I am a huge fan of Giada's recipes - usually make two to three per week - but this salad was a huge disappointment. A lot of work for very little flavor - the texture of the eggplant was not appetizing. I would not make this recipe again.

I made this for my husband last night and he raved about the flavors. Be careful not to "dump" the balsamic vinegar, like I did. Less is more in this case. Highly recommend you try this one. We'll be having this all the time.

My whole family loved this recipe! The toasted pine nuts combined with the goat cheese and herbs was a great combination with the eggplant

I'm not crazy about eggplant (I think it gets bitter with cooking) and I can't get the small, Japanese Eggplants in my town. So, I used zucchini instead. Grilled it right on my gas grill, and cleanup was a breeze. Used the same amount of zucchini as eggplant called for, and fed to my Bunco group (12 women) as a side dish. They loved it, and couldn't get enough. The recipe served all 12, with no leftovers. Don't need to double.

What a versatile combination. Good alone or atop greens. Make a sweeter balsamic dressing with garlic for synergistic effect with goat cheese. Also, try marinating eggplant in Olive Oil before grilling for max flavor

This was definitely the highlight of our dinner party. The eggplant took a really long time to cook on the grill pan, but worth the wait.

I made this recipe tonight, but did not have the fresh basil or mint on hand. I served the eggplant, pine nuts, goat cheese, etc. over lettuce and the flavors blended together wonderfully! What a sumptious dish. I am eager to see how it is with the added fresh ingredients.

This was awesome. I Let it marinate in the fridge overnight and served it at room temp. I also loaded it with extra goat cheese, nuts, herbs, salt & pepper and placed it over-top of some mixed greens. I Made it for a party and had to run to the grocery store to make more because my family ate it all before the party.

Can't go wrong with goat cheese with pine nuts. Absolutely delicious!!! It tasted like the fancy salads you get in expensive restaurants.

Too many Japanese eggplant in the garden and I have been trying all kinds of recipes. I kept moving this one to the bottom of the list of possibilities as it really didn't sound that good, but finally decided to try it. WOW! It was wonderful. Just to make sure, I made it again the next night and it was just as delicious. I served the eggplant warm (not hot).

I liked the flavor, but next time I would cut the eggplant thinner and add salt and pepper. Anything with goat cheese is great.

The small eggplant rounds are perfectly bite sized and the salad is light and delicious. They key is the japanese/dynamite eggplant. It sets off the rest of the dish.

The texture of the eggplant and overall taste was not that pleasant, so I imagine that it one would need an acquired taste to enjoy this recipe. It wasn't awful, but I was disappointed and had a little trouble swallowing it.

I think all those things were horrible together, although I like every single item besides goat cheese. Just crazy mix. I like different flavors and I'm not affraid to try new stuff, but this one me and my guests did not like. My husband said it was ok, that's why I'm rating it ** instead of *. I love Giada, but this was just not it.

I liked this alot! The mixture of the fresh herbs, cheese and nuts made eggplant my new favorite veggie. I would add some salt and pepper to the eggplant when tossing with the oil. This is great!

My family did not really like this dish. The flavors were all so powerful (basil, goat cheese) and it was just too different for our tastes.

Served this for company.Didn't know if anyone liked eggplant so I chopped up a small amount of fancy lettace and served it along with the eggplant using some balsamic vinegar and olive oil with salt/pepper.The firt time I served this I just sliced the eggplant into 1" pieces.Next time I sliced them on an angle.Looked much better. Served this at room temp.The flavor of the mint and basil really came through. A definite keeper.The nice thing with the added lettace is thqat your guests don't feel they are insulting you by not eating the eggplant.Does not have a eggplant taste with everything else included.
