Before I made this dish I read the reviews. I made a few changes, worried that the dish would not have enough flavor. I cooked the egglant for much longer than 5 minutes (they were not Japanese eggplants). What resulted is that I had some yummy bits and pieces (flavor!) that I scraped up when taking the eggplant out. I also roasted the tomatoes w/salt, pepper, onion & garlic powder, and oregano before putting it in the pan. I love capers so I added have a jar of those which gave the dish a nice punch. I used blue hake instead of sword fish and used the juice of one lime at the end. The dish would be just as great with no fish/meat at all. Thanks Giada!

Sicilian Swordfish in New Mexico - who would have guessed? I'm a half-Italian, half-Hispanic American whose Italian roots stem from the Trapani and Naples regions. I made this dish as a surprise for my father (from whom I derive my half Italian-ness). His response took me by surprise. He started weeping. He told me the recipe reminded him of being a kid in Newark, NJ - eating Sunday dinner with the rest of his family. Those days - and most of the family members - are long gone. Our meal transformed from just a dinner into my father telling me stories about our family I'd never heard before. And yes, of course, we both thought it was delicious. We both love eggplant, swordfish and, well, every red-blooded Italian loves pasta. This time-tested recipe has been around for as long as it has for a reason. Thank you, Giada. David PS - My younger brother is currently studying in Spain and has introduced your version of Antipasto Salad to his host family and the international group of students at his school. It's a hit.

I'm a big fan of Giada's and was really looking forward to making this dish after seeing it on TV. Unfortunately, it just turned out average. The swordfish was hard to find and expensive and the eggplant didn't add anything special. The overall flavor was nice though; it just wasn't spectacular.

My husband rated this as "Delicious". I don't eat eggplant so I wouldn't even try it. I'm allergic to seafood/fish, so I made it with chicken instead. It was my first time cooking with eggplant (and I'm a VERY experienced cook). My husband asked me to make it again next week - high praise!

Normally I love her recipes, but this one was just okay. I substituted shrimp for swordfish because it was so expensive. The whole dish was pretty bland so I added extra seasonings and some lemon juice which did help. Even so, I don't think I'd make this again.

I grill the swordfish and the eggplant then cube it and toss with the pasta. It's easier and adds some smoky grilled flavors. We all fight over the leftovers because it's better on Day 2 and 3-- not something you can usually say about fish dishes. (Can use regular eggplant if you sweat it first.)

When I went to the store to buy the swordfish they squawked about it ("I'm not eating that!") so I backed off on the amount of swordfish, but I am sad I did because it was so darn good! Even though this recipe feeds a lot more than my family of four can eat we picked all the swordfish out and gobbled it up so the leftovers are sad. I agree with the lemon recommendation - just a light spritz will do but it brightens up the flavor. We also sprinkled freshly grated parmesan on it because we all love it. I put a shaker of red pepper flakes on the table too - Mom likes it spicy!!! Used yellow summer squash and zucchini instead of eggplant - again, personal preference and it adds great color. Also used whole wheat penne - which makes for a heartier noodle and easy way to sneak in some more good stuff for the kiddos. Giada - you rock, sister!!

Just add lemon

This is a lovely recipe, very enjoyable, I've made it several times now, once with shrimp as a cold salad too! The one thing it's missing is a shot of lemon juice to perk it up. I also add lemon zest.

I love pasta but not a fan of creamy thick sauce; therefore, this recipe works out great. Light but flavorful. I substitutes japanese eggplant with yellow squash and zuchini and just use grill chicken, instead of fish. Taste great!

My husband and I really enjoyed the lightness and freshness of this dish. I used suggestions from previous posts to add fresh rosemary and thyme with the last handful of parsley that goes in and it gave it that nice fresh herb flavor. My own twist was to add sliced baby bella mushrooms in with the sauteed eggplant and I think that helped to add nice flavor too. The other thing is just to watch the ratios as others mentioned. You don't want too much penne and I think I overdid the tomatoes a bit. But overall this was just what I expected and I will make it again.

