This salad was a showstopper at our neighborhood Holiday gathering. The dressing was mellow but flavorful and was perfectly complemented by the tang and saltiness of the frico cups. I will absolutly entertain with this again and will make sure to have copies for our guests as everyone requested them last night!

This was a delicious salad!!! My whole family loved it and the dressing was super easy! I will make this all the time. I made the parmesan "cups" but I draped the cheese over bowls instead like some others said, the cheese wasn't as crispy as I hoped for but it was a huge hit. My father is a meat and potato person and he loved this salad too!

I'm very picky when it comes to eating greens ~ this salad was remarkable! The frico was a tad difficult but I will try using a bowl next time (intead of muffin cup). My new favorite! Mmmm...

I also made frico bowls instead of cups, so that they could hold more salad. Here's a tip: the best way to do it, I've found, is to use pre-shredded (NOT grated) parmesan, and bake it on that non-stick (Reynolds "release") aluminum foil. Then, once they're out of the oven, after a few minutes, you just place the cereal bowl or cup over the cheese circle, then pick up the foil and quickly invert it so that the cheese is lining the bowl. Then just let it set. This way you don't have to deal with picking up the cheese, and risk tearing it or dropping it.

These were a lot easier to make than I thought! They slide right off of the silpat and they were a huge hit at a baby shower. Everyone wanted the recipe!

A small group of which I am a member was recently giving a surprise dinner for one of our other members and his fiancee to celebrate their engagement and upcoming wedding. I prepared this salad as my contribution to the dinner. Not only was the salad an uqualified hit with everyone in attendance, but the frico cups made such an impressive presentation that people were actually telling me I should consider becoming a professional chef. Thanks, Giada, for this new, but permanent, addition to my culinary repertoire!

This is a wonderful salad on it's own, in the frico cup it is an impressive presentation. I found the frico cups to be surprisingly easy however mine were done on the short side of the timing. They do not hold well however, I had to make them in the morning for a dinner party due to timing and they lost some of the crispness of when first made. Still delicious though!

I have made parmesan frico cups many times before and desperately wanted to try this version out because it was easier. They did not come out well for me. I believe what happened is that I used a different brand of parmesan than I normally use and I also turned them into large muffin tins, even though I increased 1/4 cup to 1/3 cup. I will try again soon with my normal parmesan. But the spinach salad and dressing were fantastic. The dressing had such a fresh and wonderful balance of flavors. Thanks Giada for another wonderful recipe.

This was such a wonderful idea when I saw her do this on the show. I had company coming over and thought to myself I could really do this. It took a few times to perfect them, but once I got it down it was such a beautiful presentation. My company liked them too!!! They were amazed how creative I was!!! Of course, I didn't tell them I got it off a TV show!!! I will definately make them again and again. Maybe even a bigger size!!

But I found making the Parmesan Frico Cup was somewhat difficult. I followed the directions EXACTLY, and there was so much oil from the cheese that the cheese never did really turn "brown". It barely held together for me. And then getting each one onto the muffin tin was tricky, as they were very plyable. Maybe with a little practice I can get them done better. This was my problem with the "cups". But she made it look SO EASY when she did the recipe. Wonder if there's a "secret" to getting them done better???? Any suggestions??

I doubled the size of the cups, as we wanted a larger salad. I just used twice as much parmesan and a bowl to mold the cups. It was so elegant. For low carb dieters, I have also made these the size of chips as a substitute for croutons or even potato chips.

I confess I have not made the little parmesan cups yet which I intend to do, but I am always looking for creative and home made salad dressings. I rushed out after reading this recipe to get an orange and a lemon, but I'm disappointed in the results. It just seems flat to me. :-(

The salad was great and so easy to make! I really loved the dressing too! The only problem I ran into was making the Parmesan Frico Cups. I had trouble having them form to the shape of the muffin tin.

I am not normally a fan of fruit in my salad but this recipe has definitely changed my mind! Living in Florida, it seems there is always plenty of citrus on hand. The only thing missing: slivered almonds. As such, I used la choy rice noodles for added crunch. Yummy nonetheless! Served with Giada's salmon with lemon, rosmary, & capers, along with sauteed green beans, tomatoes, and basil, my boyfriend thought this unconventional and refreshing salad was a hit!

I made the salad without the Frico cups because I was short on time and the salad still turned out great! I did take longer than I expected because I cut up the baby spinach in strips just like Giada did on the show. The strips make it look much more festive and easier to eat. Next time I will try to make the Frico cups. This is a great salad to make for a party.
