We both ate it with a great deal of satisfaction knowing that it was hearty as well as healthy. I have a bad back and sometimes just don't feel like standing in the kitchen to fix dinner for the family. This will become one of my go-toes on those nights. I also have my own herb garden so adding some fresh basil with a fine chiffionade really brightens up the canned flavors and makes it feel and taste as if it's been "stewing" all day long. This one however is right on target for a flavorful and healthy meal. It was extremly easy to make, and tastes great. I like that there is no starch in it, but it would be so easy to add some pasta or even rice. I found that I needed to add an additional can of chicken stock and tomatoes as I like more liquid in my soups. I also took half of what I made and used a stick blender to smooth out the tomato chunks. I enjoyed the different textures. My husband isn't such a fan (he says it tastes good, but the canned tomatoes give him heart burn), but that just means more for me. I substitute plain tomatoes and then add chopped garlic (when I cook the carrots & onions) and then the other herbs when I add the liquid ingredients. I also like to add some pasta (cook it al dente first) about 5 minutes before the end of the cooking time. I've always got some of this in the freezer for a quick lunch because it re-heats so well. I reccomend this to everyone for a good satisfying, ecomonical and fast evening meal, served with garlic toast and I cook bow tie pasta seperatly and add a small amount about two tablespoons in the bottom of the bowl with just about a teaspoon of butter and then ladle the soup on top. I did change it up just a little, as my husband thinks soup has to have a lot of different ingredients before he would like it. So, I added one can of flat Italian green beans, drained and one can of cannellini beans, drained. I also minced up one clove of garlic and added it with the onions & carrots. At the last before serving it, I added about 2 cups of cooked rotini noodles to the pot. Grated parmesan cheese over the top when served into the bowls. So yummy !!! I can't believe how much flavor this soup has. It will be a regular item on our menu, we all loved it very much. Looking at the ingredients I didn't think this would be that great. I thought it would be rather bland and probably need some extra seasonings. I could not have been more wrong. It was perfect just the way it is! The only thing I did use that was different from the recipe is that I used boneless skinless chicken thighs because we like dark meat more than white. I think it just has way more flavor than breast meat which gets dry and rubbery if it is overcooked. The only thing I'll do differently next time is to add more hot sauce as I was a little conservative this first time. I guess you could add it to your bowls individually depending on personal taste.
