I realized that I had two different mini sizes of muffin tins, and used the smaller one. There was way too much left over! I had enough batter/crumbs to make five or six batches. Instead of the wafers, I used chocolate teddy grahams mixed with semisweet chocolate chips - delicious. I did find that there was wayyyy too much butter though in the crust - It actually leaked through the muffin liners into the pan. Like a lot of other reviewers, I also had a problem getting them out of the muffin cups. When I made them again I sprayed the muffin tin and they came out just fine. I also tried using muffin cups (sprayed) and that worked, too. You definitely need to double the recipe on this one as it doesn't make a whole lot. But they were very good!! I really believe that anyone that says they just "popped" right of the pan is fibbing! I did some with Pam, some with butter, and some with liners and NONE came out. I topped it with the orange zest and a mint leaf. I read the reviews with the popping them out of the tin issues. I used both a tin and a silicone mini muffin pan. The silicone made it in a perfect shape and they popped right out. I had to work on the tin pan and it was not as good of a shape when it did come out. I think they key was the silicone pan. This is what I did. 1c ricotta, 1c. cr cheese, 1t. vanilla, 1 orange zested, 3 eggs, 2/3c sugar. This made enough batter to fill 48 mini's exactly. I had great results and I also used muffin liners. I used mini paper liners, and tripled the recipe. The downside is that the cheesecakes are so delicious that they disappear much too quickly. I think that they'd be particularly wonderful for afternoon teas, along with Giada's mascarpone mini cupcakes with strawberry glaze. Thanks, Giada, for yet one more recipe that we'll enjoy for many years to come. However! I will make a comment on their size since it appears everyone else is. They are small because they are a "single serving" according to Giada. They are meant to be small. It is cheesecake and cheesecake is very high in calories. No one should eat more than this unless they plan on gaining some weight! (is Giada fat? no.) I am so thankful for these small servings like these. Thanks Giada! For the crust I used graham crackers and less butter. Instead of orange I used lime zest and I liked it much better. Then remove each cheesecake using a thin table knife in one smooth motion, applying pressure to the walls of the muffin tin. The crust will be intact. Also, use a mini-processor to crumble the wafers and to make the filling. You can then use the rounded end of the miniprocessor knife to tap the crust into the tin (works much better than your finger). For variations, try animal crackers & lemon zest, animal crackers & toasted coconut, amaretto cookies & toasted coconut. I used a non stick pan and buttered it but they were still a pain to get out. Half of the cookie crumbs were left in the pan. HOWEVER, this recipe has you butter the muffin tin AFTER you tap the chocolate wafer mixture into the bottoms. Hello, how do you get an adequate buttering job done on the sides?? I highly recommend buttering the muffin tin BEFORE you put the wafer mixture in the bottom of each cup. Also, since I followed the recipe exactly & got forced into buttering AFTER, my little cheesecakes had a tough time coming out of the muffin tin & the sides got bunged up-not the most attractive thing for entertaining.
