I was looking for a quick recipe to take to work for Easter Lunch at the ER. This is sooo easy, really quick to fix. Everyone loved these, I used the recipe as stated except I had Triple Sec for the orange liquer. I used dried mint, it was a little over powering for me, next time I want to use fresh. Everything else I did as the recipe stated. It was a great success. I did not notice the orange much but people kept saying,"I taste the mint but there is something else, what is it?" When I told them Triple Sec they said,"Ah, orange, I want the recipe!" And, it is very attractive with the sliced water chestnuts giving just the right contrast and crunch. I used a white casserole dish to serve them. The snow peas just get too slimey when sauteed in the grand marn. I throw baby carrots in this too. I thought my dish turned out on the bitter side, but everyone else loved it. Even the one that never eats his vegetables. They just need a few minutes cooking in the boiling water. I used fresh snow peas instead of frozen and I think that would make a lot of difference. |
