fantastic. Grains of Paradise aren't available where I am, so I used freshly ground rainbow peppercorns instead. I did blend it, but still left a little texture behind. A sprinkle of romano cheese later and it's a tasty lunch. Made another pot today and added barley to up the ante and a few cans of spicy v8 to thin it out. Very happy with both results. Incidentally I like to use spicy v8 in place of water for many rice or barley/lentil recipes. Between this guy's brownies and his soup I've been one happy camper this weekend. Thanks AB! I am a long time vegetarian and have always experimented with vegetarian Lentil soup. It is hard to get a deep flavor without the ham bone in lentil but this recipe does it. This recipe is great right off of the card but many quick modifications are possible. I threw in a couple diced jalepenos which gave it a bit of flair. Another time, I added fresh corn in the last 10 minutes of cooking and which added some additional body. A dopple of yogurt, fresh chopped green onions, asiago cheese, or even cottage cheese on top of a bowl adds even more flair. I stayed very close to the recipe. I didn't have corriander or the pepper. First the house smelled great. The soup was so delicious my husband and I couldn't stop eating it. Also, I ended up adding double the broth (it was very thick!) and a bit less than 1 lb of lentils. The flavor was really wonderful- though as I said, it was so thick. The consistency reminded me of something that you might find at an Ethiopian restaurant. I will hang onto this one! I also did not have vegetable stock either and used beef stock. When this soup was finished cooking I tasted it and expected it to be very flavorful, but to my surprise, I thought it was actually kind of bland. I added a little less than a 1/2 tsp. more of each spice and also a little Adobe seasoning and let is simmer another 30 minutes. I do not own an immersion blender and did not want to deal with transferring the soup to a blender so I left it unblended. It tasted pretty good after I added the extra seasoning. The best soup recipe I have had so far on this site. Try it with a dollop of Greek yogurt and crumbled crackers. My only objection is that I noticed that it started to thicken to a dal-like consistency halfway into the simmering, so I added quite a bit more chicken broth. Also, I couldn't find Grains of Paradise but the description made it sound like pepper so I added some black pepper. This tastes great, is so good for you, and is SO easy to make! I wasn't able to get a hold of any grains of paradise here (I'll have to order it online), so I used freshly cracked white and black peppercorns. The results were still delicious. Much easier than it looks on paper, and everyone loved it. It was so easy I had time to make a coulis of cilantro, lime juice, minced garlic, sea salt and olive oil, and I served the soup with a dollop of this coulis plus a dollop of sour cream to give it a little bit more color and zing. It was my first time making lentil soup. I used cayenne instead of grains of paradise, and added turkey polska kielbasa to make it a meal. I also didn't add the kosher salt. Will make again and again--will use low sodium broth next time to lower the sodium count. Excellent! The first time I made it, I didn't put in enough broth, so the taste was fine but the consistency more like refried beans. That just enabled me to enjoy it in tortillas instead of with a spoon. For those who don't know what or where to find Grains of Paradise here is some info: Grains of Paradise aka Melegueta Pepper aka Guinea pepper, is a rare spice indigenous to the coastal regions of West Africa, from Sierra Leone to Angola. The Melegueta plant, however, is not related to the pepper vine but is a member of the ginger family. The sphere-like seeds of Grains of Paradise look very much like cardamom seeds. (Cardamom is also a member of the ginger family.) Grains of Paradise has a pungent flavor with a peppery bite and hints of cardamom and camphor. Use it wherever an exotic pepper seasoning is needed, especially in the cuisine of North Africa, including Moroccan and Tunisian dishes. You can find it in an international market in your area or you can buy it online at a number of sites. I've used igourmet.com. Warning:this is cheap=I've paid anywhere from $4.00 up to $8 an ounce for this stuff. It does make a tasty addition and adds authenticity to your cuisine. Hope this helps some. I probably would not make it for compnay. I have no idea what grains of paradise are, so I added cayenne pepper for some extra kick. I also cooked some spicy keilbasa and threw it in after I'd blended it. It tastes great, but looks gross.
