A lot of work for very little flavor - the texture of the eggplant was not appetizing. I would not make this recipe again. So, I used zucchini instead. Grilled it right on my gas grill, and cleanup was a breeze. Used the same amount of zucchini as eggplant called for, and fed to my Bunco group (12 women) as a side dish. They loved it, and couldn't get enough. The recipe served all 12, with no leftovers. Don't need to double. Served this at room temp.The flavor of the mint and basil really came through.
