I'll make it again with a couple of revisions - make a bit less icing (tasty good stuff but way too much for just the top and filling) , use a bit more pinapple and walnuts in the cake, decorate with walnuts on top along with the pinapple, let the icing cool a bit more time in the refrigerator (it was a hot summer day when I made the cake and 20 min. was not nearly enough) and bake 5 minites less for moister cake(I use thick commerical grade bake ware which will bake a bit faster). The ingredient list says 2 1/4 cups, however, 1/2 cup is used to coat walnuts, etc. then another 1 1/2 cups flour to be wisked. There is 1/4 extra cup. In addition to the lemon zest, I squeezed the juice from half the lemon. Next time I will use less sugar in the icing, as it turned out way too sweet. However, I made it at the "last minute" and it probably did not cool long enough. After putting all that icing on it, it collapsed! Lesson: let cool thoroughly. I also felt that half the amount of icing would be plenty, since none is used on the sides. Our family loved it and heard nothing but great reviews. I only had 4 of the 8oz of baby food carrots, so I used 4oz of mango baby food as well. I also decided not to put the pineapple in between the 2 layers and used walnuts on top of the cake. I highly recommend this! Enjoy! The frosting was amazing and the cake was very moist and delicious. I highly recommend this cake. Your guests will be impressed. I used 8inch round cakes. That worked out just fine. However, the texture of the carrot cake was a little dry (I don't know if that was something I did, or the recipe itself). Also, I felt like I could taste the baby-food carrot puree' and that wasn't so good either. I probably won't make this again.