I am giving this recipe 5 stars becuase of the amazing flavor of the dish

This dish was delicious. If you are going for a delicious but light meal, this is the one. I added a little extra parsley and a little extra wine to give it some extra flavor, which worked out perfectly. The flavors of the sophisticated eggplant, tart cherry tomatoes, fresh parsley, pasta and tender swordfish blended together beautifully. It really made you feel like you were in Sicily, in a restaurant near the beach. Anyone who says that it wasn't excellent must have made it wrong, or simply doesn't enjoy this type of food. Thanks, Giada!

This was excellent. The eggplant really soaked the flavor, and the red pepper flakes gave it a subtle kick. Also made great leftovers the next day for a cold pasta salad. Swordfish was a bit pricey, $14.95/lb. however at a restaurant it would have been more expensive and less healthy.

I really enjoyed this dish with a couple of changes. First as others who have reviewed this dish mentioned, I halved the pasta amount. Second, instead of flat leaf parsley I added a couple of tablespoons of fresh thyme in both places. The thyme really adds punch that is probably missing with flat leaf parsley. I will make this again.

Made this last night and well......I was a little under whelmed. I will make this again because the "bones" of the recipe is easy, healthy and has potential with a few changes. It needs more flavor...will add much more garlic and not add all the pasta. A critical mistake.....too much pasta took away the flavor from the dish. I used regular eggplant not those Japanese kind....that was no problem. I like the idea of chicken or even shrimp!!! Will try that next time.

This recipe is tasty and simple but the eggplant doesn't get cooked in 5 minutes. It absorbs all the oil and stays bitter. Will make it again without the eggplant.

A Great, Light Meal!

User: CHRIS from Millersville, MD    User Rating:
I made this last night and used halibut instead of swordfish. I know they're different in texture and firmness but that's what I had. It was very good. The recipe doesn't say to add salt when cooking the eggplant, but make sure you do. I used only 1 regular eggplant and about 3/4 a box of rigatoni. Don't mix all the pasta in when everything is mixed together at the end. You don't want too much pasta in the mix. Plus with the halibut I just placed it on top of the pasta since it would have broken apart if I mixed it with everything else. This is a great, light meal. Make sure you use GOOD white wine. If you use cheap "cooking wine" that you wouldn't normally drink yourself you need to ask yourself, "why cook with it if I won't dare drink it?" Use a wine you would drink in this dish.

An excellent reciple blending the best of three ingredients in a light and unusual dish. I generally only cook swordfish "Westport" style-with aioli on top of a very thick piece, broiled on one side only. This opens up new possibilities for when I have too much swordfish. Really lovely and elegant. My dinner guests loved it.

I made this recipe almost exactly how Giada describes, but I only had one regular eggplant (instead of 4 Japanese) and I used 1/2 cup of good white wine instead 1/3 cup. To keep cost low, I used Trader Joes frozen swordfish. This dish was great. The sauce it makes is delicious! Even my 7-year old fish hater, loved it! Thanks Everyday Italian!

I made some substitutions in the recipe based on the reviews on this site, and it turned out great. I replaced the swordfish with chicken and the japanese eggplant with zucchini. This reduces the cost and makes it even more practical. I would also reduce the pasta from 1 lb to 3/4. I don't know if I could choose this recipe to entertain guests, but it was tasty nonetheless!

This dish was very tasty and not difficutl to prepare, but if you are using fresh swordfish, it can be pricey for what you get in the end, which is a dish that is mostly pasta. If I were to prepare this again, I would use half the amount of pasta that the recipe calls for and replace the fish with chicken, the eggplant with zucchini.

This was absolutely delicious! I had watched Giada make it in the morning on TV and it looked so good that I just had to make it for dinner (as is usually the case when I watch her show!) The only change I made was that I didn't use nearly as much pasta, which was completely fine as it is the kind of dish you could really make without any pasta and it would be just as lovely. Filled with flavor, healthy and so easy....definitely a repeater!
