I couldn't win, either the icecream melted into the chocolate or the chocolate would seize up once the icecream hit it. What a waste of some great Hagan Daaz. She was mortified. Besides the fact that they were time consuming and didn't look nice, the melted chocolate did not adhere to the ice cream. What a disaster for the host of the party! I like many of Giada's recipes but this one simply doesn't work. The moment I put the Gelato into the melted choclate, the chocolate siezed up. What a waste. No matter what we tried the chocolate did not stick to the gelato. We ended up rolling some in the nuts and then drizzingly the chocolate on but it does not look good at all. I don't know if gellato would have made a difference, but the recipe said you could use ice cream. They tasted fine but they took alot of time and were very unattractive. I could have spent less time and made a better homemade dessert from scratch. I will say that I have realy enjoyed Giada's other recipes that I have tried. I ended up covering half the ball with chocolate and then dipping it in sliced almonds (would have used hazelnut if I had it). Given the time it takes to make this, you're better off scooping the ice cream in a bowl, covering it in chocolate sauce, and then putting hazelnuts on top! The trick was to cover half of the ball, and it looked pretty, too, but I had to add cream to the chocolate and use it as a ganache... Had to drizzle chocolate on instead, which worked. It's like making chocolate-covered frozen bananas but there are two tricks to help them turn out: (1) make sure the balls have been frozen very very hard and solid (if you don't have a strong freezer, try at least two hours to overnight if you have the time); and (2) remove the melted chocolate off the double boiler and allow to cool before dipping the balls (still molten, just not hot). The lukewarm chocolate will adhere and begin to stiffen against the frozen ball so you'll need to work fast to coat them with the nuts. Good luck!
