This recipe instantly made my regular rotation. I often don't bother with the lemon cup unless I am entertaining, but it is the best risotto recipe I have come across so far.

This is the first FN.com recipe I've tried that has lived up to its 5-star rating! The risotto was creamy, delicious, and rich. My husband and I loved it! I substituted water for the white wine, since I didn't have any in the house.

the lemons are used just for looks, I had a hard time finding lemons big enough. Possible you could use a different fruit, such as large orange. the rice was great

Why does Giada insist on putting mascarpone in EVERYTHING? Risotto does not need cream cheese to give it a creamy texture. Check out much better (and more authentic) risotto recipes on this website from Mario Batali, Alton Brown, Tyler Florence, and Emeril Lagasse.

This was delicious. It is a great basic recipe that would go very well with additions like seafood or even vegetables. The lemon really complemented the shrimp that I added. I used almost 4 cups of vegetable broth for 1 cup of rice.

This is the best Risotto. I made Giada's red wine recipe too. It was also good. But this one is my favorite. The family loved this one better too. I used cream cheese in place of the mascarpone because I had it already in the fridge. Yummy :)

Okay, we do not normally go nutz over recipes - this was fabulous! I doubled the recipe and added a bit more zest than called for.... topped it with a bit of chooped parsley for color. It had a refreshing taste and was so creamy and delicious. I only had creme fraiche and used that instead of the mascarpone - don't think makes that much of a difference. Highly recommend.

I made this for dinner for my roommates, and it was such a success! They loved the presentation and the risotto was wonderful. This risotto is creamy and delicious!

This was the first time i've ever made risotto and it turned out fantastic! I made it for my parents, sister and her husband and my grandparents, it was a huge hit! I also took the time to make the lemon cups which made for a great presentation! I doubled the recipe also and so I put in a whole lemon, I thought it was too much of a lemon flavor. I wouldn't put as much lemon juice in next time, and I will make it again..Thanks Giada!!!!!

Giada mentions on her show that risotto is actually very easy to make. My 11 year old proved it when she made this for dinner one evening. She knocked it out of the park. The flavor is awesome and the dish is so creamy. Yum!

If you can find it use carnaroli rice makes it even creamier. I love this recipe; very lemony, very creamy. (I also skip the lemon cups.)

I'm obsessed with risotto and this is one of my new favorite recipes. I only used half the butter it called for and it was still creamy and delicious. I also recommend Giada's Red Wine Risotto with Peas.

Just made this for dinner tonight. My husband and I LOVE it!! It is so creamy and delish! I don't bother putting them in lemon "cups", though. Seems like a waste of lemon. It has definitely become a favorite.

I thought this recipe was great. I did leave out the mascarpone, and I think it would have been better with it, but still delicious. I did need more broth than the recipe calls for as well.
