beautiful, healthy, easy, BUT bland! 07/08/2008 at 01:44pm User: patrick from new york, NY User Rating: i really wanted to like this recipe. i like ellie a lot, but this is the second recipe of her's that i've made that is very under-seasoned. i actually did double the oregano and added a tsp of red chili flakes, but it didn't matter...the filling was quite flavorless. i hate adding salt to a served plate, but that's what i had to do (as well as some hot sauce). w/the doctoring-up it was good, not great. next time i will have to rework the seasoning formula and maybe add some other spices! These also freeze well, so they work well if you're cooking for 1 or 2. Take the time to make the full recipe and then wrap each pepper separately in aluminum foil and stick into freezer bags. You can pull out one or two later to thaw and bake when you're looking for a good last-minute meal. I think this dish was great but I wonder if I would have thought the same without the tips from the reviews. I suggest blanching the peppers as suggested, I also added 4 cloves for minced garlic, doubled the oregano and tweaked the sauce by adding 2 Tbsp of Balsamic Vinegar, 2 Tbsp of tomato pasted and running a stick blender to smooth everything out. With those small additions, I will make this recipe at least once a month. If you get creative, then there is a chance. This dish requires salt, garlic, and spices. I would also remove the cucumber. The cucumber gives a wierd flavor. After reading the reviews, I decided to add onion and garlice powder, and I used ground white meat turkey. I also used 2 egg whites (1 child allergic to yolks). First off, I used venison which is equally as lean as the beef recommended but much more flavorful. Next, I doubled the oregano to 1 tsp and added an equal amount of basil (a typical Greek/Mediterranean spice). I also added 1/4-1/2 tsp of crushed red pepper flakes and half of a 15 oz can of tomato sauce. I also was a bit more liberal with the feta. Finally, when I removed the foil, I increased the temp to 375 and baked another 30 (vs. 25) minutes. It was excellent but can't comapare it to the original as I've not made it that way. I had no problem with the filling being moist. I used "lean" ground beef instead of "extra lean. From previous experiences with stuffed peppers I learned to blance them first just for a minute or two in boiling salted water. It makes the peppers nice and tender but still a little crunchy. I did add an 8oz can of tomato sauce to the filling and cooked it an additional 5 minutes as was suggested by several reviews. My filling stayed moist and tender. However, the feta dried out quite a bit and became crunchy/chewy (not good). It may have been because I used fat-free feta, but I would recommend not adding the feta until the last 10 minutes of cooking (just to warm it up). I also had enoough filling for four peppers (8 halves), so I wrapped two raw ones up and froze them for later. All-in-all, it was a pretty good recipe. I just might make it again. I have to admit that I've never been a big fan of traditional Stuffed Peppers due to the fact that they're usually dry and overly dense. I followed the recipe with two minor changes: addition of 2/3 of a small can of tomato paste added to the meat mixture (based on other reviews read) and probably added a tad more zuchini (just used up the two smaller zuchs I had on hand as I grated ultimately 3 cups of grated veggie). The result was light, flavorful, and delicious. One serving was incredibly filling and satisfying. My only change would be to double the amount of tomato used to make the pan sauce. I served these with mashed potatoes and didn't have enough of the great tasting sauce to cover the entire plate. If you're on the fence, give this one a try. I can't wait to make this for one of my regular dinner groups of "healthy eaters". They're gonna go nuts for this one. I added garlic and soaked the bulgur in chicken stock for 1/2 hour. I used reduced-fat feta and canned diced tomatoes, seasoned with onion & garlic. I drained the tomatoes before adding to the top. They were good, but I still feel like they needed a little more seasoning. Next time, I'll add some of the feta to the meat mixture anad try more seasoning. Also, for those of you whose peppers aren't getting soft, try baking at 400 degrees for less time. Now I have, and it's much better with the bulgur. We found the original recipe a little bland. Now I add some hot pepper flakes and probably a tablespoon and a half of oregano, not the 1\2tsp called for. Also salt, pepper and we switched from the low-sodium tomatoes to regular. I blanched the peppers, soaked the bulghur in chicken stock and subbed ground turkey for the ground beef. I let it cook for an hour and 30 minutes in an 11-inch oven safe frying pan...the consistency was great, moist, but still held together. Next time, I think I'd use half the amount of spinach and add some fresh parsley, and perhaps some roasted veggies. There will be a next time... I imagine the bulgar is the dryness culprit because it absorbs so much moisture - I found the filling can stand about 1/4C of liquid. (You can also presoak bulgar wheat for an hour or so before adding it, but adjust liquids in the filling accordingly.) From there it's like a "choose your own adventure" book; you can add Mexican, Italian, even Indian spices and ingredients and it will turn out really well. I added the zest and juice of one lemon, a finely chopped handful of fresh cilantro, 3 cloves of roasted garlic, and some of the chopped tomatoes. The filling should look really juicy. It also took about an hour and a half in the oven. It turned out beautifully - my husband raved about it! It's a great weekly recipe that can be a little different every time. I added some of the tomato to the meat mixture as well as some garlic powder and a bit of additional feta cheese for extra flavor. Baked as directed but left the dish covered for half of the baking time. Wonderful results. Hubby who I thought would perhaps just quietly eat without comment raved and asked if this mixture could be made into a hamburger as well. Thinking about it, he may be on to something. Form patties and include chopped roasted red peppers in the mix perhaps and grill? I will be trying this also as well for another tasty, low calorie meal. I did substitute a can of fire roasted tomato's for one can of the stewed as called for. I do think the only change I would do is put the feta cheese into the meat mixture. I just felt the meat portion was a little dry and think putting the cheese there vs on top might help. Otherwise a winner in our house! They were really good, but the stewed tomatoes should go on top AND inside the filling i think. The filling was a little bit bland and more stewed tomatoes was the perfect fix. I used mozzarella instead of feta and used brown rice instead of bulgur. The meat was a little dry inside my peppers, but it's probably because my grater is horrible and I had to chop up little pieces of zucchini. I think it's a great meal to have for leftovers, and I'm excited to make these again! It makes for a nice hearty, winter dish. I cooked it 30 min covered and 45, uncovered, as the receipe said. the peppers were still sort of crisp. What I did not like was how bland the stuffing tasted. It could at least use more salt. We ate it with salsa, and that helped alot. |
