And I thought I had squeezed and mashed the squash as best I could before adding any ingredients! I think it might be best to use an old towel to actually wring the moisture from the squash. Based on other reviews, I added an extra egg, more pepper, and some garlic powder. The taste was good and a different way to use up abundant squash:) The cakes were rather delicate and had to be handled with care, so as not to break completely apart. I actually scooped them out of the oil and put them in a casserole dish in a hot oven to crisp up. It worked out pretty well. It helped tremendously! I would also suggest slowly adding the butter. I don?t think you need to add all the butter since it might put back in too much mushiness and then you?ll have to adjust by adding more breadcrumbs. But I altered a few things, I added garlic powder, onion powder, parsley and orgeno instead of the italian seasoning as the recipe called for. I fried them in two parts olive oil and one part butter. They were crisp on the outside and soft and delicious on the inside. Thank you Paula another great recipe idea. As usual, I didn't read the whole recipe first so I mixed the melted butter in with everything else. When I realized what I had done, I just fried the cakes in olive oil. They held together beautifully and tasted great. My husband said "This recipe is difinitely a keeper!" They had a sweet taste which went well with a pasta main dish. I don't think you should expect them to be "stiff" after cooking, they will be limp. Remove carefully and you will like them. For the vegan half, I used egg & cheese substitute. I didn't have any italian seasoning so I minced fresh sage, basil, parsley and garlic. Both batches were fried using a couple of tablespoons of olive oil in a nonstick pan. Everyone (husband, college kids and younger child) loved it. I've made them two nights in a row! YOU HAVE TO MAKE SURE AND WRING ALL OF THE LIQUID FROM THE SHREDDED SQUASH AND ZUKES OR YOU WILL HAVE MUSH! I used my sald spinner and it worked great! I also omitted the italian seasoning (didn't have any) and used seasoned breadcrumbs and added 1/4 tsp garlic powder and some oregano. I halved the recipe and made them very flat and ended up with about 12 cakes both times. I used about 3 TBSP of butter to fry them (in two batches). Only about 1.5 points for you Weight Watchers fans. I am going to try freezing them. For a dipping sauce, try Bertolli five cheese spaghetti sauce. YUMMMMMYYYY!!!! Up the Egg quantity to 3, and make sure you wring out all water with paper towels from the zucchini first. (important!) If you make the patties too large, they tend to fall apart, and don't get cooked in the middle, so keep them small and flat. Just to try, I baked some and they were alright. I also fried them and I did not cook them long enough. I cooked them according to the recipe, but it was not long enough. I will try and make again and definitely cook until they are nice and crispy. They were pretty bland on their own though. The success of this dish really depends on the quality of the dipping sauce you choose. I drained the squash mixture in a collander, squeezed it with my hands twice and used a towel........ I made the cakes. They held together until frying. In order to save them, I mixed them together like a "mash". Unfortunately, the mixture looked terrible so I couldn't serve it to my company. This is the first Paula recipe that didn't work for me??? What happened Paula? Where did I go wrong? Trier beware on this one.
