These "cupcakes," however, were TERRIBLE! They were incredibly dry inspite of the fact that I tried a second batch with cake flour and oil instead of all-purpose flour and butter. The consistency and texture was not cake-like at all, but more along the lines of a dinner biscuit. The only good part of the cupcake was the strawberry....which doesn't require a recipe. The frosting definitely didn't play the role of "the icing on the cake" but seemed to play the role of savior in an attempt to save these "cupcakes." Keep enough extra strawberries and hand though the decorate the top as you get a bit of hallow/deflated where the strawberry baked. Recipe is definitely a keeper and one I've already passed on to many friends. I cheated becaused I had white cake mix on hand and used that because I had so many other things cooking that I didn't want to mess it up. There were no strawberries in the market so I used a box of fresh raspberries and a box of fresh blackberries. I sprinkled some powdered sugar on them and stuffed each cupcake with one of each. The icing was fantastic, but I should have made more. I topped each cupcake with a berry. the guests loved it. I will definitly make this again. I had to make a couple changes to the icing recipe, however. I added more lime juice than recommended and a smidgen of water -- This made the icing more "spreadable" over the top of the cupcake, and still set perfectly. These cupcakes are the perfect grown up treat! (I also made a variation on this recipe, as well... I made chocolate cupcakes with chocolate icing with raspberries inside, and those went over very well, too!!) We changed the recipe around a bit ...by adding the strawberry before we baked it. We baked each cupcake for 30 mins with a strawberry stuck inside and they came out tasting amazing. They were warm and soft and baked to perfection. The icing is also a lot better with the Fresh squeezed lime juice as opposed to bottled! However, the cupcakes were big enough for two people to split!
