It was alright. My husband gave it a 6 out of 10. Good for variety but not something you would make all the time. I really did like the dressing though.

So good I made it two nights in a row. Didn't have enough parsnips or a pear so the first night I substituted asparagus and an apple. The second night I roasted yellow squash, zucchini, asparagus, beets, parsnips, carrots, orange bell pepper, and let everyone select the veggies they wanted on their salad. Also, I used a mixture of greens both nights. Goat cheese added a nice compliment to the pear. Can't wait for the leftovers at lunch!

This salad was wonderful! It is so simple yet all the flavors taste delicious together. Second time we made it we rushed the parsips - bad idea. Make sure you take the time to fully roast the parsips otherwise you lose what makes this salad special.

I never actually bought parsnips before this. My son encouraged me to try this recipe and we liked it. The grocery store didn't have watercress so I used some mixed green instead. I would used the vinagrette with other salads too.

Wow! I love Parsnips but had never had them roasted before. It looked like an amazing recipe and I had to try it, though I changed a few things to my own tastes. I used greens I had on hand (Romaine) and roasted the parsnips with some garlic and fresh corn kernels which I also added to the salad. The parsnips were so flavorful and the dressing was a great compliment. To turn this salad into a main dish I also added some strips of left over steak and a sprinkle of gorgonzola. This one is a keeper and a great winter Salad.
