strawberry-lime stuffed biscuit?

I have used several recipes from the foodnetwork website and have never had any problems, and I have also baked several cakes and cupcakes that received high praise. These "cupcakes," however, were TERRIBLE! They were incredibly dry inspite of the fact that I tried a second batch with cake flour and oil instead of all-purpose flour and butter. The consistency and texture was not cake-like at all, but more along the lines of a dinner biscuit. The only good part of the cupcake was the strawberry....which doesn't require a recipe. The frosting definitely didn't play the role of "the icing on the cake" but seemed to play the role of savior in an attempt to save these "cupcakes." Disappointing especially considering such rave reviews.

These cup cakes are awesome. The batter itself is on the heavier side so be sure to beat it throughouly to get air into it. they are a great summer treat and I usually slice the srawberries and put several slices in one cup!

outstanding

I took another readers suggestion and baked the batter with the strawberry and it turned out delicious! Keep enough extra strawberries and hand though the decorate the top as you get a bit of hallow/deflated where the strawberry baked. Recipe is definitely a keeper and one I've already passed on to many friends.

Good frosting, dry cupcake

I thought the frosting was delicious and fresh but the cupcake was a little dry and not impressive. The flavor of the lime and strawberries didn't blow me away either.

Cutting a hole for the strawberries and getting the tops to fit is a bit difficult at first but well worth it! The icing is wonderful!

I made these yesterday for my birthday party because I wanted a very grown up cupcake. I cheated becaused I had white cake mix on hand and used that because I had so many other things cooking that I didn't want to mess it up. There were no strawberries in the market so I used a box of fresh raspberries and a box of fresh blackberries. I sprinkled some powdered sugar on them and stuffed each cupcake with one of each. The icing was fantastic, but I should have made more. I topped each cupcake with a berry. the guests loved it. I will definitly make this again.

These cupcakes come out soft, springy, and very tasty! I had to make a couple changes to the icing recipe, however. I added more lime juice than recommended and a smidgen of water -- This made the icing more "spreadable" over the top of the cupcake, and still set perfectly. These cupcakes are the perfect grown up treat! (I also made a variation on this recipe, as well... I made chocolate cupcakes with chocolate icing with raspberries inside, and those went over very well, too!!)

I made these cupcakes when my mom came over and they were awesome. The icing was a bit challenging so i added my own personal touch by grating fresh strawberries in the icing. They tasted absolutely perfect. I brought them to the office and my friends loved them!

This was really good...my only gripe was that the actual cupcake didn't really rise much after baking. Still, the strawberry and lime tasted so good together!

My mother and I made these randomly one night and they were incredible. We changed the recipe around a bit ...by adding the strawberry before we baked it. We baked each cupcake for 30 mins with a strawberry stuck inside and they came out tasting amazing. They were warm and soft and baked to perfection. The icing is also a lot better with the Fresh squeezed lime juice as opposed to bottled!

I made these for a retirement party for a coworker and they were a huge hit! The only complaint was that there were not enough for seconds.

These Strawberry-Lime stuffed cupcakes were adorable and yummy. They came out a little more dense than I thought, but perhaps I over/under mixed the batter. What a great flavor combination! They were a hit at Easter.

My family really enjoyed these. They loved the lime frosting, then the strawberry surprise. I do not bake, but it looked easy and the reviews made it sound easy. I found it to not be that easy and very messy.

I loved these and so did my family! I substituted with all organic ingredients and did not use quite as much sugar for the icing...it was great!

This was a really good cupcake & it looked so cute. The only problem is you must eat them asap. We had one sit for about 2 1/2 days & the strawberry started growing mold fuzz on it. But most likely they wont even last that long.

These cakes came out with a nice delicate crumb. However, the cupcakes were big enough for two people to split! I'd suggest making 12 normal sized cupcakes rather than 6 enormous ones, and not placing extra cake on top of the strawberry afterward--it makes it messy and harder to add icing, unless you're piping it.

fun...fun...fun...

This is a great twist on an old favorite. The lime and strawberry are great for spring and summer. I made normal cupcakes and cut the strawberries accordingly and baked for only 15 min.
