And I loved the low fat baking technique. I did alter the recipe a bit - wild mix mushrooms, only 2 egg yolks and substituted monterey jack cheese. Served with refried beans and roasted tomatillo & chipotle sauce. (no cream). Prep time of 15 minutes is a bit understated, however it is a dish to impress and enjoy. I will serve it often. I used chicken broth to cook the quinoa in and added a bit more thyme. |
